A mouth-watering sponge with a wonderfully gooey peanut butter and caramel filling

Provided by Jane Hornby

Categories     Afternoon tea, Snack, Treat

Time 50m

Number Of Ingredients 11

200g butter , softened, plus extra for greasing
3 tbsp smooth peanut butter , plus 2 tbsp for the middle (or more if you like)
4 large eggs
200g golden caster sugar
150g pot natural yogurt
200g self-raising flour
50g salted roasted peanuts
1 tbsp icing sugar
100g milk chocolate , roughly chopped
2 tbsp milk
3 tbsp dulce de leche

Steps:

  • Butter 2 x 20cm non-stick sandwich tins and line with circles of baking paper. Heat oven to 180C/fan 160C/gas 4. Using electric hand beaters, beat the butter, 3 tbsp peanut butter, eggs, sugar and yogurt together until smooth and creamy. Fold in the flour, then split the mix between the tins, using a spatula to get every last bit. Bake for 30 mins until risen and golden.
  • Meanwhile, toss the salted peanuts and icing sugar with ½ tsp water until well coated and claggy. Spread over a non-stick baking sheet. When the cakes are ready, leave them to cool for 5 mins in the tin, then turn onto a cooling rack to cool completely. Turn the oven up to 200C/fan 180C/gas 6, then roast the nuts for 10 mins, tossing them a couple of times until golden and coated in a shiny caramel. Tip onto a lightly buttered plate. Make the topping while you wait: melt the chocolate and milk together in a pan over simmering water or microwave on High for 1 min, then stir to melt. Leave to cool.
  • Put one of the sponges onto a plate, spread with 2 tbsp peanut butter (or more), then dot with the dulce de leche and spread with a palette knife. Sandwich the second sponge on top, then spread with the chocolate topping. Scatter with the caramelised peanuts to serve.

3/4 teaspoon baking soda
1/2 teaspoon fine salt
1 cup buttermilk
1/4 cup vegetable oil
1 1/2 teaspoons vanilla extract
3 large eggs
1 3/4 cups sugar
1 1/2 cups smooth peanut butter, warmed
2 cups milk chocolate chips

Steps:

Tap the pan on the counter lightly to release any large air bubbles, then bake until golden brown and a wooden pick inserted into the center comes out clean, 20 to 25 minutes. Categories     Dessert     Snack

Time 1h5m

Number Of Ingredients 19

200 g light brown sugar
2 large eggs
125 g creamy peanut butter
120 ml canola oil
120 ml whole milk
1 tsp vanilla extract
¾ tsp coarse sea salt
45 g unsweetened Dutch-process cocoa powder
128 g all-purpose flour
1 tsp baking powder
½ tsp baking soda
120 ml hot coffee (OR 120ml (½ cup) hot water + 1 tsp espresso powder)
100 g powdered sugar
2 tbsp creamy peanut butter
1 tsp vanilla bean paste
pinch of fine sea salt
1-2 tbsp hot water
55 g chopped honey roasted peanuts
flaky sea salt (optional)

Steps:

  • Preheat oven to 350°F (180°C). Spray an 8×8-inch baking pan with nonstick cooking spray and set aside.
  • In a large bowl, whisk together the brown sugar and eggs until pale and foamy, about 1 minute. Add the peanut butter, oil, milk, vanilla, and salt and whisk until well combined. Sift in the cocoa powder and whisk until smooth.
  • Add the flour, baking powder, and baking soda and whisk until combined and smooth. Add in the hot coffee/water mixture last and stir until combined and smooth.
  • Pour the batter into the prepared pan and tap the pan firmly on the counter to release any air bubbles. Bake for 45-55 minutes, until the cake is puffed and a toothpick inserted into the center comes out clean.
  • Allow the cake to cool for 15 minutes in the pan. Then remove the cake from the pan and set it on a cooling rack to cool completely before glazing.
  • In a small bowl, whisk together the powdered sugar, peanut butter, vanilla bean paste, salt, and 1 tablespoon of hot water until smooth. If the glaze is thick, add more water 1 teaspoon at a time, until it's smooth and pourable. (It took 2 tablespoons total for me).
  • Spoon or pour the glaze over the cooled cake and sprinkle with the chopped peanuts and flaky salt, if using. Allow the glaze to set before slicing into the cake.

CHOCOLATE PEANUT BUTTER PINECONE CAKES

Chocolate Peanut Butter Pinecone Cakes image

Make and share this Chocolate Peanut Butter Pinecone Cakes recipe from Food.com.

Provided by Food.com

Categories     Dessert

Time 2h20m

Yield 12 Pinecones

Number Of Ingredients 16

3 cups flour
3 cups sugar
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3 large eggs
3/4 cup sour cream
2 teaspoons vanilla extract
1 1/2 cups butter
3/4 cup cocoa powder
1 1/2 cups hot water
1/2 cup butter
1/2 cup favorite smooth peanut butter
4 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract
slivered almonds

Steps:

  • For the Cake:.
  • Preheat the oven to 350 degrees F. Grease and flour a 18 by 13-inch rimmed baking sheet.
  • In a large mixing bowl, combine the flour, sugar, baking soda, and salt. In a separate mixing bowl, beat the eggs and mix in the sour cream, and vanilla. Add the egg mixture to the flour mixture, mixing until just combined.
  • In a saucepan over medium-high heat, melt the butter and stir in the cocoa powder, and hot water. Bring the mixture to a boil and then remove from the heat. Cool slightly, and incorporate the cocoa mixture with the dry ingredients, mixing just until blended.
  • Pour the batter into the prepared pan. Bake for 25 minutes, or until a tester inserted into the center comes out clean. Cool completely.
  • For the Frosting:.
  • In a large heavy-bottomed saucepan over medium heat, melt the butter. Add the peanut butter and mix until smooth. Remove from the heat. In a separate large bowl, whisk together the milk, and powdered sugar until fully incorporated. Stir in the vanilla, and slowly incorporate the peanut butter mixture, blending well after each addition.
  • This frosting is best to spread when warm, so you may need to reheat it when constructing your pinecones.
  • Assembly:.
  • With an oval cookie cutter, cut ten ovals from the cake (you can also cut ovals freehand with a paring knife). Once you have your ovals, trim each one to resemble a pinecone: create a pointed tip on one end and a rounded base on the other. Then, shave off corners and top with the knife so that each cake further takes on a pinecone shape.
  • Frost one cake at a time, arranging sliced almonds in the frosting to look like the scales of a pinecone. Start at the base and set the almond slices, pointy end out, in a spiral pattern. Continue adding almond slivers until the entire surface is covered. Repeat until all cakes are frosted and decorated.
  • To create "snow-covered" pinecones, dust the cakes with powdered sugar and serve.

  • Peanut Butter Blossom Cookies. This kid-friendly recipe for peanut butter-infused cookies that come bearing Hershey's Kisses is straightforward enough for even a beginning baker to tackle.
  • Peanut Butter Cookies. This cookie recipe is special for two reasons. First, it manages to spin a mere four ingredients—peanut butter, an egg, salt, and a sugar substitute—into moist, well-structured cookies.
  • Peanut Butter Cups. This low-carb, low-sugar recipe transforms peanut butter into candy reminiscent of Reese's peanut butter cups, but with nine essential amino acids, thanks to the addition of hemp seeds.
  • Chocolate Chip Cookie Dip. Yogurt plus peanut butter plus a drizzle of honey makes the perfect dip, especially if you add chocolate chips to the mix. This dip is a perfect delivery system for fresh fruit.
  • Frozen Peanut Butter Banana Bites. This cool, refreshing snack pairs peanut butter with bananas just like Elvis supposedly used to do. Although Cool Whip is one of the four ingredients, you don't have to rely on it if you don't want to (and here's why you wouldn't necessarily want to).
  • Nutella Peanut Butter Clusters. Who doesn't love Nutella? You can't go wrong with these clusters, which require only Nutella, peanut butter, flake cereal, and a mere 10 minutes.
  • Peanut Butter Oatmeal Energy Balls. These energy balls are packed with peanut butter, flaxseeds, and rolled oats and rely on maple syrup as a sweetener, rather than refined sugar.
  • Three-Ingredient, No-Bake Peanut Butter Balls. With just peanut butter, a sticky liquid sweetener like agave or maple syrup, and some coconut flour, you're ready to roll your own three-ingredient no-bake peanut butter balls, which are vegan, paleo, and low carb and can be stored in the freezer.
  • Three-Ingredient, No-Bake Peanut Butter Cookies. This recipe for peanut butter cookies is a lot like ours, except it's made with good ole sugar. It won't be keto-friendly, but you also won't have to go out to look for a proper sugar substitute or spend any time debating the merits and risks of sugar substitutes.
  • Peanut Butter Chocolate Chip Cookies. Peanut butter and chocolate are two great flavors that taste even better combined. This recipe takes your typical peanut butter chocolate chip cookie and elevates it because it's gluten-free, too.
