Peanut Butter Lover's Peanut Butter Pudding image

Excellent for peanut butter lovers! Can be served with whipped topping and/or nuts.

⅓ cup white sugar
4 ½ teaspoons cornstarch
¼ teaspoon salt
1 ½ cups milk
½ cup half-and-half
½ cup peanut butter
1 teaspoon vanilla extract

Steps:

  • Stir sugar, cornstarch, and salt together in a saucepan. Stream milk and half-and-half into the saucepan while stirring to dissolve the sugar mixture.
  • Bring the mixture to a boil, reduce heat to medium, and cook, stirring continually, for 2 minutes. Remove saucepan from heat; stir peanut butter and vanilla extract into the milk mixture until smooth.
  • Divide the mixture into 4 small serving dishes and refrigerate until firm, at least 30 minutes.

From Taste of Home, submitted by Darlene Markel. A yummy frozen treat in which the graham crackers stay crisp. Half of the puddingwiches are peanut butter sandwiches, the other half are chocolate peanut butter. I usually wrap individually in plastic wrap and store in a large ziploc freezer bag.

Number Of Ingredients 6

1 1/2 cups peanut butter, divided
3 cups milk, divided
1 (4 ounce) package instant chocolate pudding mix
2 cups whipped topping, divided (Cool Whip)
1 (3 1/2 ounce) package vanilla instant pudding mix
32 whole graham crackers

Steps:

  • Line two 13x9 pans with foil; set aside.
  • In mixing bowl, combine 3/4 c peanut butter and 1 1/2 cups milk until smooth. Slowly beat in chocolate pudding mix until blended; fold in 1 cup whipped topping. Pour into prepared pan; freeze until firm.
  • Repeat with vanilla pudding and remaining peanut butter, milk and whipped topping. Pour into second pan; freeze until firm.
  • Break or cut graham crackers into squares.
  • Cut frozen pudding mixture into 32 squares, about 2 1/2 inch x 2 1/4 inch (16 squares each pan).
  • Place each square between two crackers. Wrap in plastic wrap. Freeze overnight.

1 package (3.9 ounces) instant chocolate pudding mix
1/4 to 1/2 cup peanut butter
15 whole graham crackers

Steps:

  • In a large bowl, combine the milk, pudding mix and peanut butter. Beat on low speed for 2 minutes. Let stand for 5 minutes or until thickened. Break or cut graham crackers in half. , Spread pudding mixture over half of the crackers; top with the remaining crackers. Wrap and freeze until firm. May be frozen for up to 1 month.

4-1/2 teaspoons cornstarch
1/4 teaspoon salt
1-1/2 cups milk
1/2 cup half-and-half cream
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
Whipped cream, optional

Steps:

  • In a saucepan, combine sugar, cornstarch and salt. Gradually stir in milk and cream; bring to a boil over medium heat. Cook and stir for 2 minutes. Remove from the heat; stir in peanut butter and vanilla until smooth. Pour into serving dishes; refrigerate. Garnish with whipped cream if desired.

1 pkg instant chocolate pudding mix (3.9 ounce)
1/4 c peanut butter (1/4 to 1/2 cup)
15 whole graham crackers

Steps:

  • 1. In mixing bowl, combine milk, pudding mix and peanut butter. Beat on low speed two minutes. Let stand five minutes.
  • 2. Break or cut graham crackers in half.
  • 3. Spread pudding mix over half of the crackers. Top with remaining crackers.
  • 4. Wrap and freeze until firm. These may be frozen for up to one month.
  • 5. When serving, you may heat them in the microwave for a few seconds if you like them a little softer.
