BLUEBERRY PROTEIN PANCAKES

Healthy blueberry pancakes that are packed with protein!

Yield 6

Number Of Ingredients 9

2 cups old fashioned oats
2 bananas
4 eggs
4 egg whites
1 teaspoon baking soda
4 scoops vanilla protein powder
1/2 cup milk
1 cup blueberries
1 1/2 cups sugar free maple syrup - optional topping

Steps:

  • Heat a nonstick griddle to medium-high heat.
  • Add oats, banana, eggs, egg whites, baking soda and protein powder to a blender and blend until smooth.
  • Add blueberries to blender and pulse a few times to blend in.
  • Spray griddle with nonstick cooking spray.
  • Pour 1/3 cup of batter onto the griddle for each pancake.
  • Flip after 2-3 minutes or until the side on the griddle is golden brown.
  • Cook another 1-2 minutes.
  • Remove from heat and serve with maple syrup, if desired.
  • Nutrition information does not include syrup.

I use to make this pb pancake for years and was astonished not to find it on zaar. After making Recipe #371305 for the first time I thought it would be nice with my pb pancake - and here it is! This makes one large pancake for one person. Nice for breakfast, but also very good as protein rich after workout snack. I don't add any sweetener because the yoghurt is sweet enough for me, but if you like it sweeter, feel free to add sweetener to the yoghurt-blueberry mixture.

Number Of Ingredients 9

1 egg
1 tablespoon peanut butter, natural style
1 tablespoon skim milk
1 pinch baking soda
1 pinch salt
1/2 cup vanilla yogurt
1 tablespoon blueberries
1 tablespoon cottage cheese
artificial sweetener, to taste

Steps:

  • Spray a non stick skillet with cooking spray and heat on medium until hot.
  • Beat egg, peanut butter, milk, soda and salt until smooth. If your egg is large, use a heaped tablespoon of peanut butter and maybe some more milk.
  • Pour mixture into hot greased skillet and cook until surface of the pancake is no longer liquid (about three or four minutes; maybe reduce heat a little and cover the skillet so that the pancake doesn't burn).
  • Flip and cook about two or three more minutes until done.
  • Process yoghurt and blueberries (and sweetener, if you use it) to a smooth sauce, then stir in the cottage cheese.
  • Transfer pancake to a plate and top with yogurt mixture.
  • Enjoy!

  • Heat a small pan over medium-high heat. Add blueberries and water and heat until water begins to boil, then mash blueberries with a wooden spoon. Add Truvia and continue to boil for about 3 minutes or until sauce thickens. Set aside.

  • Heat a skillet or griddle over medium-low heat. Spray with non-stick cooking spray and spoon pancake mixture onto skillet to form small pancakes (about 4-5" in diameter).
