PEANUT BUTTER PARFAIT WITH SALTED CARAMEL CRUNCH
Serve this delicious salted caramel, peanut butter dessert chilled, or frozen as a cheat's ice cream - perfect to impress a date!

- Whisk the cream with the vanilla until just starting to stiffen. In a separate bowl, beat the peanut butter with the icing sugar to slacken, then fold the peanut butter mixture and the crushed banana chips into the cream. Tip into a container and chill in the fridge for a few hours or overnight.
- To serve, paint a stripe of salted caramel sauce over two large plates, then scatter the stripe with the crushed brittle.
- Using a dessert spoon, scoop the parfait into an oval shape (a quenelle) and sit it on one side of the plate. Top the parfait with a standing row of three banana chips, then serve.

- In a small bowl, combine peanut butter and 2 tablespoons milk. Fold in 1 cup whipped topping; set aside. In another small bowl, whisk remaining milk with the pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set., Spoon half of the pudding into six parfait glasses or dessert dishes. Layer with reserved peanut butter mixture and remaining pudding. Refrigerate for at least 1 hour. Refrigerate remaining whipped topping., Just before serving, garnish each parfait with 1 tablespoon whipped topping and 1-1/2 teaspoons peanuts.

- Heat a large saucepan over medium-high heat, scatter 140gm sugar over the base and cook until starting to turn caramel, then swirl pan occasionally to cook evenly to a light golden caramel (2-3 minutes). Remove from heat and add 300gm cream, 115gm glucose and vanilla bean paste. Return to heat and bring to the simmer, whisking to dissolve any lumps (3-4 minutes). Add peanut butter, then butter and whisk to combine. Squeeze excess water from gelatine and whisk into the hot liquid. Remove from heat and strain through a fine sieve into a large bowl.
- Place egg yolks in an electric mixer and whisk until pale and tripled in volume (2-3 minutes). Bring remaining sugar, remaining glucose and 30ml water to the boil in a small saucepan over high heat and cook until it reaches 117C, then, with the mixer running on medium speed, pour sugar mixture into egg yolks. Whisk for 3 minutes, then whisk the yolk mixture into the peanut butter mix and cool completely. Fold the whipped cream into the mixture, pour into a 30cm x 15cm plastic tray lined with baking paper, cover with plastic wrap and freeze overnight.
- For butterscotch sauce, heat a saucepan over medium-high heat, scatter sugar over the base and cook until starting to turn light golden caramel, swirling the pan occasionally to cook evenly (2-3 minutes). Meanwhile, bring 50ml water and 1 tsp fine salt to the boil in a separate small saucepan. Once sugar is caramel, reduce the heat and add boiling water to the caramel along with the butter, whisking until dissolved, whisk in the brown sugar and cream together. Don't overcook – it becomes thick once cool.Strain the mixture through a fine sieve and set aside to cool to room temperature (30-40 minutes).
- For chocolate mousse, whisk egg yolks in a bowl with sugar and powdered glucose. In a small saucepan, bring the milk and 100ml cream to the boil. Allow to cool slightly (5 minutes), then pour into egg mixture, whisking to incorporate. Return the custard to the saucepan and stir over low heat until it starts to thicken (5-7 minutes). Remove from the heat and set aside. Melt chocolate in a bowl over a saucepan of boiling water, then mix the custard into the chocolate a third at a time. Whisk remaining cream to soft peaks, and fold into chocolate mixture. Transfer to a container and store covered in the fridge.

- Add the dates to the food processor. Process until the mixture is roughly smooth and creamy. Dates have a tendency to ball up as they process, so pulse and stop to break up the ball as needed to achieve a smooth date caramel. Add in the peanut butter, vanilla, and sea salt, and process for another 30 seconds or until smooth and incorporated. Add the cacao nibs and pulse to distribute throughout the caramel.
- Chill the caramel in the freezer, food processor bowl and all, for 30 minutes to set. Meanwhile, line a small baking tray with parchment paper.
- Scoop out heaping tablespoons of the caramel, roll into a ball, and drop on the cookie sheet. Use your thumb to gently indent the top of the caramel and then scrunch the sides in a bit, forming a small well. Repeat. Transfer the tray to the freezer for 15 minutes to set.
- Meanwhile, make the peanut butter magic layer by whisking together the peanut butter, coconut oil, and pure maple syrup in a double boiler or bain marie until smooth and glossy. Spoon teaspoons into and over the indentation in each mound of caramel. Return to freezer for 5 minutes to set the peanut butter magic shell.

- For the caramel mousse, whip 200ml of the thickened cream to soft peaks, cover and refrigerate until needed. Combine vanilla, remaining cream and 115g of the glucose in a saucepan and bring to the boil. Set aside. Meanwhile, weigh out 140g of the caster sugar. Heat a heavy-based saucepan over medium heat and add 1 teaspoon of caster sugar. Once it has dissolved, gradually add the remaining, stirring constantly, until it has dissolved and turned lightly golden. Slowly pour the hot cream into the caramel, whisking until combined; whisk in the butter followed by the gelatine leaves. Strain into a bowl, set over another bowl half filled with ice and water and leave to cool, whisking occasionally.
- Combine the remaining 50g of caster sugar, 30ml water and remaining 20g of liquid glucose in a small saucepan over medium heat and bring to the boil. Meanwhile, using an electric mixer, beat the yolks on a moderate speed. Using a sugar thermometer bring the sugar syrup to 118°C. Remove from the heat and let the bubbles die down slightly. Pour the syrup down the side of the bowl onto the still whisking yolks. Turn up the speed and whisk until pale, doubled in size and cool.
- To finish the mousse, fold the two cooled mixtures together, fold through the whipped cream then pour into a 20cm x 25cm x 3cm Swiss roll tin lined with baking paper and place in the freezer until very firm.
