PEANUT BUTTER & OATMEAL MUG CAKE FOR TWO
This Peanut Butter & Oatmeal Mug Cake is a simple and fast, sweet and salty fix for dessert or breakfast, it's ready in just 5 minutes!

Steps:
- Whisk milk, vegetable oil, and sugar together in a 12 oz. or large mug.
- Whisk in the flour until smooth.
- Whisk in the oatmeal, baking powder, and salt until full incorporated.
- Spoon 2 tablespoons of peanut butter on top and push slightly into the batter.
- Microwave on HIGH for 30 seconds, and then in 15-second bursts until the top looks dry and cooked and springs back when pressed with a finger. Mine took about 90 seconds to cook.
- Top with the remaining tablespoon of peanut butter and let stand at least 5 minutes before eating.

- Using an 8-ounce (or larger) mug or ramekin, mix together milk, oil, and sugar.
- Add the flour and stir until smooth.
- Stir in oats, baking powder, salt, cinnamon, and nutmeg.
- Drop nut butter on top of the batter.
- Microwave on full power for 30 seconds and then in 15 second bursts. If cake begins to bubble to the top of the container, stop microwave briefly and allow it to settle before continuing.
- Cake is done when the top is no longer sticky and springs back when pushed.
- Allow to cool before eating - it will be very, very hot!

You know those delicious oatcakes you can sometimes buy at local coffee shops? After several trials I have finally come up with a recipe that satisfies my oatcake craving (and gives my bank account a break!). Hope you enjoy the yummy melt-in-your-mouth texture of this as much as I do =)

Steps:
- Preheat oven to 350°F.
- Using a food processor or blender, grind 1 cups of oats until fine.
- In a large bowl, mix ground oats, the remaining 1/2 cup of oats, all-purpose flour, baking powder, salt, and brown sugar.
- Add peanut butter to dry ingredients and mix with spoon or hands. Texture will be crumbly.
- Add cold water and vanilla extract and mix well to combine.
- Grease an 8x8" baking dish. Press oatcake batter into dish.
- Bake 15 to 20 minutes, or until top is lightly browned.
- If desired, melt 1/4 cup of chocolate chips and drizzle over oatcakes.
- Enjoy!
