- 1. Add the dates to the bowl of a food processor fit with the steel blade and process until chopped. 2. Add the nuts, quinoa and seeds and process until a meal has formed. 3. Add the protein powder and process a few times until combined. 4. Add the peanut butter and honey and process until a thick dough forms. 5. Transfer the dough to a parchment lined baking pan. I used a loaf pan for skinny, thick loaves, but you can also use a square baking dish for bars that thinner. 6. Place the bars in the freezer until set, about 1 - 2 hours. 7. Remove from the freezer and slice into bars. Store in freezer until you're ready to eat them.

- Pick up date mixture and using your hands work to squeeze it together into one big clump. Mash it down on a cutting board or sheet of wax paper to form into one even rectangle shape using the sides of your hands (or a knife) to make the edges straight.
