Steps:
- Heat oven to 350°F. Spray 9- or 10-inch fluted tube cake pan with cooking spray.
- In large bowl, mix flour, sugar, baking powder, baking soda and salt. Add peanut butter and 3/4 cup of the buttermilk. Beat on medium-high speed until smooth and creamy, scraping bowl as needed.
- In separate bowl, mix remaining 1/2 cup buttermilk with the eggs and vanilla. Add to peanut butter mixture in 3 additions, mixing after each.
- Scoop out approximately 1 cup of the peanut butter cake batter into medium bowl. Add melted chocolate; mix until combined.
- Spoon one-third of the peanut butter cake batter into cake pan. Spoon the chocolate-peanut butter cake batter on top, and then top with the remaining peanut butter cake batter. Use a knife to gently swirl batters together.
- Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes in pan; remove to cooling rack to cool completely.
- To make glaze, place chocolate in small bowl. Microwave cream in small microwavable bowl uncovered on High just until hot, then pour over the chocolate. Let stand 5 minutes; stir until smooth. Drizzle over cooled cake; let stand 20 minutes to set.

- For the cake: Position an oven rack in the center of the oven, and preheat to 350 degrees F. Butter a 10-cup bundt pan. Sift the flour, baking powder, salt and baking soda together onto a piece of parchment or into a large bowl.
- Beat the brown sugar, butter and peanut butter in a large bowl with an electric mixer on medium-high speed until the mixture is light and creamy, about 5 minutes. Scrape down the side of the bowl as needed. Add the eggs, 1 at a time, beating well after each addition. Continue beating until the mixture is light and creamy, about 2 minutes. Beat in the vanilla. Reduce the mixer speed to medium-low, and add the flour mixture in 3 additions and the milk in 2 additions, beginning and ending with the flour. Beat until just combined.
- Pour half the batter into the prepared pan, then spoon the jelly in the center of the batter. Top with the remaining batter, and smooth out into an even layer. Bake until a toothpick inserted in the center comes out clean, 45 to 50 minutes. Let the cake cool in the pan for a few minutes, then invert onto a cooling rack to cool completely.
- For the glaze: Beat the butter, peanut butter and confectioners' sugar until smooth. Spoon the glaze onto the cake, and spread to cover the top.
GIANT CHOCOLATE-PEANUT BUTTER MOLTEN BUNDT

- Preheat the oven to 350 degrees F. Spray a 12 cup Bundt pan with cooking spray.
- Whisk together the flour, baking powder and salt in a medium bowl; set aside.
- Beat the butter, sugar and oil in a large bowl with an electric mixer on medium-high speed until light in color and fluffy, about 5 minutes. Beat in the eggs, one at a time, and then the vanilla until combined.
- Alternate folding in the flour mixture and the milk into the batter with a spatula, adding the flour in three additions and the milk in two, starting and ending with the flour, until just smooth. Divide the batter evenly into two medium bowls. Fold the cocoa powder into one bowl and mix until incorporated. Fold 1/2 cup peanut butter into the second bowl and mix until incorporated.
- Use an ice cream scoop or large spoon and drop alternating scoopfuls of the batter into the pan. Drag a long wooden skewer through the batter, making sure the skewer reaches the bottom, to marble the colors in a tie-dye effect. Bake the cake until a skewer inserted into the center comes out clean and the center springs back when touched, about 40 minutes. Let cool in the pan for 10 minutes, then turn out onto a cooling rack and refrigerate to cool completely and chill, about 1 hour. Trim the bottom of the cake with a serrated knife so it will sit flat on a serving platter.
- Meanwhile, microwave the chocolate and coconut oil in a medium microwave-safe bowl in 30 second intervals, stirring between each, until melted and smooth, about 1 minute. Microwave the remaining 1 3/4 cups peanut butter in a medium microwave safe bowl until warm and flowing, like lava, but still slightly thick, about 20 seconds.
- Place the cooling rack with the chilled cake on it into a baking sheet. Pour the chocolate sauce over top of the cake letting it drip down the sides. Sprinkle the top with the peanuts. Let the chocolate harden, about 1 hour. Transfer the cake to a serving platter. Pour the peanut butter into the hole in the center of the cake. Cover the peanut butter completely with chocolate sprinkles. Serve immediately.

- Preheat oven to 325 degrees F. Spray three 8-inch or four 6-inch pans with nonstick spray, line the bottoms with parchment paper and spray again. Set aside.
- Sift together the flour, baking powder, salt, and cinnamon. Set aside.
- In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and peanut butter until creamy. Add in the sugar and mix on medium for about 3 minutes.
- Decrease the speed to low and add in the vanilla and eggs, one at a time. Stop the mixer and scrape down the sides and bottom of the bowl.
- With the mixer on low, add in half of the flour mixture, then stream in the buttermilk and mix until incorporated. Add in the remaining flour and mix until combined.
- Evenly divide the batter between the cake pans and bake for about 30 to 35 minutes or until a toothpick inserted in the center of the cakes comes out clean. Cool on a wire rack for 10-15 minutes before removing the cakes from their pans.
- In the bowl of electric mixer fitted with the paddle attachment, combine the butter and peanut butter. Beat on medium-high speed until smooth, about 45 seconds.
- Add the powdered sugar to the bowl and mix in, slowly at first until incorporated, then increasing the mixer speed to high. Blend in the vanilla extract, salt and heavy whipping cream, and continue to whip on high speed until very fluffy, about 4-5 minutes, scraping down the sides of the bowl as needed.
- To remove air bubbles from the frosting, use a wooden spoon to stir and push out the air bubbles.
- Place your first layer on the cake board. Spread about 1/2 cup of peanut butter frosting on the cake and then pipe a border of the peanut butter frosting around the edge to create a wall for the jam. Fill the center with about 1/2 cup strawberry jam and carefully spread it around. Don't add too much jam or the cake will be unstable as you continue to stack and frost.
- Place the second layer of cake on top of the first layer and repeat step one.
- Place the third layer of cake, bottom side up, on the second layer and spread a thin layer of frosting around the entire cake to create a crumb coat. Freeze the cake for 10 to 15 to set the crumb coat.
- After the crumb coat is set, continue to frost the cake with the remaining frosting.
- If you use a cake board on top of the cake like I did in my video above, you'll want to freeze the cake again for another 20 to 30 minutes after you've frosted the sides and before you take the cake board off the top. This will ensure you get sharp edges when you cut it off with a knife. You'll then add frosting to the top of the cake after you've removed the cake board.

- Set oven rack to second-lowest position.
- Grease a Bundt pan.
- In a small bowl sift the flour, baking powder, baking soda and salt.

- Prepare Sponge Cake: Preheat oven to 325°F Line 17 by 12 inch jelly roll pan with waxed paper.
- In very large bowl, combine 2 1/2 cups sugar, ground almonds and flour. Add 8 eggs, one at a time, mixing thoroughly after each addition. Add melted butter; mix briskly for 30 seconds.
- In medium bowl with electric mixer at high speed, beat egg whites with remaining 1/2 cup sugar until stiff peaks form. With rubber spatula, gently fold beaten whites into flour mixture in 3 or 4 additions, pour batter into prepared pan, spreading evenly with spatula. Bake 15 to 20 minutes, or until top of cake is golden brown. Cool in pan on wire rack.
- Prepare the Peanut Butter Cream: In medium saucepan over medium heat, combine the sugar and 7/8 cup water; bring to a boil. Reduce heat to low; cook until syrup reaches 240 F., "soft ball" stage, on a candy thermometer.
- Meanwhile, in large bowl with mixer at medium speed, beat 10 egg yolks and whole egg. Add sugar syrup in a gradual stream; beat 5 minutes. Add butter; beat 5 minutes longer. Add peanut butter; beat until mixture is smooth. Set aside.
- Prepare Chocolate Ganache: In medium saucepan over medium heat, bring milk to a boil. Add chocolate chips; remove from heat and stir until melted and smooth. Stir in butter and chopped peanuts. Let cool.
- To Assemble Cake: Remove waxed paper from sponge cake; cut cake into three 12 by 5 1/2 inch pieces. Spread half the Peanut Butter Cream over one third, piling it high and smoothing with rubber spatula. Top with a second piece of sponge cake and spread with half of the Chocolate Ganache. Top with remaining third of sponge nut Butter Cream. Refrigerate cake until ready to serve; let cake stand at room temperature for 20 to 30 minutes before serving.
- To Make Chocolate Sheet to fit top of cake, cut a rectangle of waxed paper the same size as top layer of cake; place on cookie sheet. Evenly brush a thick layer of the remaining ganache mixture over waxed paper; chill until firm. Just before serving, carefully remove chocolate-coated waxed paper from cookie sheet; invert on top of cake. Gently peel off waxed paper. Trim edges with small, sharp knife if necessary. Or, if desired, simply cover entire top of cake with chocolate curls. Makes about 24 servings.
- NOTE: To grind almonds, place in bowl of food processor and pulse on and off until nuts are pulverized and fluffy. Do not overprocess, as nuts will turn to a paste. I prefer a nut grinder.
