This tastes like the old-fashioned, watched over fudge but takes no more than 5 minutes to make....you will love it!! You can also leave out the cocoa and it makes delicious peanut butter fudge.

- Mix sugar, cocoa and milk in a saucepan. Bring to a rapid boil and boil for exactly one minute. Pour over peanut butter and vanilla and nuts in a bowl and beat until thick -- this only takes about a minute. Immediately pour onto a buttered platter and allow to cool. Cut into squares.
- Tip: Have your peanut butter and vanilla already in a bowl before boiling the mixture as you need to pour it over the peanut butter immediately.

- Line a 13x9-in. pan with foil; grease foil with 2 teaspoons butter., For chocolate layer, in a large heavy saucepan, combine sugar, milk, butter and salt. Bring to a rapid boil over medium heat, stirring constantly; cook and stir until a candy thermometer reads 234° (soft-ball stage), about 4 minutes. Remove from heat; stir in marshmallow creme and vanilla until blended. Stir in chocolate chips until melted. Immediately spread into prepared pan., For peanut butter layer, in another large heavy saucepan, combine sugar, milk, butter and salt. - Brush a 8-by-8-inch baking dish with butter, and line with parchment paper, leaving a 2-inch overhang on long sides. Brush parchment with butter.
- Heat 1/2 cup condensed milk, 4 tablespoons butter, brown sugar, and a pinch of salt in a double boiler or a heatproof bowl set over a pan of simmering water, stirring, until melted, about 4 minutes. Remove from heat. Mix in peanut butter and 1 1/2 cup confectioners' sugar. Press peanut butter mixture into the bottom of prepared baking dish, smoothing top with an offset spatula.
- Melt chocolate in a double boiler or a heatproof bowl set over a pan of simmering water, stirring, until melted, about 3 minutes. Remove from heat, stir in remaining 3/4 cup condensed milk and a pinch of salt, until melted and combined. Mix in remaining 3/4 cup confectioners' sugar. Spread chocolate mixture over peanut butter layer, smoothing top with an offset spatula. Refrigerate until firm, about 2 hours.

- In a large mixing bowl, add marshmallows, chocolate morsels (both kinds) and baking chocolate. Set aside.
- In a large pot, bring to a boil the sugar, milk, and butter (over medium high heat). Stirring constantly, boil for 2 minutes. Remove from heat and add vanilla extract. Pour hot mixture over marshmallows and chocolate.

Creamy peanut butter fudge is scooped and rolled into balls then dipped in semi-sweet chocolate. Each buckeye candy looks like a Buckeye tree nut and is a popular Christmas candy that's easy to make.

- Spoon the peanut butter into a mixing bowl.
- Sift the powdered sugar over the peanut butter and pour the melted butter over top.
- Stir until well combined.
- Scoop out twenty 1-tablespoon-size portions of the fudge.
- Roll them into balls and set them on a parchment paper-lined (or wax paper-lined) baking pan.
- Chill the peanut butter fudge balls for at least 2 hours until really firm.
- Insert the flat end of a thin wooden skewer into a cold peanut butter ball.
- Dip the fudge ball into the melted chocolate leaving about a 1/2 inch circle uncovered around the stick.
- Lift the fudge ball out of the chocolate and gently shake allowing the excess chocolate to drip off.
- Set the buckeye on a parchment paper-lined baking sheet.
- Repeat.
- Once you have all the fudge balls dipped in chocolate, chill them in the refrigerator for 1 hour.
- Remove them from the fridge and gently pull out the skewers.
- Pinch the hole in the fudge between two fingers, then smooth the surface out by brushing your finger over the top of the fudge.
