1 box brownie mix, like betty crocker original supreme w/ hershey's syrup
1/2 cup vegetable oil
1/4 cup water
1 egg
1/2 cup mini semisweet chocolate chips
3 8 ounce packages reduced fat cream cheese, softened
1 1/4 cups granulated sugar
3 eggs, at room temperature
2 teaspoons pure vanilla extract
1 cup creamy peanut butter
24 miniature reese's peanut butter cups, chopped
1 cup milk chocolate chips
1/4 cup heavy cream
3 tablespoons unsalted butter
16 miniature reese's peanut butter cups, chopped

Steps:

  • To Make the Brownie Layer: Preheat oven to 350°F. In a large bowl, whisk together brownie mix, oil, water, and egg. Fold in chocolate chips. Spread batter into the bottom of a well-greased 9-inch springform pan. Bake for about 25 minutes, or until a toothpick inserted 2 inches from the side comes out with moist crumbs. Cool in pan on a wire rack for 10 minutes. Meanwhile, prepare cheesecake layer. To Make the Cheesecake Layer: In a large mixing bowl, beat cream cheese until smooth. Add sugar, and beat until combined. Add eggs, one at a time, beating well after each addition. Beat in vanilla and creamy peanut butter. Fold in chopped Reese's cups. Pour batter evenly over brownie layer. Return to oven for 40-50 minutes, or until the edges are golden brown, and the center is slightly jiggly. Cool in the pan on a wire rack. Run a knife around the edge, and release the sides of the pan to remove cheesecake. For the Ganache and Topping: In a small microwave-safe bowl, combine chocolate chips, heavy cream, and butter. Microwave on high at 30-second intervals until chocolate is melted and the mixture is smooth. Pour ganache over cooled cheesecake. Sprinkle with chopped peanut butter cups. Allow 10-15 minutes for ganache to set. Cut and serve.

1 Double Chocolate Ghirardelli's brownie mix
12 ounces cream cheese (softened)
1/2 cup sugar
1/2 cup peanut butter
2 tablespoons butter (softened)
2 cups frozen non-dairy whipped topping (thawed)
1/2 cup brown sugar
1/2 cup creamy peanut butter
1/4 cup cocoa powder
2 tablespoons butter
6 tablespoons milk
2 teaspoons vanilla

Steps:

  • Prepare an 8-inch spring form pan, otherwise known as a cheesecake pan, by spraying with cooking oil. Make brownies according to package directions. Remove brownies from oven and cool completely.
  • Once brownies are completely cool make the Peanut Butter No-Bake Cheesecake.
  • Beat together cream cheese, sugar, peanut butter and butter in large bowl on medium speed until smooth and creamy. I used my KitchenAid mixer for this. Then fold in whipped topping until blended, I get a little inpatient and usually start to beat it and it still tastes great.
  • Spread on top of cooled brownies.
  • Place in the refrigerator until firm and set 30-60 minutes.
  • About 20 minute before you are ready to serve, make the Peanut Butter Hot Fudge Sauce. *You can make this in advance and store in the refrigerator and heat to warm when you are ready to use.
  • Combine all ingredients, except the vanilla in a medium saucepan cook on medium heat while stirring constantly. Cook until bubbly, approximately 5-6 minutes. Sauce should be smooth and creamy, with no sugar granules left.
  • Remove from heat and stir in vanilla. Let sit for at least 3-5 minutes, allowing it too cool and thicken.
  • Cut the cheesecake into slices and serve, drizzle with Peanut Butter Hot Fudge Sauce.

1/2 cup granulated sugar

1/2 cup vegetable oil
1/4 cup water
1 cup mini peanut butter cups

Steps:

  • Preheat oven to 350°F. Spray 8-inch square pan with cooking spray.
  • Beat cream cheese, peanut butter, sugar, 1 egg and vanilla in a medium bowl with an electric mixer on low speed until blended and smooth.
  • Stir together brownie mix, oil, 2 eggs and water in medium bowl until blended, about 50 strokes. Pour half of the brownie batter into pan. Dollop cream cheese mixture evenly over batter and use the back of a spoon to gently smooth into an even layer.
  • Pour remaining brownie batter evenly over cream cheese layer. Press peanut butter cups into top layer. Bake 35 to 40 minutes until center is just set. Cool on wire rack 1 hour. Refrigerate 4 hours, cut and serve.

Steps:

  • Preheat the oven to 325°Line an 8×8-inch metal baking pan with parchment paper or foil, leaving an overhang. Spray with nonstick cooking spray.
  • In a large bowl combine the butter, sugar, cocoa powder, and salt. Stir until well combined, mixture will be thick. Let cool if the butter is still hot.
  • Stir in the vanilla and then the eggs, one at a time, stirring very well after each addition. Stir until the batter is very well blended. Add the flour and stir again until very well blended. The mixture will be thick. Spread into prepared pan.

In a large bowl, use an electric mixer to beat the cream cheese, peanut butter, and sugar until well combined and smooth, scraping down the sides and bottom of the bowl often to incorporate everything smoothly. Beat in the eggs, flour, and salt just until incorporated.
  • Pour the cheesecake batter over the partially baked brownie layer.
  • Bake at 325°F for about 40 to 45 minutes, or until the cheesecake is set.
  • Cool completely to room temperature before refrigerating for at least 4 hours to chill.
  • Place the cream in a glass measuring cup. Microwave for 25 seconds, or until steaming hot but not bubbling. Add in the chocolate chips and peanut butter. Let sit for 2 minutes. Stir until smooth. Let cool at room temperature until thickened but still pourable.
  • Spread the ganache all over the chilled cheesecake layer. Refrigerate for 15 minutes, or until the ganache is fudgy.

1 19 1/2 oz brownie mix (prepared in 9×13 pan according to package directions)
1 cup hot fudge sauce, divided
2 (8 oz) packages cream cheese, room temperature
1 1/2 cups creamy peanut butter
1 (14 oz) can sweetened condensed milk
2 cups heavy whipping cream
1/4 cup powdered sugar
12 peanut butter cups, chopped

Steps:

  • Bake brownies according to package directions, allow to cool completely.
  • When brownies are cooled cut into bars. Remove 3/4 of the bars from the pan and press into the base of a 9″ Springform pan. Set the remaining 1/4 of the brownies aside.
  • Heat hot fudge sauce for 30 seconds and then spread 3/4 cup onto brownie base. Set aside.
  • In bowl of stand mixer beat cream cheese and peanut butter until smooth and combined. Add in sweetened condensed milk and mix until evenly incorporated.

  • Chill for at least 4 hours. Overnight is best.

1 box brownie mix (I recommend milk chocolate or fudge)
2 eggs
1/2 cup oil (canola or vegetable)
3 tablespoons water or milk (I always use milk to make my brownies creamier/fudgy)
8 oz cream cheese (I recommend full fat or 1/3 fat)
3/4 cup peanut butter
1 egg
1/3 cup sugar
1 tbsp flour
1/2 tsp vanilla extract
1/2 tsp salt (I use fine sea salt)

Steps:

  • Preheat oven to 350 degrees (or as directed on brownies).
  • First prepare your brownie batter by combining brownie mix, eggs, oil, and milk (or water) in a large mixing bowl. Use an electric hand mixer and mix on medium speed until there's still a little bit of dry brownie mix showing. Switch to stirring together by hand and gently stir until just combined, avoiding overmixing. Set aside.
  • In a medium size mixing bowl, prepare your peanut butter cheesecake swirl mixture by beating cream cheese with an electric hand mixer for 1 minute or until smooth.
  • Add in egg, sugar, flour, vanilla, and salt and mix until well combined and creamy.
  • Next pour all but 1/2 cup of brownie batter into a 9×13 glass baking dish that has been well coated with non-stick cooking spray.
  • Spoon peanut butter cream cheese mixture in dollops on top of the brownie mixture and lightly spread.
  • Use a cookie scoop and top with the remaining brownie batter in various spots.
  • Use a knife and begin swirling the batter drawing vertical and horizontal lines. If you want it even more mixed up, you can also do small swirling motions to give it a super pretty effect, but avoid overmixing so that you don't lose your swirls.

1 package (about 11 ounces bittersweet/dark or semi-sweet chocolate chips)
1/2 cup light brown sugar (packed)
3/4 cup granulated sugar (divided)
5 large eggs (divided)
2 teaspoons vanilla extract (divided)
3/4 cup + 1 tablespoon all purpose flour
1/4 cup unsweetened cocoa powder
1/4 teaspoon kosher salt
2 8 ounce packages cream cheese, room temperature
1/3 cup creamy peanut butter
2 tablespoons sour cream or plain greek yogurt

Steps:

  • Preheat oven to 350°F. Line a 9x9" square pan with foil or parchment paper and spray with nonstick cooking spray.
  • Make the brownie batter: place butter and 1 3/4 cups of the chocolate chips in a large microwave safe bowl. Heat for 1 minute on high power, stir. Continue heating in 30 second increments, stirring between each, until chocolate is melted and smooth. Stir in brown sugar and 1/2 cup granulated sugar.   • Spread half the brownie batter in the prepared pan. It's a thick batter but should spread easily with a wooden spoon or spatula. Place half the cheesecake mixture over the top and spread carefully. If you have an offset spatula, that makes spreading this layer easier. Top with remaining brownie batter and then the remaining cheesecake to create 4 layers. Sprinkle with remaining chocolate chips.
  • Bake for 45-55 minutes until the edges start to get golden and the center is set. Cool completely at room temperature. Chill to set, at least 2 hours or overnight. Cut into small bars and serve. This cheesecake is very rich and a little goes a long way! Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 1 month.

1/2 cup creamy peanut butter

  • Heat oven to 350°F.
  • Line 13x9-inch pan with foil, with ends of foil extending over sides. Spray with cooking spray.

Water, vegetable oil and eggs called for on box for cakelike brownies
1 pouch (17.5 oz) Betty Crocker™ peanut butter cookie mix
Water, vegetable oil and egg called for on cookie mix pouch
3 packages (8 oz each) cream cheese, softened
1 can (14 oz) sweetened condensed milk (not evaporated)
3 eggs
1 teaspoon vanilla
1 cup caramel ice cream topping

Steps:

  • Heat oven to 350°F. (325°F for dark or nonstick pan). Make and bake brownie mix as directed on box for cakelike brownies for 8-inch square pan. Cool completely on cooling rack, about 1 1/2 hours.
  • Make cookie dough as directed on pouch. Cover and refrigerate about 1 hour or until firm.
  • Wrap outside bottom and side of 9-inch springform pan with heavy-duty foil to prevent leaking. Spray inside of pan with cooking spray. Press cookie dough on bottom and 1/2 inch up sides of pan. Bake 13 to 18 minutes or until set.
  • Meanwhile, in large bowl, beat cream cheese with electric mixer on medium speed until fluffy. Gradually beat in condensed milk until smooth. Beat in eggs one at a time, just until blended. Stir in vanilla. Pour into crust.
  • In medium bowl, crumble a 4x4-inch square of cooled brownies into small pieces (about 1 1/2 cups). Reserve remaining brownies for another use. Sprinkle crumbled brownie pieces over cream cheese filling. Gently fold pieces into filling until just evenly coated.
  • Bake 50 to 60 minutes or until cheesecake is set at least 2 inches from edge of pan and center of cheesecake still jiggles slightly when moved and surface is golden brown. Turn oven off; open oven door at least 4 inches. Let cheesecake remain in oven 30 minutes. Cool on cooling rack, 30 minutes. Run small metal spatula around edge of pan. Refrigerate uncovered at least 8 hours or overnight before serving.
  • To serve, carefully run knife along side of cheesecake to loosen. Remove foil and side of pan. To cut cheesecake, use long, thin blade, non-serrated knife. Dip knife into hot water after each cut, cleaning it off with paper towel. In small microwaveable bowl, microwave caramel topping uncovered on High 10 to 20 seconds or until thoroughly heated. Top individual servings with caramel topping. Store cheesecake covered in refrigerator.

  • Prepare Brownies as instructed on the box. Use a 9X13 pan to bake the brownies and allow to cool completely. Cut into long bars and set aside. Take about 1/2 of the bars and press into the bottom of a 9 inch Springform pan forming an even crust. Spread the hot fudge topping on top of the first brownie layer. Set aside.
  • In a large mixing bowl, combine the cream cheese and peanut butter. Whip until well blended together. Add the condensed milk to the peanut butter and cream cheese mixture and mix. In a separate medium bowl, whip the heavy cream until firm peaks begin to form. Add the powdered sugar about half way through the mixing process. Once formed, set aside 1/2 cup of the whipped cream for later use. Fold the rest of the whipped cream into the peanut butter and cream cheese mixture.
  • Spread half of the cream cheese mixture over the hot fudge topping. Sprinkle half of the remaining brownie bars on top of the first cream cheese layer. Spread the remaining cream cheese mixture on top of the crumbled brownie pieces. Top with the half cup of whipped cream that was reserved earlier. Sprinkle with the rest of the brownie chunks, Reese’s Cups, and drizzle with hot fudge topping. Cover and chill for 4 to 24 hours.
