ROASTED CHICKEN THIGHS WITH PEANUT BUTTER BARBECUE SAUCE
Peanut butter is the surprise guest in this spicy-sweet barbecue sauce, which cooks up in just 10 minutes. This versatile sauce, which adds nutty richness and depth, keeps for 2 weeks in the fridge and also freezes well. You'll have quite a bit: This recipe yields 2 cups of sauce. It's great to have on hand, doing double-duty as a sauce or a fantastic marinade for chicken or baby back ribs. (If allergies are a concern, substitute in almond butter for the peanut butter.) Serve with sautéed green beans, roasted broccoli or coleslaw.

Steps:
- Make the barbecue sauce: In a medium saucepan, heat oil. Add onion and cook over moderate medium heat, stirring occasionally, until softened, about 2 minutes. Add tomato paste and cook, stirring, until lightly caramelized and deepened in color, about 2 minutes. Whisk in the remaining ingredients and 6 tablespoons water. Simmer until flavors are combined, and the sauce is slightly thickened, about 5 minutes.
- Make the chicken: Heat oven to 425 degrees. Set a rack over a rimmed baking sheet.
- In a large bowl, combine chicken, oil and 1/4 cup of the barbecue sauce and season with salt. Toss to evenly coat and arrange on the rack. Roast, using a brush to baste with the remaining 1/2 cup sauce every 10 minutes, until the chicken is cooked through and deep golden in color, about 30 minutes. Serve with the leftover sauce on the side, or store sauce in the refrigerator for later use.

Steps:
- In a large bowl, gradually stir hot water into peanut butter. Stir in chili paste, soy sauce, oil, vinegar, garlic, ginger and ground red pepper. Place chicken in marinade, and turn to coat evenly. Cover, and refrigerate overnight, turning occasionally.
- Preheat an outdoor grill for medium heat, and lightly oil grate. Thread chicken pieces onto skewers. Discard marinade.
- Grill chicken 8 to 10 minutes per side, or until no longer pink, and juices run clear.

- Preheat grill for high heat.
- In a bowl, mix the peanut butter, lime juice, soy sauce, garlic, curry powder, and cayenne pepper.
- Lightly oil the grill grate. Place chicken on grate, and brush with 1/2 the sauce. Grill 6 to 8 minutes. Turn chicken, and brush with remaining sauce. Continue grilling 6 to 8 minutes, until chicken juices run clear.

GRILLED TILAPIA WITH PEANUT SAUCE MARINADE
Use the Peanut Sauce Marinade (See recipe in side items) on the fish to marinate. I'll repeat it here for ease of use.Please note that the marinade is for eight servings but I usually only use five fillets with plenty of left over marinade. Therefore, you should be able to add more fish to match the size of your family without adding more marinade.I've made the marinade up and let the fish sit in it while I get the rice and veggies going (10-15min) and I've let them marinade overnight). Both taste delicious.

- In a small bowl combine the peanut butter, sugar and garlic until smooth. Add the remaining ingredients and stir until smooth.
- If you use frozen tilapia, defrost, rinse and pat dry. Place in a dish and pour the marinade on top. I like to move and flip the fish to make sure it is coated on both sides. Cover and leave to the side while you light the gass bbq and begin prep for the remainder of your meal. We like to serve ours with yellow rice and grilled squash.
- I use a grilling basket for grilling my fish so it doesn't fall apart, but I'm sure you could place them on a well oiled grill or piece of tin foil with some holes.
- When you grill is ready, place the basket with the fish (spray the basket with pam cooking spray to prevent sticking) on to the grill for about 8 minutes close the lid. Flip the basket and cook for an aditional 4-5 minutes or until the fish is flaky.
- Side-note: My children who are notoriously picky actually eat the entire fillet and typically ask for more.
- This meal (along with the rice and veggies) is typically ready and on the table within 30 minutes.

CHICKEN SATAY WITH PEANUT SAUCE

- To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside. In a medium bowl, combine coconut milk, soy sauce, curry powder, turmeric, garlic, ginger, brown sugar and fish sauce. In a gallon size Ziploc bag or large bowl, combine chicken and coconut milk mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade, discarding the marinade. Preheat grill to medium high heat. Thread chicken onto skewers. Brush with canola oil; season with salt and pepper, to taste. Add skewers to grill, and cook, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 12-15 minutes. Serve immediately with peanut sauce.
PEANUT BUTTER MARINADE FOR CHICKEN
This marinade adds a wonderful flavor to chicken, whether grilled or cooked in a skillet on top of the stove. I received the recipe from my sister who always cooks chicken thighs using this marinade.

RIBS WITH PEANUT BARBEQUE SAUCE

- Preheat oven to 275 degrees F.
- Add all of the ingredients for the brine except for the ribs in a large sauce pot and bring to a boil just to dissolve the sugar and the salt. Remove the brine from the heat and cool. Place the ribs into a plastic zip top bag and pour the cooled brine over the top. Refrigerate for at least 6 hours and up to 12.
- Remove the ribs from the brine, place on a sheet pan fitted with a rack, and cover with foil. Place in the oven and cook, covered, for 1 hour.
- In a medium bowl, whisk together all of the Peanut BBQ Sauce ingredients and set aside.
- Remove the ribs from the oven and discard the foil. Baste with the sauce, place the ribs back into the oven and baste every half hour until the ribs are tender and easily pull apart, about 2 more hours.
