I make this for my family all the time! This is a great recipe for vegan/vegetarian diets, just replace the peanut butter with organic peanut butter or another nut butter. Substitute water for milk if desired. The more milk you add, the thinner and soupier your ice cream will be. Serve with sliced fresh fruit or handmade whipped cream.

2 slightly overripe bananas, cut into chunks
1 teaspoon confectioners' sugar
½ teaspoon milk
2 drops vanilla extract
1 teaspoon peanut butter, or more to taste

Steps:

Arrange banana chunks on a plate; freeze until solid, about 2 hours.
Blend frozen bananas, confectioners' sugar, milk, and vanilla extract together in a blender until smooth and creamy; add peanut butter and blend until smooth.

3/4 cup smooth peanut butter (I like skippy naturals of Jif honey peanut butter)
2/3 cup sugar (or a little less)
3 cups half-and-half (you can use a combo of milk and heavy cream here too)
1 teaspoon vanilla
1/8 teaspoon salt
Oreo cookies, chopped and fozen
peanut butter cup, chopped and frozen
Reese's pieces

Steps:

Beat peanut butter and sugar until smooth.
Slowly beat in 1 cup half and half until thoroughly combined.
Whisk in 2 cups half and half, vanilla and salt.
Freeze according to manufactures instructions (i sometimes freeze the liquid mixture for 30 minutes to get it reallllly cold first).
Add mix in's in the last 5 minutes.

4 ripe bananas , chopped into 3cm chunks, then frozen
2 tbsp almond milk
1 tbsp organic peanut butter
1 tsp ground cinnamon
1 tbsp dark chocolate , grated
1 tbsp flaked almonds

Steps:

Tip the frozen bananas and almond milk into a blender. Blend together to create a smooth consistency. Add the peanut butter and cinnamon, and blend again. Taste and add more cinnamon, if you like.
Transfer to a freezer-proof container and freeze for 1 hr.
Take out of the freezer and serve with grated chocolate and flaked almonds sprinkled over.

1/4 c margarine (softened)
3/4 c Peter Pan Honey Roasted Creamy Peanut Butter
2 eggs
3/4 c sugar
3/4 c packed light brown sugar
1-2 ripe bananas, mashed (1/2 cup total needed)
1 tsp baking soda
1/2 tsp salt
1 1/2 c all-purpose flour
2 c semi-sweet chocolate chips

Steps:

1. Pre-heat oven to 350 F.
2. In a mixing bowl, add margarine, peanut butter, sugar, brown sugar, and eggs. Mix together until creamed.
3. Add in the mashed bananas, baking soda, and salt. Give it another good mix.
4. Add flour 1/2 cup at a time. Mix in well.
5. Then add the chocolate chips and give it another quick stir.
6. Place in a non-stick 9x13 cake pan. Smooth it all the way around the pan evenly.
7. Then place in oven to bake around 25-30 minutes until golden brown.

In a Dutch oven or a big, heavy-bottomed pot, combine the coconut milk (don’t worry if the coconut solids have separated from the liquid), honey, peanut butter, vanilla and salt. Bring the mixture to a simmer over medium-high heat, whisking often to prevent scorching.
By now, the mixture should be well blended, but if not, whisk vigorously until it is. If you are NOT using arrowroot starch, remove the pot from heat. If you ARE using arrowroot starch, transfer a few tablespoons of the ice cream mixture to a small bowl. Add the arrowroot starch to the bowl and whisk to get out all of the lumps. Pour the mixture into the pot and gently simmer for 1 minute, whisking frequently. Remove the pot from heat.
Transfer the mixture to a heat-safe mixing bowl to aid the cooling process. Let the mixture cool to room temperature, then place the bowl in the refrigerator until the mixture is completely and thoroughly chilled. If your future ice cream container is made of glass or metal, place it in the freezer to chill.
If you used arrowroot starch, scoop off the thickened top layer with a spoon (if there is one) and discard it. Whisk together the chilled mixture one last time, then pour it into your ice cream maker. Freeze according to your manufacturer’s instructions, then transfer it to your chilled container and freeze for several hours in the freezer.
