PEANUT BUTTER BALLS

Provided by Michelle

Number Of Ingredients 4

1 cup creamy peanut butter (- avoid the natural peanut butter with oils)
6 tbsp unsalted butter - softened
2 cups powdered sugar
16 oz chocolate bark

Steps:

  • In a medium sized bowl, mix together the peanut butter and butter until creamy. Slowly mix the powdered sugar into the peanut butter and continue to mix until well combined. It will appear super crumbly at first, keep mixing and it will all start to come together.
  • Cover the peanut butter ball in a small bowl and refrigerate for a few hours.
  • Once ready, scoop 1 inch sized balls, roll them to shape and place them on a cookie sheet. Place into the freezer while you melt the chocolate.
  • Using the double broiler method, place a heat safe bowl on top of a saucepan filled with water. Turn the heat to boil and place the chocolate bark into the bowl. Stir the chocolate until completely melted.
  • Remove the peanut butter balls from the freezer and begin dipping by sticking a toothpick into the ball, dip into the chocolate and tap your wrist a few times with your other hand and it will release some of the drippage.
  • Drop the coated balls onto a sheet of wax paper and allow the chocolate to harden. Once hardened, place the balls into a container and store either on the counter or the refrigerator.

Time 30m

Number Of Ingredients 6

1 1/2 cup creamy peanut butter
1/2 cup butter (softened)
1 teaspoon vanilla
3 cups powdered sugar
12 oz bag of chocolate chips
2 tablespoons shortening

Steps:

  • Line a baking sheet with waxed paper and set aside.
  • Mix peanut butter, butter and vanilla together in a large bowl.
  • Slowly add one cup of powdered sugar to the creamy mixture, mixing well each time. *Note -- I do not sift my powdered sugar! I just scoop out 1 cup full and dump it in my bowl.*
  • By the time you get to the third cup of powdered sugar, the mixture will become very difficult to stir with a spoon. Take your rings off and start mixing with your hands.
  • Once all of the powdered sugar is incorporated into the peanut butter mixture, you can start making your balls. Simply pinch off a small amount and roll between your hands to form a small ball. Place the peanut butter balls on the prepared cookie sheet with waxed paper.
  • Once you have made all of your balls, melt your chocolate. My favorite way to do this is in the double boiler, but if you don't have one, you can simply put a metal or glass bowl on top of a saucepan with about an inch of water in it. As the water in the saucepan begins to heat up, the steam will heat up your bowl and start melting your chocolate. Be sure to add the shortening to your chocolate - this will make covering your peanut butter balls with chocolate a lot easier.
  • One at a time, drop your peanut butter balls into the melted chocolate. Lift the ball out of the chocolate with a fork and then transfer it to the waxed paper.
  • Once all of your peanut butter balls are coated, put the cookie sheet in the fridge for 15-30 minutes. This will ensure the chocolate coating is completely hardened.

These delicious peanut butter and chocolate confections are famous in Ohio for a reason! Here's how you make my Homemade Buckeyes recipe!

Provided by Gemma Stafford

Categories     Dessert

Number Of Ingredients 6

1 cup (8oz/225g) creamy peanut butter (salted but unsweetened)
6 tablespoons (3oz/85g) butter (softened)
1 teaspoon vanilla extract
2 cups (8oz/230g) powdered sugar (sifted)
2 cups (12oz/340g) bittersweet chocolate (finely chopped)
2 tablespoons coconut oil

Steps:

  • In a mixer or medium bowl, beat the peanut butter, butter, and vanilla extract together.
  • Add the powdered sugar and mix until evenly combined. If using a mixer, make sure to scrape down the sides of the bowl once or twice.
  • Press together to form a dough and then divide the dough into 24 equally sized pieces.
  • Roll each piece of dough into a ball and place it on a plate. Refrigerate the balls until firm, about an hour.
  • After the peanut butter balls have chilled, place the chocolate and coconut oil in a small saucepan and gently heat on low until melted. Let the chocolate cool to room temperature.
  • Using a skewer to hold a peanut butter ball, dip in the melted chocolate, leaving the top of the ball exposed.
  • Place the dipped buckeye on a plate lined with a piece of parchment.
  • Repeat with the remaining peanut butter balls and then refrigerate to firm up the chocolate.
  • Once set, store in an airtight container in the refrigerator for up to 2 weeks.

  • Process the oats, flaxseeds, peanut butter, vanilla powder, salt (if using), and maple syrup in a strong food processor. Everything will start off very crumbly, but then it should start to come together a bit. Scrape down the sides as needed.
  • When everything is well pulsed, try to pinch a bit of the mixture together and see if it holds together. If it is too crumbly, add in a bit of water about 1/2 a tablespoon at a time. Different peanut butter brands vary, which affects how much water you need, if any.
  • Roll into balls about 1 tablespoon in size. Store covered in the refrigerator. You may need to separate layers with parchment paper.

  • Mix melted butter, optional sweetener and peanut butter. Use roasted peanut butter for more complex flavor and try to use one that is sort of solid on room temperature.
  • Cool the mixture in the fridge or in the freezer for at least an hour. We need to roll balls out of them so don't freeze it.
  • Make the peanut balls. It's quite messy business so be prepared. Put the balls back into the fridge or freezer to prepare them for dipping in chocolate.
