EASIEST EVER RASPBERRY JAM BARS

Easiest Ever Raspberry Jam Bars image

My Raspberry Jam Bars are ridiculously easy to make, and faster than most recipes because it uses melted butter rather than creaming it or rubbing it into the flour. These bars have an oatmeal biscuit base and crumbly oatmeal topping with raspberry jam sandwiched in the middle. Use whatever jam you want!

Time 45m

Number Of Ingredients 8

125 g / 1 stick unsalted butter (, melted)
1 1/2 cups / 225g plain flour ((all purpose flour))
1 1/2 cups / 135g rolled oats ((traditional oats, not quick, instant or steel cut))
1/2 cup / 110g brown sugar
1/2 tsp baking powder
Pinch of salt
1 egg
1 cup raspberry jam ((or other flavour of choice))

Steps:

  • Preheat oven to 180C/350 (fan forced). (Note 1)
  • Spray a 20cm/9" square tin with oil and line with baking/parchment paper with overhang (so it can be lifted out once cooked).

  • Place 2 1/2 cups of the mixture in the tin and press into base. Spread with jam (Note 2), then use your hands to crumble the remaining mixture over the top (Note 3).
  • Bake for 30 - 35 minutes or until the top is deep golden. Remove and allow to cool in the tin before lifting out of the tin using the baking paper.
  • Cut into squares. Serve at room temperature. Store in airtight container.

Categories     dessert

Time 1h55m

Yield 24 bars

Number Of Ingredients 10

1/2 pound (2 sticks) unsalted butter, at room temperature
1 1/2 cups sugar
1 teaspoon pure vanilla extract
2 extra-large eggs, at room temperature
2 cups (18 ounces) creamy peanut butter (recommended: Skippy)
3 cups all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons kosher salt
1 1/2 cups (18 ounces) raspberry jam or other jam
2/3 cups salted peanuts, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a 9 by 13 by 2-inch cake pan. Line it with parchment paper, then grease and flour the pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light yellow, about 2 minutes. With the mixer on low speed, add the vanilla, eggs, and peanut butter and mix until all ingredients are combined.
  • In a small bowl, sift together the flour, baking powder, and salt. With the mixer on low speed, slowly add the flour mixture to the peanut butter mixture. Mix just until combined.
  • Spread 2/3 of the dough into the prepared cake pan and spread over the bottom with a knife or offset spatula. Spread the jam evenly over the dough. Drop small globs of the remaining dough evenly over the jam. Don't worry if all the jam isn't covered; it will spread in the oven. Sprinkle with chopped peanuts and bake for 45 minutes, until golden brown. Cool and cut into squares.

PEANUT BUTTER AND JAM (PBJ) OATMEAL PROTEIN BARS

Peanut Butter and Jam (Pbj) Oatmeal Protein Bars image

I was created this bar because I was looking for something really yummy yet healthy to eat before I go running early in the morning. I needed something with a bit less sugar and carbs and a bit more protein than usual. This bar is also high in fiber, lignans, and omega 3 fats. I used thick rolled oats, not quick oats because they digest slower (lower GI) and ultimately keep your blood sugar nice and steady and hunger at bay. I also use a reduced sugar jam, you could also try a sugar free jam. I really love PBJ so I used a PBJ bar recipe and totally mixed it up and made it healthy and higher in protein. Not too sweet and so filling! Enjoy!

  • CRUMBLE: Position a rack in the center of the oven and preheat the oven to 350ºF. Line a 13x9 baking sheet with parchment paper; set aside for now. Combine the peanut butter and the salted butter in a microwave-safe bowl and zap in the microwave in 30-second increments until the mixture melts and mixes. Mix the oats, flour, sugar, coconut (optional,) baking powder, and ground cinnamon together in a large bowl. Pour in the melted butter mixture and stir to combine until you form a sand-like crumb. Press two-thirds of the prepared crumb mixture into the prepared pan. You want to make sure the crust is tightly packed in.
  • BAKE: Top with the remaining crumb mixture on top. Bake for 40-45 minutes. Remove from the oven and place on a wire rack for one hour. I usually stick mine in the refrigerator for a few hours after that to cool them down completely before cutting into pieces. If you cut them right away, they’ll still be delicious, just not as neat!

  • Begin by preparing the strawberry layer. Hull and slice the strawberries, then add them to a saucepan over medium heat with the 2T sugar. Stir occasionally and mash them down as the juices develop.
  • Once the strawberries are sufficiently broken down and juicy, mix together the corn starch and water, then add to the cooked strawberries. Allow it to bubble for about 30 seconds, then turn off the heat and stir in the jam.
  • Preheat the oven to 350℉ and grease and parchment line (with overhangs so it's easy to remove) an 8×8 inch square baking pan.
  • In a food processor, pulse ¾ cups of the rolled oats until they become smaller. Sand texture is too fine, but you definitely want to break them down a bit.

  • First, prepare the jelly/jam. Place the grapes, chia seeds, and honey in blender and blend until smooth. The amount of honey you use will depend on how sweet you prefer your jam. Start with a tablespoon, taste, and go from there. Transfer the mixture to an airtight container and refrigerate until set, at least 1 hour. I let mine set overnight.
  • Preheat the oven to 350 degrees. Line an 8×8 or 9×9 inch baking pan with parchment paper. Set aside.
  • Take 1 1/2 cups of the oats and process them in a blender or food processor until they are a fine crumb. Transfer them to a large bowl. Add the remaining 1 1/2 cups oats, peanut butter, honey, vanilla and salt and mix well. The mixture will be dry. Press a little more than half of the mixture into the bottom of the pan. Use your hands or a spatula to spread it evenly into the bottom of the pan and press it down firmly. If you are using your hands and the mixture is sticking to you too much, wet your hands slightly and it will be easier to press the mixture down. Spread the grape jelly over the top of the bottom layer. Use the rest of the oats mixture as your topping. Crumble it evenly over the top of the jelly.
  • Bake in the preheated oven until the top is lightly brown, about 30 minutes. Allow to cool before cutting into squares. They hold together better if you let them cool completely. Enjoy!
