INDONESIAN PEANUT-CELERY SOUP



Indonesian Peanut-Celery Soup image

Number Of Ingredients 9

2 tablespoons cooking oil, such as peanut or canola
1 medium onion, chopped
1 bunch celery, trimmed and chopped
2 garlic cloves, minced
4-5 cups Chicken Stock (p. 206) or Vegetable Stock (p. 204) or water
1 cup creamy peanut butter
1/4 cup ketjap manis (p. 14)
1 teaspoon sambal oelek (or other red chile paste)
1/4 cup chopped dry-roasted peanuts

Steps:

  • Heat the oil in a 2-quart pot over medium heat and add the onion, celery, and garlic and cook, stirring, for about 5 minutes, until the vegetables have softened. Reduce the heat to low, cover the pot, and let them steam for about 10 minutes, stirring once. Add the Chicken Stock and whisk in the peanut butter, a little at a time. Bring to a boil, whisking, and add the ketjap manis and sambal oelek, and a little more stock or water if the soup is too thick. Simmer about 10 minutes, then let it cool. Working in batches if necessary, puree the soup in a blender and return it to the pot. Heat the soup to the desired temperature, adjusting the seasonings (add more chile paste, if desired) and consistency (add more stock or water, if needed). Garnish with roasted peanuts and serve.

1/4 cup butter
3/4 cup onion, finely chopped
3/4 cup celery, finely chopped
3 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
3 tablespoons all-purpose flour
6 cups chicken broth
1 1/2 cups smooth peanut butter
1 tablespoon soy sauce
coarsely chopped peanuts (to garnish)

Steps:

  • In a large saucepan, melt butter over medium-high heat.
  • Add onion, celery, red pepper flakes and garlic.
  • Cook 5 minutes or until tender.
  • Sprinkle flour over mixture.
  • Stirring constantly, cook one minutes until well blended.
  • Whisking constantly, add chicken broth, peanut butter and soy sauce.
  • Reduce heat to medium-low; whisking frequently, simmer about 15 minutes.
  • Garnish with peanuts and serve hot.

1 (10 3/4 ounce) can condensed cream of celery soup
1/3 cup peanut butter (Creamy or Crunchy)
celery salt
oyster crackers

Steps:

  • Mix soup in small sauce pan per label directions
  • Add 2 Tbs of Peanut Butter
  • Heat soup on medium heat, stirring occasionally, until Peanut Butter is melted and soup is heated through
  • Ladle into bowl and sprinkle to taste with celery salt
  • Serve with oyster crackers.
