PEACH SALSA CHICKEN

Peach Salsa Chicken image

Fresh, vibrant, and flavorful Peach Salsa Chicken with glazed and grilled chicken breasts and a simple grilled peach salsa to top it off!

Provided by Chelsea Lords

Categories     Dinner     Main Course

Time 35m

Number Of Ingredients 16

1 and 1/2 cups diced fresh peaches ((~1 large peach or 2 small/medium peaches))
1/2 cup red pepper (diced)
1 tablespoon jalapeño pepper (finely diced (seeds/ribs discarded))
1/3 cup red onion (diced)
1 tablespoon freshly squeezed lime juice
1/3 cup cilantro leaves (coarsely chopped)
Optional: 1/8 teaspoon chili powder
Salt and pepper (1/4 tsp each)
1 pound boneless skinless chicken breasts
Olive oil, salt, and pepper
1 cup peach preserves
1 and 1/2 tablespoons olive oil (plus more for brushing)
1 tablespoon lite soy sauce
1/2 tablespoon Dijon mustard
1/2 tablespoon finely chopped garlic
1 and 1/2 tablespoons finely diced jalapeño pepper

Steps:

  • PEACH SALSA: Preheat a grill or grill pan to medium-high heat (about 400-450 degrees F.) Generously oil the grill--don't skip this step. (See Note 1) Halve the peaches and remove the pits. Lightly brush the sides and the skins with oil. Grill peaches until tender and lightly charred, but still firm enough to chop, about 4-5 minutes total, flipping halfway through. Chop the peaches into small, even pieces and add to a medium-sized bowl. Add in the diced red pepper, diced jalapeño, diced red onion, lime juice and coarsely chopped cilantro. Add in the chili powder, salt and pepper to taste (I add in 1/4 teaspoon of each, but add to your preference). Gently toss and taste. Adjust to personal preference (more salt/chili powder/lime juice). Refrigerate until ready to eat. Toss again right before adding to plates.
  • GLAZE: In a large bowl, combine the peach preserves, olive oil, soy sauce, mustard, garlic and jalapeño. Season to taste with salt and pepper (I add 1/4 teaspoon of each). Set aside 1/3 cup of this glaze for the end of the recipe.
  • CHICKEN: Halve the chicken breast(s) horizontally and pound the pieces to even thickness (don't want the chicken super-flat, just even so it will cook evenly). Drizzle each side with olive oil, salt, and pepper. Flip pieces and repeat -- oil, salt, pepper, seasoning. Place the prepared chicken on the grill. Grill for 8-10 minutes, flipping once in between halfway, and brushing generously with the peach glaze (not the 1/3 cup that you set aside), or until chicken juices run clear and internal temperature is at 160 to 165 degrees F. (carryover heat will take the chicken to 165 degrees F). Tent chicken with foil and let stand for 5-10 minutes.
  • SERVE: Brush the remaining 1/3 cup of the peach glaze over the cooked chicken and top with peach salsa (taste again before adding on top of the chicken and add any additional salt/pepper). Enjoy while hot.

GRILLED CHICKEN STREET TACOS WITH PEACH SALSA

Grilled Chicken Street Tacos with Peach Salsa image

These Grilled Chicken Tacos are made with juicy grilled chicken, fresh salsa, corn, cilantro, lime, and Cotija on street-sized tortillas. They're super easy, festive, and disappear at every gathering!

Provided by Traci The Kitchen Girl

Categories     Appetizer     Main Course

Time 45m

Number Of Ingredients 10

2 Boneless Skinless Chicken Breasts (patted dry with a paper towel)
1 teaspoon Extra Virgin Olive Oil
pinch Salt and Pepper
1/4 teaspoon Ground Cumin
8-12 Corn Tortillas
1 cup Peach Salsa (or mango salsa)
1 ear Corn (kernels removed)
2 tablespoons Cotija Cheese
1/4 cup Cilantro (chopped)
1 Lime (cut into wedges)

Steps:

  • Preheat grill to medium. Clean the grill surface and brush with oil.
  • Prepare CHICKEN BREASTS by lightly coating with OLIVE OIL and sprinkling SALT, PEPPER, and CUMIN over the surface. Allow chicken to sit at room temperature for about 15 minutes (this helps it cook more evenly when it's on the grill).
  • To grill chicken breasts, place them in the center of the hot grill, close the lid, and set a timer for 3-5 minutes, or until chicken easily releases from the grill and shows well-defined grill marks.
  • Next, turn the outside grill burners to MEDIUM and center grill burner to OFF. This is known as MOM = medium-off-medium, which creates indirect heat under the chicken and allows it to bake like it's in an oven.
  • Open the grill lid and flip chicken breasts over, keeping them in the center of the grill. Close the grill lid and continue cooking until chicken reaches an internal temperature of 165°.
  • Warm the tortillas and thinly slice the CHICKEN BREAST to scatter evenly among them; top with PEACH or MANGO SALSA; FRESH CORN, COTIJA CHEESE, CILANTRO, and LIME WEDGES.

Provided by Sandra Lee

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 15

4 chicken breast halves, bone-in
3 tablespoons Sandra Lee's All-Purpose Rub, recipe follows
1 tablespoon ground cumin
1/2 teaspoon cayenne
8 ounces frozen peach slices, diced small
8 ounces frozen mango chunks, diced small
1 jalapeno, finely chopped
1/4 teaspoon salt
1/4 cup chopped fresh cilantro leaves
1 lime, juiced
2 (1.25-ounce) packets original chili seasoning

EASY PEACH SALSA RECIPE

Easy Peach Salsa Recipe image

Provided by Natalie Clark

Categories     Fruit

Time 10m

Number Of Ingredients 7

3-4 peaches, peeled and cut into small bite size pieces
2-3 Roma tomatoes, diced
1/2 cup white or purple onion, diced
1-2 jalapeños, seeded and diced
juice of one lime
1/2 bunch cilantro, about 1/4 cup diced
dash of salt, optional, to taste

Steps:

  • Peel and dice the peaches. Prepare all other ingredients. Toss to combine, making sure lime juice is distributed evenly. If your peaches are particularly juicy, you can toss them with one tablespoon sugar and the lime juice and let them sit while preparing the rest of the ingredients. The sugar helps release the juice, and the lime prevents untimely browning of the fruit. Before you toss them in with everything else, just strain the liquid. Serve immediately with chips, or however, you plan to enjoy it. Leftovers can be stored covered in the fridge for two days, or until the peaches turn brown and soft.

1 (5 ounce) skinless, boneless chicken breast half
1 teaspoon olive oil

1 cup diced fresh peaches
1 cup diced tomato
½ cup sliced, seedless grapes
½ cup diced red onion

  • For marinade, in a shallow nonmetallic dish, combine wine, orange zest, orange juice, oil, rosemary and bay leaf. Add chicken, turning to coat. Cover and chill about 1 hour.
  • Meanwhile, for salsa, peel and pit and finely chop the fresh peaches (or pit and finely chop the nectarines). Combine peaches (or nectarines), pepper, avocado, green onions, lime zest, lime juice, and cilantro in a medium bowl. Cover and chill until serving time.
  • Drain chicken, reserving marinade. Grill chicken, skin-side down, on an uncovered grill directly over medium coals for 20 minutes. Turn chicken; grill for 15 to 20 minutes more or until chicken is tender and no longer pink. (Or, place chicken on the unheated rack of a broiler pan. Broil 5 to 6 inches from the heat for 28 to 32 minutes, turning once.) Brush with marinade up to last 5 minutes of grilling or broiling. Serve chicken with salsa.
