I found this peach cobbler recipe on the internet from the Salt Lick Restaurant in Austin, TX. Everyone loves this recipe so much I have to make a double batch! Feel free to cut back on the sugar. Everyone has and the peach cobbler still comes out perfect. :D Personally, I always use two bags of frozen peaches instead of canned.

1/2 cup melted butter
1 cup flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup room temperature milk
1 room temperature egg
1 (28 ounce) can sliced peaches, drained
1 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Steps:

  • Melt butter in a 9 x 13 inch pan.
  • Mix together flour, sugar, baking powder & salt.
  • Stir in milk & egg.
  • Pour evenly over melted butter.
  • Combine peaches, sugar & spices and spread over batter-DO NOT STIR!
  • Bake 35-45 minutes at 350°F until batter comes to the top and is golden brown.
  • Serve warm with ice cream.

1 cup granulated sugar
1 1/3 cup self rising flour
1/3 cup quick oats
1/2 cup milk
3 tablespoons granulated sugar for topping

Steps:

  • Preheat oven to 350°F. Heavily grease 9×13 pan with butter.
  • Spread the undrained peaches in the prepared pan evenly, set aside. In the bowl of your stand mixer fitted with the paddle attachment combine the butter and 1 cup sugar together for 2 minutes on medium speed.
  • Turn mixer to low and add in flour and oats, mixing until it's coarse crumb. Add in the milk and mix until combined.
  • Drop the mixture by the spoonful onto the peaches.
  • Sprinkle with the remaining 3 tablespoons granulated sugar.

3/4 cup all-purpose flour

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.

Adding the peach drink amps up the peach flavor. Once baked, it has a crispy top but the inside is creamy and gooey and is bursting with peaches.

2 can(s) peach pieces in light syrup, drain and save syrup (29 oz each)
1 stick unsalted butter
2 c Bisquick (original)
1 c milk
1 c peach drink (I used Minute Maid peach)
1 c granulated sugar
1 c sugar/cinnamon blend (1 cup sugar 1-1/2 tsp cinnamon), divided
2 tsp vanilla extract, divided
3 Tbsp corn starch
3 Tbsp peach drink (Minute Maid peach)

Steps:

  • 1. Open the cans of peaches and drain (save the syrup). Put peaches in a medium bowl. Place the syrup in a medium saucepan.
  • 2. Preheat oven to 350 degrees. Take the stick of unsalted butter and put in a 10x14 baking dish, and place in oven.
  • 3. Remove from the oven after the butter melts and set aside.
  • 4. Meanwhile, in a large mixing bowl, combine the Bisquick, milk, peach drink, sugar, sugar/cinnamon blend (reserving 2 Tbsp for topping), and 1 tsp vanilla extract. With a wire whisk, mix all until smooth. Set aside.
  • 5. Combine the corn starch and peach drink together in a cup. Mix until smooth. Set aside.
  • 6. Place the syrup over medium-high heat and bring to a light boil.
  • 7. Add corn starch mixture to syrup. Cook until the syrup gets thick.
  • 8. Remove from heat and add the remaining 1 tsp of vanilla extract. Set aside.
  • 9. Place a cookie sheet under the baking pan, large enough to catch any dripping for the cobbler. With the hot butter in the baking pan, pour the batter over the butter. DO NOT STIR!!! Place reserved peaches over the batter, completely covering the batter evenly with peaches. DO NOT STIR!!! Add the syrup mixture over the peaches. DO NOT STIR!!!
  • 10. Place the cobble on the center rack in the oven. Cook for 60 minutes or until the crust is dark golden brown.
  • 11. Remove from oven and sprinkle your remaining 2 Tbsp of sugar/cinnamon on top of cobbler. Let cool for 30 minutes before serving. Great with vanilla ice cream.

2 ready-made pie crusts
1 cup all-purpose flour (plus some extra for dusting the work surface)
3 tablespoons agave syrup
1 1/4 teaspoons cinnamon (plus more for sprinkling on top)
3/4 teaspoon nutmeg
Four 29-ounce cans sliced peaches (drained)
Kosher salt
1 orange
2 eggs (whisked)
vanilla ice cream (for serving)

Steps:

  • Preheat oven to 375 degrees F. Grease a 13x9-inch baking pan with 1/2 stick (4 tbs) of the butter. Set aside.
  • On a lightly floured surface, roll out the pie crusts until they are large enough to cover the baking pan surface.
  • In a large skillet, melt the remaining 1/2 stick (4 tbs) butter over medium heat. Mix in agave syrup, cinnamon, nutmeg, and peaches. Add in 2 pinches of salt and mix well. Once the mixture begins to simmer, reduce the heat to low and continue cooking for 10 minutes. Remove mixture from heat and set aside to cool.
  • Pour half of the peach mixture into the prepared baking pan in an even layer. Grate half of the orange zest on top of the peaches. Place the first sheet of pie crust on top. Bake for 15 minutes or until light brown.
  • Take the cobbler out of the oven. Pour the remaining half of the peach mixture on top and grate the remaining orange zest on top of the peaches. Place the second pie crust on top, brush with a thin layer of egg wash and sprinkle cinnamon.
  • With a fork, poke holes on the top layer. This will help it cook evenly and allow steam to escape. Bake for 40 minutes or until the peach juices start to bubble and the top crust is golden brown.
  • Serve with a scoop of vanilla ice cream on top.

120g golden caster sugar , plus extra for sprinkling
1 tsp ground ginger
150g plain flour
1 tsp baking powder
½ tsp ground cinnamon
150g butter , chilled and cubed, plus extra for greasing

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a baking dish with a little butter, then lay the drained peach slices in the base. Sprinkle with 2 tbsp of the sugar and the ground ginger and set aside.
  • Tip the flour, remaining sugar, baking powder, cinnamon and a pinch of salt into a food processor. Whizz until combined, then add the cubes of butter, pulse until the mixture resembles breadcrumbs, then add the egg and continue to blitz until it comes together to make a thick dough.
  • Spoon the dough in dollops on top of the peaches, creating a good covering, but leave some gaps for the dough to spread into. Sprinkle with a little caster sugar then bake for 40 mins, until golden. Serve with scoops of vanilla ice cream.
