This luscious citrus sparkler gets an extra kick from peach schnapps, a delicious complement to light salads.

1/4 cup sugar
5 cups water
1 (12-oz.) can frozen orange juice concentrate, thawed
1 (12-oz.) can frozen lemonade concentrate, thawed
2 1/2 cups peach-flavored schnapps
1/3 cup lemon juice
1 (2-liter) bottle (8 1/2 cups) ginger ale, chilled

Steps:

  • In medium saucepan, combine sugar and 2 cups of the water; mix well. Bring to a boil. Boil 3 minutes. Set aside to cool slightly.
  • In large nonmetal freezer container, combine concentrates, remaining 3 cups water, the schnapps and lemon juice; blend well. Stir in sugar mixture. Cover; freeze at least 8 hours or overnight until frozen, stirring 2 or 3 times after 2 hours.
  • To serve, spoon 1/2 cup slush mixture into each glass. Add about 1/3 cup ginger ale to each; stir gently.

1 pkg dry cake mix-white, yellow or French vanilla
1/3 c butter, room temperature
2 large eggs, divided
29 oz can peach slices, drained
12 oz cream cheese, room temperature
1/4 c sugar
1 tsp pure vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 9x13" pan with non-stick cooking spray.
  • 2. In a large bowl mix cake mix, butter, and 1 egg with a fork until you get a crumbly mixture.
  • 3. Set aside 1 1/2 cup of crumbs for topping.
  • 4. Press the remaining crumbs on bottom of prepared pan; Bake 8 minutes.
  • 5. Dice drained peaches and spread over top of crust.
  • 6. In the bowl of an electric mixer on medium-high speed, beat the cream cheese, sugar, remaining egg, and vanilla extract.
  • 7. Spread over top of peaches.
  • 8. Sprinkle with reserved crumbs. Bake 30 minutes.
  • 9. Chill at least 30 minutes before serving. Serves 12. Store leftovers in the refrigerator.

Steps:

  • Preheat oven to 350 degrees. Spray a 9x13" pan with nonstick cooking spray. In a large bowl combine cake mix, butter and 1 egg; mix with fork just until crumbly. Set aside 1 ½ c. crumbs for topping. Press the remaining crumbs on bottom of prepared pan; Bake 10 minutes. Cut peach slices into 1" pieces; Spoon onto partially-baked crust. In a large bowl, combine cream cheese, sugar, 1 egg and vanilla extract; beat with mixer until creamy. Spread over top of peaches. Sprinkle with reserved crumbs; Bake 30 minutes. Chill at least 30 minutes before serving; Serves 12. Store leftovers in refrigerator.

Easy Peachy Cream Cheese Bars image

1/3 Cup Butter
2 Eggs (Divide)
1 Cake Mix
1 tsp Vanilla
8 oz Cream Cheese (Room Temp)
1/3 Cup Sugar
3 1/3 Cups Fresh Peach Slices (Cut into Bite Sized Pieces)

Steps:

  • Mix butter, cake mix and one egg until crumbly.
  • Reserve 1 1/2 Cup of Crumbs
  • Take remaining crumbs and press into a greased 9 x13 pan and bake at 350 for 10 minutes.
  • Mix sugar, cream cheese, vanilla and remaining egg in electric mixer until smooth.
  • Spoon peaches over crust and cover with cream cheese mixture.
  • Then sprinkle reserved crumbs on top and bake at 350 for 30 minutes.
  • Chill 30 minutes before serving

1 (16 1/2-ounce) can refrigerated sugar cookie dough
1 (16-ounce) jar peach preserves
1 1/2 cups sliced almonds, divided
4 egg whites
1 1/2 cups sugar

Steps:

  • Soften dough at room temperature 5-10 minutes. Press into ungreased 9x13-inch baking pan. Bake for 12-15 minutes at 350° till golden brown. Spread preserves over crust. Sprinkle with half the almonds. Beat egg whites till soft peaks form. Gradually beat in sugar until stiff peaks form. Spread meringue over almonds. Sprinkle with remaining almonds. Bake 20-25 minutes or until lightly browned. Cool. Refrigerate.

  • Place rack in center of the oven then preheat to 350 degrees. Coat a 9" x 13" cake pan with cooking spray or line with parchment paper then set aside.
  • In a medium-sized mixing bowl, whisk together ⅓ cup granulated sugar, brown sugar, cornstarch, cinnamon and nutmeg until well combined. Add diced peaches then toss until the peaches are evenly coated and the dry ingredients have dissolved. Stir in lemon or orange juice, lemon zest and salt then set aside. NOTE: When working with fresh fruit, the amount of thickener you need depends on how ripe the fruit is. If you’re using super sweet, ripe fruit, increase the cornstarch by 1 or 2 Tbsp.
  • In a separate large mixing bowl, sift together flour, baking powder and salt. Cut the cold butter into flour mixture using a pastry cutter or fork until the mixture resembles coarse crumbs, then add ¾ cup granulated sugar and stir until combined.
  • In a small bowl, whisk together beaten egg and vanilla then add to dry ingredients. Mix until well combined.
