Peachy Fresh Fruit Salad With a Flourish of Angelica and Mint! image

This was the first thing I was taught to make at secondary school in Domestic Science! We were all taught to make basic lemon syrup for the fruit salad, a great classic and a standard recipe that I have never forgotten! However, here I have deviated a little and have taken advantage of some excellent local peach syrup instead of the homemade lemon syrup I usually make; and I have garnished the salad with mint and angelica from my herb garden. I have suggested certain fruits to use, but the beauty of a fresh fruit salad is that you can always rustle one up with whatever you have locally and to hand. Serve with fresh pouring cream for a real treat!

1/2 charentaise melon or 1/2 other local melon, peeled and diced
2 ounces green seedless grapes
1 red apple, cored but not peeled
1 green apple, cored but not peeled
1 orange
1 banana
1 ounce black currants
lemon juice
peach syrup (made up with cold water to 5 fl.oz. )
fresh mint sprig
fresh angelica leaf

Steps:

  • Cut the apples into bite sized pieces and the bananas into slices - then squeeze a little lemon juice on them.
  • Add the grapes, melon chunks, segmented orange and blackcurrants.
  • Pour the peach juice over the fruit and leave to stand for at least an hour before serving.
  • Garnish with fresh mint leaves or sprigs and anglelica leaves. Serve with single pouring cream or yoghurt.

  • Combine vanilla, ginger, and honey in small bowl. Mix well. Pour over fruit and nut mixture and stir to combine. Enjoy!

Tequila Lime Syrup for Fruit Salad image

This is lovely syrup used to brighten up the flavors of a simple fruit salad. The recipe comes to me from the Santa Fe Cooking School and works especially well as a light dessert after a Southwestern meal. The flavors are reminiscent of the popular mojito. I like it best with more tropical fruits like pineapple, mango and banana but find it works very well with summer fruits such as strawberries and grapes. One batch of syrup is plenty for 4-6 cups of fruit. You can prepare this days ahead of time and mix with the salad just before serving.

1 cup sugar
2 cups water
1 bunch of fresh mint
1 lime, juice of
3 tablespoons tequila

Steps:

  • Carefully wash the mint leaves removing any bruised leaves or stems.
  • Place sugar, water and mint leaves in a medium saucepan and bring to a boil over medium heat. Lower the heat and continue to simmer 15 minutes, occasionally scraping down sides to make certain all sugar crystals are incorporated.
  • Add the tequila and continue to simmer an additional 5 minutes.
  • Turn off heat and add the juice of one lime. Let syrup cool to room temperature.
  • Strain out the mint and refrigerate the syrup until ready to toss with your fruit salad.

Summertime Heaven! This is so simple, the hard part is cutting up all the fresh fruit. Everyone loves this and I am often ask to bring the fruit salad. I buy whatever fruit looks good and is in season. The fruit ingredients and amounts are to your taste. I make the day before to avoid rushing and add bananas right before serving. You won't believe how good this is, and so beautiful. I never measure the honey, I just pour a little over and stir it in.

1 papaya or mango
1 cup strawberries
2 kiwis
1 banana
2 navel oranges
3 tablespoons honey
1 tablespoon Grand Marnier, optional
3 to 5 sprigs fresh mint
1 cup raspberries or blueberries

Steps:

  • Peel and dice the mango or papaya, and put in a medium bowl. Trim the strawberries' stems and half or quarter, if large. Add to the bowl of fruit. Peel and dice the kiwi, add to bowl. Peel and slice the bananas, add to bowl.
  • Cut the top and bottom off the oranges just deep enough to expose the inner fruit. Following the curve of the fruit cut the skin and pith off the orange in panels. Holding the orange over the bowl cut between the membranes to free the citrus segments. Let them fall into the bowl as they are cut free. By hand, squeeze all the juice from the remaining membrane over the fruit, then discard. Repeat with the other orange.
  • Lightly stir the honey and Grand Marnier, if using, into the fruit. Strip the mint leaves off the stem, tear, or chop into smaller pieces, and stir into the fruit salad. Add the berries and set aside for 10 minutes or up to 2 hours.
  • Serve.

Sweet peaches, crunchy nuts, and tangy vinaigrette. After being on a strawberry spinach salad kick lately, I thought it would be fun to vary the ingredients a little and this is what resulted. Hope you like it as much as I did. :)

4 -6 cups spinach, washed, stems removed and roughly chopped
2 peaches (sliced or cut into smaller chunks)
1 small red onion
1/2 cup toasted pine nuts
2 tablespoons grainy mustard
1/4 cup balsamic vinegar
6 tablespoons extra virgin olive oil
1 1/2 teaspoons minced garlic
1 tablespoon sugar
cracked black pepper, to taste

Steps:

  • Make the vinaigrette: Using a whisk, combine mustard, vinegar, olive oil, garlic and sugar in a small bowl, and set aside.
  • Either in a large serving bowl or in 4 individual serving bowls, arrange spinach, onion, peaches and pine nuts.
  • Drizzle with vinaigrette just before serving and sprinkle with cracked black pepper.
