¾ cup pecans
2 ripe peaches
4 cups baby spinach, rinsed and dried
¼ cup poppyseed salad dressing

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Arrange pecans on a single layer on a baking sheet and roast in preheated oven for 7-10 minutes, until they just begin to darken. Remove from oven and set aside.
  • Peel peaches (if desired) and slice into bite-sized segments. Combine peaches, spinach and pecans in a large bowl. Toss with dressing until evenly coated, adding a little additional dressing, if necessary.

1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
1 shallot, thinly sliced
Kosher salt and freshly ground black pepper
1 to 2 large ripe peaches, pitted and sliced into thin wedges
1/2 cup candied pecans
4 ounces smoked Gouda, crumbled into small pieces
5 ounces baby arugula

Steps:

  • Add the oil, vinegar, honey and mustard to a jar with a lid. Add the shallot and season with salt and pepper. Close the jar and shake until combined. (See Cook's Note.)
  • Layer the peaches, pecans, Gouda and arugula in a large bowl. Pour the dressing over the top, then toss until everything is coated. Transfer to a serving bowl and serve immediately.

Eddie Hernandez, who runs a string of Mexican restaurants in Georgia and Tennessee called Taqueria del Sol, came up with a delicious way to deal with hard, unripe peaches. Sliced thinly, softened with salt and brightened with lime juice and Serrano chiles, the peaches become a salad that's a cousin to Mexican street snacks built from unripe mangoes and papayas and punched up with chile salt. The salad keeps well in the refrigerator for several days. Mr. Hernandez likes to eat it with a scoop of cottage cheese on the side, though dabs of goat cheese would do as well.

One of my favorite go-to summer salads is this fresh peach spinach salad with creamy goat cheese, heart-healthy avocado and crunchy toasted almonds. Drizzle this lovely peach salad with an easy homemade balsamic vinaigrette for the perfect lunch!

4-6 cups organic spinach
2 large peaches, sliced
1 avocado, diced
1/2 small red onion, very thinly sliced
1/2 cup goat cheese crumbles (or sub feta)
1/2 cup sliced toasted almonds*
For the dressing:
3 tablespoons extra virgin olive oil
3 tablespoons balsamic vinegar
1 garlic clove, minced
1/2 teaspoon dijon mustard
Optional: 1-2 teaspoon sugar, pure maple syrup or honey to sweeten dressing
Freshly ground salt and pepper, to taste

Steps:

  • In a medium bowl, whisk together the balsamic vinaigrette: balsamic vinegar, olive oil, minced garlic, dijon and salt and pepper. Add a sweetener here if you'd like here too. I always prefer to!
  • In a large bowl, add the spinach. Drizzle with desired about of balsamic vinaigrette and toss together to combine. Top salad with peach slices, diced/sliced avocado, red onion, goat cheese crumbles and toasted almonds. Toss very gently again. Serve immediately. Salad serves 4.

2 peaches, halved
1 teaspoon grape seed oil (avocado or canola would work too)
1/2 cup blueberries
1/4 cup sliced red onion
1/4 cup pecan halves
1 ounce crumbled goat cheese
basil, for garnish
1 tablespoon course ground mustard
1 tablespoon dijon mustard
1 tablespoon honey
1 tablespoon apple cider vinegar
salt & pepper

Steps:

  • Preheat grill to medium high heat.
  • Season chicken with salt and pepper on both sides.
  • Lightly brush peach flesh with grape seed oil.
  • Place chicken on grill grates and grill each side for 5-7 minutes, or until chicken is no longer pink. (depending on thickness)
  • Place peaches on grill grates flesh side down. Grill for 3-4 minutes, or until there are grill marks.
  • Remove both chicken and peaches from grill and let rest.
  • In the meantime, to a small bowl add course ground mustard, dijon mustard, honey, apple cider vinegar, salt and pepper. Whisk to mix everything together. Set aside.
