The classic combination of peaches and cream is as simple as it sounds: peaches, lightly sweetened and simmered, need only a splash of cold heavy cream and nothing more. Just remember to make this ahead of time for the peachiest results.

4 fresh peaches, or as needed
⅓ cup white sugar, or to taste
¼ cup water
1 ½ cups heavy cream

Steps:

  • Cut each peach in half along the crease, twist open, and remove the pit. Peel and slice. Cut slices in half to get roughly 2 cups of sliced peaches.
  • Bring sugar and water to a boil in a saucepan over medium-high heat. Boil until a syrup forms, about 3 minutes. Stir in peaches until coated. Bring syrup back to a light simmer, about 1 minute. Immediately remove from heat and pour mixture into a bowl.
  • Transfer peaches into a large bowl using a slotted spoon. Pour in heavy cream and stir to combine. Divide mixture between serving glasses, cover with plastic wrap, and refrigerate until completely chilled and cream has absorbed all the peach flavor, at least 3 hours.

2 tablespoons sour cream

Steps:

  • Place sliced peach in a small serving dish. Sprinkle with brown sugar and spoon sour cream on top. Sprinkle with pecans.

1 1/2 cups quick-cooking oats
1 1/3 cups flour
1 cup firmly packed brown sugar
2 teaspoons ground cinnamon
2 teaspoons apple pie spice
3/4 cup cold butter, cut into small pieces
3/4 cup granulated sugar, divided
1/4 cup flour, plus
2 tablespoons flour
1 teaspoon ground cinnamon
1 teaspoon apple pie spice
5 cups peeled and sliced peaches
1 (8 ounce) package cream cheese, softened
2 eggs
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°F For the Crust, mix oats, 1 1/3 cups flour, brown sugar, cinnamon and apple pie spice in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Press half of the mixture into the bottom of 13x9-inch baking dish. Reserve remaining mixture for topping.
  • For the Filling, mix peaches, 1/4 cup granulated sugar, 1/4 cup flour, cinnamon and apple pie spice in medium bowl. Add peaches; toss to coat. Layer over bottom crust.
  • Mix cream cheese, eggs, vanilla, 1/2 cup granulated sugar and 2 tablespoons flour in small bowl until smooth. Spread over peaches. Top with reserved oat mixture.
  • Bake 40 to 45 minutes or until golden brown. Cool in pan on wire rack.

8 small peaches, sliced
1/4 c. sugar
1/4 c. brown sugar
1 tsp. cinnamon
15 graham crackers
2 c. heavy cream
1/4 c. powdered sugar
1 tsp. vanilla extract
1/4 c. sliced almonds

Steps:

  • Macerate peaches: In a large bowl, combine peaches, brown sugar, sugar and cinnamon. Toss until the peaches are evenly coated in the sugar. Refrigerate for 30 minutes.
  • Make whipped cream: In a large bowl, combine heavy cream, powdered sugar and vanilla. Beat mixture with a hand mixer until stiff peaks form.
  • Assemble lasagna. In a 8" square baking pan, place graham crackers in an even layer. Spread an even layer of whipped cream over the graham crackers, top with macerated peaches then sprinkle some almonds on top. Repeat three more times. Chill in refrigerated until the graham crackers have softened, about 2 hours.
  • Serve cold.

I found this fast and easy dessert recipe again in my "Better Homes and Gardens" Dessert Cookbook c 1973. I made this recipe for my husband and I about a couple of weeks ago. It was fast and easy to make and we both loved it served with a scoop of vanilla ice-cream. I would make it for company .

- 1 - 29 oz. can of sliced peaches, drained
- 3/4 cup of quick cooking rolled oats
- 1/2 cup of packed brown sugar
- 1/2 cup all purppose flour
- 6 tbsp. of butter or margarine
- vanilla ice cream

Steps:

  • Arrange sliced peaches in a 8 x 1 1/2" round baking dish ( use a 8 x 8" square baking dish)
  • In a mixing bow mix rolled oats, brown sugar, flour and butter or margarine till crumbly.
  • Sprinkle over peach slices.
  • Bake in a preheated 350 degree F oven for 30 minutes.
  • Serve warm with vanilla ice cream
  • makes 6 servings
