Provided by Rachael Ray : Food Network

Categories     dessert

Time 20m

Yield 2 servings

Number Of Ingredients 10

3 cups red wine
1 cup sugar
1 cinnamon stick
2 whole cloves
2 to 3 whole peppercorns
1 or 2 strips lemon rind
2 large peaches, halved and pitted
1 pint vanilla bean ice cream
Whipped cream, in canister
Freshly grated nutmeg, to garnish

Steps:

  • Combine the wine, sugar, cinnamon stick, cloves, peppercorns, and lemon rind in a medium saucepan. Bring to a boil, stir to dissolve the sugar, and reduce heat to a bubble.
  • Bring the poaching liquid to a boil and cook on high heat until reduced to a syrupy texture. Add the peaches and poach the fruit, spooning the syrup over them occasionally, until you can pierce the peach easily with a knife, about 5 minutes.
  • Put the peach halves in 2 dessert bowls. Top with ice cream, whipped cream, and drizzle with the poaching syrup. Grate a little nutmeg over the top.

POACHED PEARS IN RED WINE

Poached Pears in Red Wine image

By combining peeled pears with red wine and a bouquet of spices, you can create a beautiful dish that highlights the fruit's natural sweetness.

Provided by Stacy Slinkard

Categories     Brunch     Dessert

Time 45m

Yield 6

Number Of Ingredients 8

1 lemon (juiced and zested), divided
4 to 6 pears (Bosc or Anjou, peeled and cored)
1 1/2 cups red wine (Zinfandel, Shiraz, or Merlot work best)
3/4 cups granulated sugar
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
Garnish: Fresh mint leaves or dark chocolate shavings
For serving: Vanilla ice cream, mascarpone cheese, or crème fraiche

Steps:

  • Gather the ingredients.
  • Fill a bowl with cold water and add all but 2 tablespoons of the lemon juice.
  • Peel, halve, and core each pear.
  • Place them in the bowl of lemon water to rest; the lemon juice will help prevent browning.
  • Combine the red wine, sugar, the reserved 2 tablespoons of lemon juice, lemon zest, vanilla extract, and cinnamon in a medium saucepan large enough to hold the pears.
  • Bring to a boil, then turn the heat down to reach a low simmer. Add the pears and simmer for 10 to 12 minutes on one side.
  • Rotate the pears and continue to poach them for an additional 8 to 10 minutes, or until they are tender and are easily poked through with a fork.
  • Remove the pears from the pan and cool them on a cooling rack or old, clean towel.
  • Bring the wine sauce back up to a rolling simmer and cook until the liquid has been reduced by half.
  • To serve, place one pear into a shallow bowl. Pour a stream of sauce over the fruit.
  • Place one scoop of ice cream, mascarpone cheese, or crème fraiche next to the pear (if using). Serve and enjoy.

PEACHES IN RED WINE

Peaches in Red Wine image

One of my husband's family recipes, a French staple in the summer in peach season. Minimum of 6 hours refrigeration. No cooking at all!!

Provided by Kasha

Categories     Dessert

Time 6h15m

Yield 4 serving(s)

Number Of Ingredients 3

6 ripe peaches, peeled and sliced
400 ml red wine
3/4 cup sugar

Steps:

  • Peel the peaches--to do it easily, boil them for about 10 seconds, then peel off the skin.
  • Slice them.
  • Put the peeled, sliced peaches in a bowl, add about half a bottle of red wine to cover.
  • The type of wine isn't so important, but it has to be decent and drinkable.
  • I used a 3 dollar bottle of Cotes du Rhone yesterday.
  • Pour in the sugar and stir.
  • Must sit for 6 hours in the fridge, minimum.
  • Serve in pretty glasses or dishes.
  • If you feel you need something else to go with it, try some kind of crunchy cookie or macaroon.

PESCHE AL VINO ROSSO (PEACHES IN RED WINE) - MEMORIE DI ...
2014-08-01 Add enough red wine to each bowl or glass just to barely cover the peaches and allow them to macerate for a further 30 minutes or more. The longer they macerate in the wine, the more potent the wine taste will be—too long a maceration and the taste of the wine will come to dominate. I find that 30-60 minutes or so provides the right balance between wine and peach, but this is a matter …

THE RITUAL OF SUMMER PEACHES IN RED WINE – HOMEMADE ...
2021-07-04 Ahh, the wonderful ritual of sitting outside after dinner and drinking red wine soaked with summer peaches.
