PEACH COOKIES
Peach Cookies, an impressive dessert for every occasion. Soft cookies sandwiched together with an apricot jam and cookie crumble filling, then dipped into coloured milk, and coated in granulated sugar to resemble peaches, my favourite childhood treat. They are ridiculously easy to make, and ready in about 40 minutes or so. Grab some before they disappear! These are seriously nice cookies that kids will adore.

Steps:
- Preheat the oven to 180 degrees Celsius (350 Fahrenheit).
- To make the dough, use a hand mixer or the kitchen aid to mix the eggs and sugar until foamy and pale yellow.
- Add the oil, and mix well again.
- Add the vanilla extract, baking powder and flour, and mix to form a dough. Add a bit more flour if the dough is still sticky.
- Use your hands to shape small balls about the size of a walnut.
- Line 2 baking trays with non-stick perchament paper, then arrange the balls onto it.
- Bake for about 12-15 minutes until no longer soft, then remove from the oven and leave to cool a bit, before making a well in the middle of each cookie with a sharp knife.
- Mix the scooped cookie crumbs with the jam, then fill each cookie, and sandwich two together to make a peach cookie.
- In one cup of milk, add the yellow food colouring, and in the second the red one.
- Dip each cookie into each bowl of milk, then toss into the granulated sugar.
- Decorate with mint leaves, and leave to dry before serving.

- Preheat oven to 350°. Melt butter in a 12-in. cast-iron or other ovenproof skillet over medium heat. Add peaches, 3/4 cup sugar, 2 teaspoons vanilla, ginger and cinnamon. Cook and stir until peaches soften and begin to break down, about 10 minutes. Remove from the heat., In a large bowl, cream shortening, brown sugar and remaining 1 cup sugar until light and fluffy, 5-7 minutes. Beat in egg, almond extract and remaining 1 teaspoon vanilla. In another bowl, whisk flour, cornstarch, baking soda and baking powder; gradually beat into creamed mixture. Crumble dough over peach mixture. If desired, sprinkle with pecans and coarse sugar., Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool on a wire rack. If desired, serve with vanilla ice cream.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In large bowl, stir together cookie mix and melted butter until crumbly. Set aside.

BROWN BUTTER PEACH CRUMBLE BARS

- Heat oven to 350°F. Line 9-inch square pan with foil, allowing some to hang off edge; spray with cooking spray.
- In 2-quart saucepan, heat butter over medium heat 2 1/2 to 3 minutes, stirring constantly, until butter begins to brown and smells nutty. Remove from heat; cool 5 minutes. Transfer to small microwavable bowl.
- In large bowl, break up cookie dough. Stir in 1/3 cup of the flour, 1/4 teaspoon of the cinnamon and 1/4 cup of the browned butter. (DO NOT EAT RAW COOKIE DOUGH AFTER COMBINING WITH FLOUR.) Press 1 1/4 cups of the dough mixture evenly in bottom of pan to make crust. Bake about 20 minutes or until golden brown and center is set; cool 10 minutes.
- Meanwhile, in same 2-quart saucepan, add peaches, remaining 3 tablespoons flour, remaining 1/4 teaspoon cinnamon, the brown sugar, lemon juice and 2 tablespoons of the browned butter. Stir until peaches are thoroughly coated. Cook over medium heat 1 to 2 minutes, stirring constantly, until thickened. Spread cooked peach mixture on top of baked cookie base.
- Crumble remaining dough mixture on top of peach layer. Bake 32 to 35 minutes or until dough is set and light golden brown. Cool completely, about 2 hours.
- In small microwavable bowl, heat remaining 1 tablespoon browned butter uncovered on High 10 to 15 seconds or until melted. Stir in powdered sugar and water. If necessary, microwave uncovered on High 5 to 10 seconds or until thin enough to drizzle. Drizzle on top of bars. Cut into 4 rows by 3 rows.

While we were vacationing with friends in Duck, N.C. we bought a bushel of peaches. I was requested to make a cobbler with them, and I researched the internet for the perfect recipe to WOW everyone.I thought the boiling water in the dough was unique and decided to try this recipe that I adapted from All.Recipes.com turned out to be the hit of the vacation. I double the recipe and put in 9 x 13 pan.

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch.
- Toss to coat evenly, and pour into a 2 quart baking dish.
- Bake in preheated oven for 10 minutes(I cooked filling on top of stove until thickened).
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt.
- Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal.
- Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them.
- Sprinkle entire cobbler with the sugar and cinnamon mixture.
- I sprinkled only a little bit, since it was turning the top too brown for my taste.
- Bake until topping is golden, about 30 minutes.
PEACH CRISP (COOKIE MIX)
From Betty Crocker. Feel free to experiment with other fruit or fruit combos (I used peaches & blackberries my first time making this). In place of the canned peaches you can also use 5 cups frozen peaches (or other fruit), thawed and drained. There is a lot of crumble topping on this crisp so you may wish to use a larger pan (11x7 perhaps) and a bit more fruit, but I liked it this way :)
