Homemade Peach Crumb Bars image

These homemade peach crumb bars are always a hit. Wait until summer for fresh peaches or use frozen to get that wonderful peach flavor any time of the year.

1 ½ cups all-purpose flour
½ cup white sugar
½ teaspoon baking powder
1 pinch salt
10 tablespoons cold unsalted butter, cut into cubes
1 large egg yolk
1 tablespoon cold water
2 cups fresh peach slices, or more to taste
½ cup white sugar
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat an 8x8-inch baking pan with cooking spray.
  • Whisk flour, sugar, baking powder, and salt together in a bowl. Next, cut in the cold butter using 2 forks or a pastry cutter then slowly mix in the egg yolk and cold water. Don't worry if the dough seems really crumbly; it should be!
  • Press 1/2 of the crumble mixture into the prepared pan to make the crust. Save the rest for the top of the bars.
  • Stir together peach slices, sugar, flour, lemon juice, vanilla extract, cinnamon, and nutmeg until combined. Evenly add peach filling to the top of the crust.
  • Sprinkle the remaining crumble over the peach filling.
  • Bake in the preheated oven until golden brown and set, 30 to 38 minutes. Cool bars to room temperature, then cut and serve.

1 stick plus 5 tablespoons unsalted butter, room temperature, plus more for pan
1 cup sugar
2 cups all-purpose flour
1 teaspoon coarse salt
1 1/4 pounds peaches, pitted and cut into a 1/2-inch dice (3 1/2 cups)
1/2 cup sugar
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
1/2 teaspoon coarse salt

Steps:

  • Preheat oven to 375 degrees. Butter an 8-by-8-by-2-inch cake pan. Line with parchment, leaving a 2-inch overhang on two sides; butter parchment.
  • Crust: Beat butter with sugar in a bowl until light and fluffy, about 3 minutes. Scrape down bowl. Add flour and salt; beat until dough forms clumps but does not completely hold together. Press 2 1/2 cups flour mixture into bottom and 1 inch up sides of prepared pan.
  • Filling: Stir together peaches, sugar, flour, lemon juice, and salt in a bowl. Pour into crust. Crumble remaining flour mixture evenly over top, squeezing to create clumps. Bake until bubbling in center and crust is golden, about 1 hour, 10 minutes (if browning too quickly, tent top with foil). Let cool 20 minutes. Remove from pan and let cool completely on a wire rack, about 1 hour. Cut into 2-inch squares.

2 cups unsalted butter (softened)
1 cup sugar
1/4 cup lemon juice
1 tsp. cinnamon
4 tsp. freshly grated lemon zest
4 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
2 cups peaches (peeled and diced )
2 cups powdered sugar
4 tbsp. unsalted butter (softened)
4 tbsp. lemon juice
1 tsp. cinnamon
2 tbsp. freshly grated lemon zest (for garnish)

Steps:

  • Preheat oven to 350°.
  • Mix butter, sugar, cinnamon, lemon juice and lemon zest with an electric mixer until smooth.
  • Add flour and peaches and stir with a wooden spoon until very well combined.
  • Mixture will be dry.
  • Spray a 10x15" jelly roll pan with cooking spray.
  • Press shortbread mixture into pan.
  • Bake at 350° for about 40 minutes, or until toothpick inserted in center comes out clean.
  • Combine all ingredients except lemon zest with electric mixer until well mixed.
  • Spread over cooled shortbread.
  • Garnish with fresh lemon zest.
  • Allow icing to set about 30 minutes before cutting into strips.

Peach Shortbread Bars (Eggless) image

Buttery, soft shortbread bars with peach filling and crumble topping

Number Of Ingredients 11

1 cup all-purpose flour (120 gms)
1/2 cup wholewheat flour (55 gms, see notes)
1/2 tsp baking soda
1/4 tsp cinnamon
1/2 tsp salt if using unsalted butter
1/2 cup caster sugar (95 gms)
1/2 cup chilled butter, cubed (115 gms)
1 to 2 tbsps ice cold water
1/4 cup chopped walnuts, optional but recommended
6 to 7 ripe peaches
1 tbsp brown sugar

Steps:

  • First make the crust. In a large bowl, sift the flours with the baking soda, cinnamon and salt (if using). Stir in the sugar.
  • Add the cold butter cubes and rub it into the flour mixture until it resembles coarse breadcrumbs and there is no dry flour left. This could take a couple of minutes.
  • Remove 3/4 cup of this mixture and place it in the fridge to use as the crumble topping later on.
  • To the remaining mixture in the bowl, add the ice water and bring it all together into a soft dough that holds together. You may not need all of the water, so add it slowly.
  • Place the dough on a large piece of clingfilm, pat it into a disc, cover and chill for 30 minutes.
  • In the meantime, peel and slice the peaches (not too thin or they'll become mushy). Toss them with the brown sugar in a small bowl and refrigerate while the dough is chilling.
  • Preheat the oven to 180 C and line a 9x5 loaf tin with non-stick or greased baking paper, leaving a little overhang for easy removal.
  • Now unwrap the chilled dough and then place it in the bottom of the pan. Spread it out evenly, pressing down as you go, making sure it's right up to the corners. The dough is not sticky and will yield easily.
  • Spread the peaches over the dough. Then toss the walnuts into the reserved crumble topping from step 3 and sprinkle it all over the peaches. Press down lightly to help it stick.
  • Bake for 30 to 35 minutes until the top has browned, leaving it in the oven for a few more minutes if needed.
  • Allow the shortbread to cool in the pan for 15 minutes, then lift it out using the paper overhang and place on a wire rack to cool completely. Slice into 8 bars and serve with vanilla ice cream!
  • Store at room temperature in an airtight tin for 1 to 2 days after which it is best to transfer them to the fridge for a week, or in the freezer for longer. Happy baking!

3 cups flour
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon salt
1 cup cold butter (2 sticks cut into thin slices)
1 large egg
3 large peaches

Steps:

  • Preheat oven to 375 degrees F.
  • Prepare a 9 x 13 inch pan with butter or non-stick spray. Set aside.
  • Wash and peel peaches. Cut into slices about 3/8 to 1/2 inches thick. Set aside.
  • In a large bowl combine sugar, baking powder, flour, spices, and salt with a whisk, or an electric mixer on low speed.
  • Cut the butter slices into the flour mixture with a pastry blender, your fingertips, or a mixer.
  • Add the egg and continue to blend until crumbly. The mixture will look like sand with little chunks of butter.
  • Put 3 to 4 cups of the shortbread mixture into the prepared pan and pat down firmly.
  • Arrange sliced peaches in rows.
  • Sprinkle with remaining crust mixture.
  • Bake for 30 minutes or until it begins to brown around the edges.
  • Cool completely before cutting into squares.

2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon salt
1 cup cold butter
1 cup peach preserves (or jam)
6 -8 teaspoons raspberry preserves (or jam)
1/2 cup sliced almonds
powdered sugar (to garnish)

Steps:

  • Preheat oven to 350°.
  • Combine flour, sugar and salt in a medium bowl. Cut in butter with a pastry blender until crumbly. Reserve 1 cup flour mixture.
  • Lightly grease an 11 x 7 inch or 9 inch square pan. Press remaining flour mixture onto bottom of prepared pan.
  • Bake at 350° for 25 to 30 minutes or until lightly browned.
  • Spread peach preserves over crust in pan. Dollop raspberry preserves by 1/2 teaspoonfuls over peach preserves.
  • Sprinkle reserved 1 cup flour mixture over preserves. Sprinkle with almonds.
  • Bake at 350° for 35 to 40 minutes or until golden brown. Let cool 1 hour on a wire rack. Cut into bars.
  • Garnish with powdered sugar, if desired.
  • Enjoy!
