PEACH COBBLER BREAD
I developed this recipe to take advantage of our wonderful Georgia peaches. My husband, Andy, says it tastes just like peach cobbler.

- In a bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in water and extracts. Stir in peaches. Combine flour, baking soda, salt and baking powder; gradually add to the creamed mixture. Stir in pecans. , Pour into a greased 9x5-in. loaf pan. Combine topping ingredients; sprinkle over batter. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

CINNAMON PEACH BREAD
Steps:
- Preheat oven to 350 degrees. Dice the peaches into small bite size peaches. You may peel them if you want, but I did not.
- In a large bowl, using a hand mixer, beat the softened butter and 1/2 cup turbinado sugar until combined. To this, add in an egg one at a time, beating them in until combined. Add in the whole milk and vanilla extract and beat until combined. Lastly, gently stir in the freshly diced peaches with a wooden spoon.
- Using a sifter, add in the all purpose flour, cinnamon, baking powder, baking soda and a pinch of salt. Mix gently to combine with the wooden spoon, making sure you don't overmix!
- Grease a 9x5 loaf pan or add parchment paper. Gently add the bread mix into the loaf pan. On top, add a generous sprinkle of turbinado sugar to ensure that you have a crunchy topping!
- Bake at 350 for 50-55 minutes or until a toothpick comes mostly clean (a few crumsb are okay). Let it cool in the pan for 3-5 minutes. Remove and place on a wire cooling rack.
- Once the bread has fully cooled down, mix 1/4 cup of powdered sugar and a tsp of milk (or more if needed) to make your powdered sugar glaze. If it's too thick, add more milk. Too thin? Add more powdered sugar!
- Generously drizzle the glaze on top of the bread and serve! Best with a dab of butter and a drizzle of honey! Enjoy!

MINI LEMON RICOTTA OLIVE OIL LOAVES
These delicious little Lemon Ricotta Olive Oil Loaves are one of my favorite things to make any time of year, but even more so around the holidays. They are impossibly moist and tender, with a bright lemon flavor and sweet-tart lemon glaze.

- Preheat the oven to 350 degrees. Grease and flour 9 cavities of a mini loaf pan. Even if the pan is non-stick, it's important to grease and flour the pan. The loaves are so moist and tender that they stick easily. You can also simply line the pan with mini-loaf paper liners.
- Add the flour, cornstarch, baking powder and salt to a bowl and stir with a wire whisk to combine.
- Add the lemon zest, olive oil, and sugar, to a separate bowl and whisk to combine. Add the eggs one at a time, whisking vigorously for 10-20 seconds after each addition.
- Add the ricotta, lemon juice, and vanilla and lemon extracts to a separate bowl and whisk to combine. Add this ricotta mixture in two additions to the olive oil and sugar mixture, alternating with three additions of the flour: flour, ricotta, flour, ricotta, flour. Whisk the batter after each addition just long enough to incorporate the ingredients.
- Distribute the batter between the 9 prepared mini-loaf pan cavities. The batter should come about 3/4 of the way to the top.
- Bake the loaves for 20 minutes, until a toothpick inserted into the center of one of the loaves comes out with crumbs attached, but no evidence of batter.
- Remove from the oven and allow to cool for 2 or 3 minutes in the pan. Carefully flip the pan upside down, allowing the loaves to spill out onto a wire rack. Allow them to cool completely before covering them with glaze.
- Add all the glaze ingredients to a bowl and whisk to combine. Whisk gently at first until all the powdered sugar is moistened, then whisk more vigorously until completely smooth. Keep covered until ready to use.

PEACH RICOTTA MINI LOAVES
I am a great fan of my mini loaf pans, and so adapted this recipe I found while watching the Sugar tv show to make mini loaves. So cute! (And perfect for passing along to friends and neighbours, too.) You'll notice the lack of spice; the idea is for the peach flavour to come through, but feel free to add some cinnamon or nutmeg if you wish.

- Preheat oven to 350F; spray 4 mini loaf pans with a light spray of nonstick cooking spray (or use 1 9x5 loaf pan, if you wish, but you'll need to bake the one loaf longer, likely about 50 minutes) and set aside.
- Sift, through a sieve, the flour, baking powder, baking soda and salt into a mixing bowl; set aside.
- In another mixing bowl, blend together the brown sugar, ricotta, oil, eggs and vanilla; set aside.
- Open tin of peaches and drain very well; set aside 8 slices (which you will need to garnish top of loaves).
- Dice remaining peach slices to make one cup; if using fresh peaches, you will need one cup diced peaches (peel peaches first) plus the slices for garnish.
- If your diced peaches seem wet (they likely will), pat dry with paper towel.
- Add flour mixture to ricotta mixture all at once and stir just until flour is incorporated; do not overstir.
- Stir diced peaches into mixture.
- Divide mixture between the 4 mini loaf pans and smooth tops.
- Place two peach slices atop each, then sprinkle top of each with turbinado sugar, approximately 1/2 tsp per loaf pan.
- Bake in preheated oven for 35-40 minutes, until tops are golden brown and a tester inserted in centre of loaves comes out clean.
- Let cool in pans for 20 minutes, then remove loaves from pans and let cool completely on a rack.

RICOTTA PEACH TART
This pretty tart is easy to put together, thanks to frozen puff pastry and height-of-summer peaches. Thyme lends an earthy note, and a dollop of fresh ricotta on top is a nice change from ice cream or whipped cream (which would also be delicious). If you have the time, try tossing the peaches and honey with a pinch of ground cinnamon or cardamom.

- Put an oven rack in the lower third of the oven. Preheat the oven to 425 degrees F.
- Place the puff pastry between two sheets of parchment paper and roll it out a bit to make a 9-by-10-inch rectangle. Remove the top piece of paper. Use the tip of a sharp knife to gently score the dough, without cutting all the way through, 1 inch from the edges all the way around. Transfer to a sheet pan and store in the freezer while you prepare the peaches.
- Cut the peaches into 1-inch wedges. Toss them with 1 tablespoon honey. Remove the dough from the freezer, sprinkle on the thyme, and arrange the peaches in a single layer on top, leaving the border clear.
- Bake the tart until the crust is deep golden-brown and the peaches are tender, about 25 minutes. Remove from the oven to a cooling rack and cool slightly before serving. Cut into squares, top each with a dollop of ricotta, and drizzle some honey over the cheese.

- Preheat the oven to 350 degrees Fahrenheit. Grease and line a 9 inch round cake pan with parchment paper.
