PEACH MANGO BBQ SAUCE
Peaches are in season. I have an over abundance of peaches that I need to use up. This is a barbecue sauce I came up with. It is sweet tangy and a little spicy. We really enjoyed this on chicken. It is sweet, tangy, and little spicy. The sauce works really well on chicken, and I believe it would work really well on pork too.

Steps:
- 1. Take a half cup of chopped peaches and set them aside. Place remaing peaches in a food processor. add the mango juice and pulse until it is smooth .
- 2. set stove to medium-high heat. in a large sauce pan add the peach mango mixture. add in the half cup of reserve peaches.
- 3. Add in all of the ingredients except for the garlic onion and jalapeño. pepper. Stir while it is cooking. Reduce heat to medium.
- 4. Sauté the onion in a pan with about a tablespoon of olive oil. Cook until translucent. add the onion into the sauce. Into the pan add some more olive oil and cooked chopped garlic just until lightly golden. about 1 min. Add the garlic to the sauce.
- 5. Add the chopped pepper directly to the sauce and stir well to combine.
- 6. Bring sauce back up to a boil. Continue to cook reducing heat to medium low. stir occasionally until it mixture boils down and is thickened. This step should take about 30 to 40 minutes. Remove from heat and let cool. It will thicken even more after it cools. Keep refrigerated 1-2 weeks. Use it to baste grilled chicken or you may use it it to baste pork ribs.
- 7. Bake chicken , or Grill chicken. Baste with sauce while cooking. coating each side of chicken twice. I grilled mine. I like the nice char on my chicken.
- 8. Each cut of chicken differs in cooking time. Cook chicken Until meat is not pink is in the center before serving. Grill time approximately 30 minutes for thighs. Picture shown served with grilled peaches. Simply cut peaches in half remove pit. Cook on grill until slightly tender.
BBQ CHICKEN WITH PEACH BARBECUE SAUCE
Steps:
- For the peach barbecue sauce: Combine the peaches, peach nectar, ketchup, molasses, vinegar, mustard, Worcestershire sauce and adobo sauce in a deep saucepan. Bring to a boil over medium heat. Reduce the heat to low and simmer for 20 to 30 minutes, until the sauce has thickened and the flavors have melded. Puree with an immersion blender and let cool.
- For the BBQ chicken: Prepare a grill for indirect cooking over medium heat.
- Rub the chicken legs with the oil and sprinkle with salt and pepper. Grill the chicken over indirect heat, turning occasionally, for 25 to 30 minutes, until a meat thermometer inserted into the thickest part of the thigh registers 165 degrees F. Baste the chicken periodically using a basting brush soaked in peach brandy; do not pour brandy directly over the grill. Ten to 15 minutes before the chicken is done, brush it generously with peach barbecue sauce. Just before removing the chicken from grill, brush a final time with barbecue sauce.
- Let the chicken rest for 10 to 15 minutes before serving. Serve with extra sauce on the side.
PEACH GLAZED RIBS
We found these ribs absolutely delicious, slightly fruity and extra moist they are less acidic than the usual BBQ sauce ribs. I find boiling the ribs before grilling them, makes them a lot less greasy. It's important to boil them long enough in order to make them super tender.

Steps:
- Place ribs in a large pot, add water just enough to cover them up.
- Add chopped onions, celery ribs and remaining ingredients to boil the ribs.
- Bring to a boil, simmer for up to 2 hours, or until ribs are tender.
- Discard cooking liquid, let the ribs cool down.
- For the glaze: Blend peaches and juice with a hand blender until creamy.
- Add all other remaining ingredients of glaze and mix well.
- Start BBQ; bring heat up to 350°F.
- Pour a good quantity of glaze to cover ribs all over.
- Place ribs on the BBQ and close cover.
- Keep adding glaze, and turning ribs until heated through (approx. 15 - 20 minutes).

- Prepare the Peaches: Bring water to a boil in a large sauce pot. Cut an “x” in the bottom of the peaches and add to water. Cook for 60 seconds* and use a slotted spoon to immediately transfer peaches to a bowl of ice water to prevent from cooking further. Let cool. Peel and halve the peaches then remove pits. Roughly chop the peaches and place them in a large nonreactive bowl. Add lemon juice and stir to coat. Set aside.
- Make the BBQ Sauce: Heat oil in a large saucepan over medium-low heat. Add the onion and cook, stirring occasionally, until translucent, about 8-10 minutes. Add the garlic and ginger. Cook until fragrant, about 1 minute. Stir in the peaches, sugar, vinegar and stock. Bring to a boil over high heat and immediately reduce heat to medium-low. Simmer, stirring occasionally, until the peaches are tender, about 25-30 minutes. Add remaining BBQ sauce ingredients and continue to simmer, stirring occasionally, for an additional 10 minutes. Let cool slightly. Use an immersion blender, or transfer to a blender, and puree. Taste and adjust for seasoning and spice, adding more sriracha if desired. Let cool and store in the refrigerator, covered, until ready to use.
- Meanwhile, Prepare the Ribs: Rinse ribs in cool water to remove any film from packaging. Remove the membrane from the underside of the ribs – insert a butter knife under the membrane, and using your fingers, tear/peel membrane from ribs and discard. Trim any excess fat from both sides of ribs.
- Apply the Rub: In a small bowl mix together all ingredients for dry rub. Coat the ribs with a thin layer of water and generously apply rub to both sides of ribs. Triple wrap the ribs in aluminum foil tightly to prevent leakage, being careful not to puncture foil.
