This recipe from the Missouri Ozarks represents our area well because so many farms have peach trees. Cobbler is a delicious dessert for picnics and potluck dinners. It can be served cold or warm, and is especially good topped with a generous scoop of vanilla ice cream.

Number Of Ingredients 11

1-1/2 cups plus 2 teaspoons sugar, divided
2 tablespoons cornstarch
1 teaspoon ground cinnamon
1 cup water
8 cups sliced peeled fresh peaches
2 cups self-rising flour
1/2 cup shortening
1/2 cup buttermilk
3 tablespoons butter, melted
1/4 cup packed brown sugar
1 cup chopped pecans

Steps:

  • In a large saucepan, mix 1-1/2 cups sugar, cornstarch and cinnamon. Stir in water until smooth. Add peaches. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Pour into a lightly greased 13x9-in. baking dish; set aside. , In a bowl, combine flour and remaining sugar; cut in shortening until mixture resembles coarse crumbs. Add buttermilk and stir just until moistened. If needed, add additional buttermilk, 1 tablespoon at a time, until dough clings together. Turn onto a floured surface; knead gently 6-8 times. Roll into a 12x8-in. rectangle. , Combine butter, brown sugar and pecans; spread over the dough to within 1/2 in. of edges. Starting with long side, roll up jelly-roll style. Cut into twelve 1-in. pieces. Place on top of the peach mixture. Bake, uncovered, at 400° for 25-30 minutes or until golden brown.

1 cup graham cracker crumbs
1 cup finely chopped pecans
1/2 cup packed brown sugar
1/2 cup butter or margarine, melted
2 cans (29 oz each) sliced peaches, drained
2 teaspoons prepared cinnamon-sugar
1 cup Original Bisquick™ mix
1 cup granulated sugar
1 cup milk

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In medium bowl, mix cracker crumbs, pecans, brown sugar and butter. Press evenly in bottom of pan.
  • Arrange peaches on crust. Sprinkle with cinnamon-sugar. In medium bowl, mix Bisquick mix, granulated sugar and milk; pour over peaches.
  • Bake 45 to 50 minutes or until golden. Serve warm.

3/4 cup self rising flour
1/3 cup light brown sugar
1 1/2 cups coarsely chopped pecans
1/4 cup margarine, room temperature
1 3/4 cups self-rising flour
1 1/2 cups sugar
1 cup milk
1 extra large egg (BEAT WELL)
32 ounces frozen peaches, thawed in refridgerator (sliced)
1/4 cup sugar
cinnamon

Steps:

  • Make the topping in a small bowl.
  • cut margarine very small and get soft to room temperature using a serving size spoon like a pastry blender, mix in other ingredients until crumbly (Do it for a few minutes.
  • put aside and come back and do it again several Times.
  • In a bowl place the thawed peaches and sugar and sprinkle with cinnamon.
  • Set aside for a FEW MINUTES.
  • Strain off the excess juice.
  • make the batter ingredients well and pour onto bottom of well greased 9" x 13" metal pan.
  • Arrange the peaches on top of the batter evenly.
  • Sprinkle topping evenly OVER THE TOP.
  • Bake 350 degrees for 70 minutes.

This recipe is from Cajun Chef Ryan. Inspired by his wife who loves peaches-- but this recipe can be made with other fruit- fresh or frozen or canned. It is so unique and easy you will want to have it at your next party of holiday gathering. I just love the idea of the pecan praline rolls on top which are good baked in a buttered pan by themselves!!!!

FRUIT FILLING- IN THIS CASE PEACH:
8 cup(s) fresh sliced peaches with skin on -
1 cup(s) granulated sugar
1 cup(s) cool water
2 tablespoon(s) cornstarch
1 teaspoon(s) ground cinnamon
DOUGH FILLING:
3/4 cup(s) brown sugar,packed
1/4 cup(s) butter,melted
1 1/2 cup(s) chopped pecans
DOUGH:
3/4 cup(s) milk
2 teaspoon(s) lemon juice
2 1/4 cup(s) all purpose flour
2 teaspoon(s) each of brown sugar and baking powder
1/2 teaspoon(s) each of baking soda and salt
1/2 cup(s) butter

Steps:

  • Preheat oven to 400^. Peach Filling: Cut the peaches into 10 slices per peach. In a large saucepan, combine the remaining ingredients, stir to dissolve the sugar, then turn on the heat to medium and add the peaches. Stir well to evenly coat the peaches, continue to cook until thick and just starts to bubble. Turn off heat and cover to keep warm.
  • Dough Filling: Melt the butter in a medium bowl and add the brown sugar and stir until dissolved. Add the pecans and stir until evenly coated then set aside.
  • Dough:In a small bowl combine the milk and lemon juice and set aside. In food processor combine all the ingredients , except the butter, pulse to combine. Now add the butter to the processor and pulse until it resembles coarse crumbles.( this process can be done with a pastry blender if you do not have a food processor).
  • Place the mixture in a large bowl and make a well in the middle. Add the lemon milk mixture and stir just until the dough clings together and is in one solid mass.
  • Turn dough onto a floured surface and kneed gently for 1- to 12 times. Roll dough into an 8x12 inch rectangle. Then spread the pecan filling evenly over the top of the dough.
  • Roll up the dough from the long side.
  • Cut dough into 12 one inch pieces. Pour the warm peach filling into the ungreased pan. Place the filled dough rolls with the cut side down on top of the peaches. Bake uncovered for 25 minutes, until golden brown and dough is fully baked. Cool in pan for 30 minutes. Serve warm with heavy cream or 1/2 & 1/2 drizzled over top.

4 cups sliced peeled ripe peaches
1 cup sugar, divided
2 tablespoons quick-cooking tapioca
1 teaspoon lemon juice
1/2 cup all-purpose flour
1/2 cup chopped pecans or walnuts
1/4 cup cold butter
1 unbaked pastry shell (9 inches)
Whipped cream or ice cream, optional

Steps:

  • In a large bowl, combine the peaches, 1/4 cup sugar, tapioca and lemon juice; let stand for 15 minutes. , In a small bowl, combine the flour, nuts and remaining sugar; cut in butter until crumbly. Sprinkle a third of the crumbs into pie shell. Add peach mixture; sprinkle with remaining crumbs. , Bake at 450° for 10 minutes. Reduce heat to 350°; bake for 30 minutes or until the peaches are tender and topping is golden brown. Serve with whipped cream or ice cream if desired.

8 c sliced, peeled fresh or frozen peaches (thawed)
1 c sugar
1 c water
2 Tbsp cornstarch
1 tsp ground cinnamon
3/4 c packed brown sugar
1/4 c (1/2 stick) butter, melted
1 1/2 c chopped pecans
2 c self rising flour (or use 2 cups all-purpose flour, 2 tsp. baking powder, 1/2 tsp. baking soda, and 1/2 tsp. salt.)
2 tsp sugar
1/2 c shortening
3/4 c buttermilk
light cream, optional

Steps:

  • 1. In a Dutch oven, combine peaches, 1 cup sugar, water, cornstarch, and cinnamon. Cook and stir till thickened and bubbly. Transfer to a 3-qt. rectangular baking dish.
  • 2. Meanwhile, for filling, stir together brown sugar and melted butter. Add pecans; toss to coat. Set aside.
  • 3. For dough, in a large mixing bowl stir together self-rising flour and the 2 tsp. sugar. Cut in shortening till mixture resembles coarse crumbs. Make a well in the center; add buttermilk. Stir just till dough clings together.
  • 4. Turn dough out onto a lightly floured surface. Knead gently for 10 to 12 strokes. Roll to a 12x8-inch rectangle; spread with pecan filling. Roll up from one of the long sides. Cut into twelve 1-inch-thick slices. Place slices, cut side down, atop hot peaches.
  • 5. Bake, uncovered, in a preheated 400-degree oven for 25 to 30 minutes or till biscuits are golden. Serve warm with half-and-half or light cream, if desired, or vanilla ice cream.
