The aroma that went through my house while making this was un-describable. I've been "jammin" this week and I have a half bushel of peaches I don't want to lose. 2 Tbsp dried organic lavender flowers
1/2 c boiling water
4 c finely chopped peaches (i had a little more than 5 cups)
2 Tbsp lemon juice
6 c sugar
1/2 tsp butter
1 3-ounce pouch liquid pectin

Steps:

  • 1. Start by sterilizing jars and lids. This takes a little while, so I start this 1st. I place my clean jars in my canner and cover with hot water. Bring this to a boil and boil for at least 10 minutes. Remove jars when ready to use. Pour some of the boiling water from jars back into canner and keep the water boiling so you will be ready to process jars of jam. In another small pot; sterilize lids in gently boiling water.
  • 2. Next boil about 3/4 cup water. I put water in a pyrex measuring cup and put it in the microwave for about 2 minutes. Pour off all but 1/2 cup of the water and add the Lavender. Let this steep for 20 minutes.
  • 3. Prepare fruit; chop fine. I use my food processer and it works great for chopping peaches. Just don't liquify the fruit. A little juice won't hurt.
  • 4. After 20 minutes, strain the liquid from the Lavender flowers into the pot that you will use to make your jam in. Add the peaches, lemon juice sugar and butter. (Butter helps reduce foaming) Over a medium high heat bring fruit mixture to a rolling boil. A rolling boil is a boil that you can not stir down with a spoon. Continue to boil fruit mixture 2 minute once it reaches a rolling boil, stirring continuously.
  • 5. Turn heat off; stir in pectin. Remove jars from canner onto a dry towel. Ladle fruit mixture into hot jars; cap with sterilized lid and tighten bands. Return to boiling water in canner and gently boil for 10 minutes. Remove and cool. After completely cooled, check seals and bands.

Number Of Ingredients 4

3 1/2 pounds peaches (8 to 10), peeled, halved, pitted, and cut into chunks
1 1/4 pounds sugar (scant 3 cups)
1 tablespoon plus 1 teaspoon fresh lemon juice
Coarse salt

Steps:

  • Working in batches, pulse peaches in a food processor until chunky. Transfer to a small saucepan, and add sugar, lemon juice, and 1/2 teaspoon salt. Bring to a boil, stirring frequently. Boil, continuing to stir, until bubbles slow, foam subsides, fruit rises to the top, and jam sticks to a spoon when lifted, about 12 minutes. Let cool. Refrigerate until completely cooled.

CLASSIC PEACH JAM



Classic Peach Jam image

Yield: 7 cups

Number Of Ingredients 5

3 pounds peaches, peeled, pitted and finely chopped (about 4 to 4-1/2 cups, finely chopped)
5-1/2 cups sugar
2 tablespoons fresh lemon juice
1/2 teaspoon butter
1 box fruit pectin (I use the 1.75 box of original Sure-Jell powdered pectin; see notes)

Steps:

  • Place the peaches and lemon juice into a large pot. At this point, I like to take my potato masher and mash the peaches a bit. Measure the sugar into a separate bowl and set aside. Stir the package of pectin into the peaches and add the butter. Stirring frequently, bring the peach mixture to a full rolling boil (a boil that does not stop bubbling when stirred), then add the sugar. Stir to fully incorporate. Return the mixture to a full, rolling boil and boil for exactly 1 minute, stirring constantly. Remove the pot from the heat. Skim any foam from the surface. Ladle quickly into clean jars. (I like to use a wide funnel.) Wipe the rims of the jars with a clean cloth. Place the heated lids (lids that have been placed in simmering water for at least a minute) on the jars and tighten the bands. Place the jars in a canner and process (gently boil) for 10 minutes (water should cover the jars by an inch or two-add boiling water, if necessary), then remove the jars from the canner. Cool completely before storing. Make certain all lids have sealed properly before storing. If the lid springs back when pressed in the middle, it is not sealed and should be stored in the refrigerator.

You can also use other fruits like strawberries, raspberries, orange and lemon. For an added touch, place a small sprig on top of jam before sealing. From Topp and Howard's "Small Bath Preserving".

2 tablespoons lavender flowers, dried
1/2 cup boiling water
4 cups peaches, finely chopped (about 5-6 medium peaches)
2 tablespoons lemon juice
6 cups granulated sugar
1 (6 ounce) envelope liquid fruit pectin

Steps:

  • Place lavender flowers in a small bowl. Pour boiling water over flowers and steep for 20 minutes. Strain and discard flowers.
  • Combine lavender liquid, peaches, lemon juice and sugar in a very large stainless steel or enamel saucepan. Bring to a full boul over high heat and boil hard for 2 minutes, stirring constantly. Remove from heat and stir in pectin.
  • Ladle into sterilized jars and process in a hot water bath for 5 minutes.

Lavender transforms ordinary blueberry jam into preserves that are positively romantic. Delicate and floral, it would be perfect with scones, croissants, or crostini with fresh ricotta.

2 tablespoons dried lavender buds
8 cups fresh blueberries
4 1/2 cups granulated sugar
Zest and juice of one lemon
One (1.75-ounce) package low sugar powdered pectin, such as Sure Jell
1/2 teaspoon unsalted butter

Steps:

  • If you are going to preserve jam, prepare jars and lids: place 8 half-pint jars on rack in large pot. Add enough water to cover jars, and bring to boil over high heat. Boil for 10 minutes, then turn off heat and allow jars to rest in the hot water. Meanwhile, put bands and lids in small saucepan and cover with water. Heat over medium heat until the water is simmering, then remove pan from heat and allow bands and lids to rest in hot water until ready to use.
  • Put the lavender buds in a small bowl and pour 1/2 cup of boiling water over them. Let them steep for 10 minutes, then strain the "tea" into a bowl and discard the buds.
  • Working in batches if necessary, pulse blueberries in blender until coarsely crushed. You should have about 6 cups.
  • Measure 4 1/4 cups of sugar in one bowl. In another bowl, combine remaining 1/4 cup sugar and pectin.
  • Combine blueberries, lemon zest and juice, and lavender tea in large, heavy saucepan or stockpot. Stir in sugar-pectin mixture and the butter. Bring to a boil over high heat, stirring constantly.
  • Add remaining sugar all at once. Return to a full rolling boil. Boil for one minute. Remove jam from heat and skim off any foam from surface.
  • Ladle hot jam into hot sterilized jars, leaving 1/4-inch headspace. Wipe rims of the jars, cover with lids, and screw bands on until just barely tight. Place jars on rack in pot and cover completely with water. Cover pot and bring to a boil over high heat. Boil for 10 minutes. Turn off heat, uncover pot, and allow jars to rest in water for five minutes. Remove jars from pot and allow them to rest undisturbed on countertop for six hours or overnight.

  • To peel the peaches bring a medium sized pot to a rolling boil and prepare and ice bath in a large mixing bowl (a bowl full of cold water and ice). Use a small sharp knife to create an X shape on the bottom of each peach, just scoring the skin. Once the water is boiling gently place the peaches in the water. Allow them to sit in the water for 2 to 3 minutes, or until you see the edges of the cut marks start to peel back. Use a slotted spoon to transfer the peaches to the ice bath to shock them from cooking further. Let them sit for a minute or two to cool down. Remove the peaches from the ice bath and gently peel the skin away from from the flesh, discard the skin.
  • To a small sauce pot add the chopped peaches, water, lavender, and honey. Stir to combine and bring the mixture to a boil, reduce to a simmer. Allow the jam to simmer for 15 to 20 minutes. Break up the peaches by using a potato masher so it’s a finer texture, although I like mine a little chunky. Once the jam has thickened stir in the vanilla and chia seeds. Turn off the heat and allow it to cool for 15 minutes. Serve immediately while it’s still warm or transfer to a jar and cool completely and chill in the fridge. the jam will thicken up more a it chills in the fridge.

  • Peel and dice peaches. Here's a quick and easy method to peel the peaches. Bring a pot of water to boil. Place the peaches into the water for 1 minute exactly. Promptly remove, and immerse peaches in a cold ice water bath. You'll be able to remove the peel easily with your hands.
  • Place all ingredients into a medium saucepan and bring to a boil on medium/high heat. Once it begins to boil, lower to medium heat and simmer for 20-30 minutes, stirring frequently and removing any foam on the top with a spoon.
  • Just before the 20-minute mark, use a potato masher or fork to break down some of the diced peaches in the saucepan (about one-third of them).
  • After 20 minutes, the mixture should start to thicken. Test the consistency by placing a spoonful of the jam on a plate or small bowl and placing it into the freezer for a couple of minutes. If after that time the consistency is like jam, then remove from heat. If not continue simmering, repeating the test every five minutes until it is ready.
