CANNING BOURBON PEACHES
Bourbon peaches is a delicious summertime treat. However, enjoy this drunken peaches recipe by canning it. Canning bourbon peaches allows this recipe to be enjoyed well after the summer months.

Steps:
- Blanch peaches and remove the skins. For the instructions under tips for removing the skins.
- In a separate pot add water and sugar to create the simple syrup. Bring the syrup to a boil, stirring often to help the sugar dissolve.
- Cut peach slices to 1/2-inch thick.
- Fill jars with the sliced peaches leaving a 1 inch headspace.
- Add enough simple syrup to cover the peaches.
- Next add 1 to 2 tablespoon of bourbon.
- Remove air bubbles using the air bubble remover
- Add additional syrup or bourbon if needed.
- Using a clean dishtowel, wipe the rims of the jars. Add warmed lids and rings to finger tight.
- Process jars in a steam canner or boiling water canner based on the time provided bleow.
- Remove jars from canner and allow the jars to rest for 12 hours. Place any jars which have not sealed into the refrigerator and use first.

- Place the peaches and bourbon in a large covered glass container or cookie jar. Let rest for 3 days, then strain into the bottle. Store at room temperature. Will keep indefinitely.

- To make each infusion, add the ingredients to the bottom of a jar and pour the bourbon over top. Seal the jar (just with a regular lid!) and set in a cool place (preferably somewhere dark) for 2 weeks. I often stick mine in the fridge, just in case – but as long as it’s sealed tightly and not opened often, it will be fine. After 2 weeks, taste the bourbon and adjust the flavor accordingly. You can remove the cinnamon sticks or add more vanilla. If you’d like more flavor, infuse for another week and taste! If it tastes good to you after 2 weeks, strain the bourbon a few times. Place in a tightly sealed jar.
- For the vanilla chai flavor, if you’re infusing longer than a week or so, I’d use a loose chai tea and simply add it to the bourbon or open up the bag and add it to the bourbon.
- When ready to package, strain the bourbon into a pretty bottle or glass and label it! The make things like delicious old fashioneds.
