Steps:
- For the peach jam, bring a large pot of water to a boil. Cut a small X in the bottom of each peach. Fill a large bowl with ice and water.
- Blanch the peaches in the boiling water just until the skin begins to peel back at the X, 5 to 15 seconds. Transfer to the ice bath to cool; drain.
- Peel the skin off of the peaches, at this point it should slide off for the most part. Slice the peaches in half from top to bottom and twist to separate the fruit from the pit.
- Puree the peaches.
- Combine 1 cup peach puree, sugar, and lemon juice in a medium saucepan, bring to a boil over medium-high heat, stirring constantly to dissolve the sugar, and boil for 8 minutes, until thickened.
- Remove from the heat and let cool to room temperature, then refrigerate for up to 2 weeks.
- For the ice cream, first, combine 1/4 cup heavy cream with the cornstarch making a slurry.
- Whisk the cream cheese and salt in a medium bowl until smooth.
- Combine the remaining cream, sugar, and corn syrup in a 4-quart saucepan, bring to a boil over medium-high heat and boil for 4 minutes. Stirring regularly until the sugar is completely dissolved.
- Remove from the heat and whisk in the cornstarch slurry. Bring the mixture back to a boil over medium-high heat and cook, stirring until slightly thickened, about 20 seconds. Remove from the heat.
- Gradually whisk the hot milk mixture into the cream cheese and mix until smooth. Stir in the buttermilk.
- Cover mixture and refrigerate until completely cool. 3-4 hours, up to overnight.
- Assemble your ice cream machine and pour 1/2 the ice cream base into the canister. Spin until thick and creamy.
- Pack the ice cream into a storage container, mixing in the jam as you go. Swirl around, but do not mix in completely, you want to leave ribbons of jam visible. Press a sheet of parchment directly against the surface and seal in an airtight container. Freeze until firm, at least 4 hours.

DAD'S PEACH ICE CREAM
"MY DAD was the ice cream maker at our house. We had an old-fashioned freezer that had to be cranked by hand, and he took great delight in turning the handle until the ice cream was just right! With the addition of fresh fruit that he picked in a nearby orchard, this was a very special treat."

PEACH ICE CREAM
Adding peaches to a mouthwatering vanilla ice cream recipe I got from my mother-in-law resulted in this fabulous flavor. My boys say it's the greatest and think it tastes best served outdoors under a shade tree!-Lisa Tenbarge, Haubstadt, Indiana

- Set a sieve over a large, clean bowl and pass the custard through the sieve. Discard any eggy solids. Add the peach puree and vanilla and stir to combine. Chill the custard completely over an ice bath made by filling a large bowl with ice cubes and water, or refrigerate it until chilled. PEACH ICE CREAM
This is my favorite ice cream...even better if you can pick your own peaches Both the cooked peaches and the custard mixture must be cooled to 40 degrees before you churn them, so plan to prepare the custard the night before and refrigerator overnight. Of course fresh peaches are preferred but you can subsitute 2 cups frozen sliced peaches (defrosted) and replace the vodka with peach-flavored liqueur. The ice cream is at its peak when eaten within four hours of churning, although covered, it will keep in the freezer for up to two days. Cooking time indicated includes overnight cooling of the custard. Update: Was in a hurry so skipped the straining process and it was great ... we like the pieces of peach in the ice cream! Steps:
- Stir peaches, lemon juice, a pinch salt, and 1/2 cup sugar in medium-size nonreactive saucepan to combine; let stand until a pool of syrupy liquid accumulates and peaches soften slightly, 1 to 1 1/2 hours.
- Position sieve over a medium size bowl which is set in an ice-water bath; set aside.
- Heat milk, cream, and 1/2 cup sugar in medium-size heavy saucepan over medium heat, stirring occasionally, until steam appears, 5 to 6 minutes.
- Turn off heat.
- Meanwhile, whisk yolks and remaining 6 tablespoons sugar in medium bowl until pale yellow.
- Stir half the warmed milk mixture into beaten yolk mixture until just blended. Return milk-yolk mixture to saucepan of remaining warmed milk mixture.
- Heat milk-yolk mixture over medium-low heat, stirring constantly with wooden spoon until steam appears, foam subsides, and mixture just begins to thicken or instant-read thermometer registers 180 degrees (mixture must not boil or eggs will curdle).
- Remove from heat and immediately strain custard into prepared bowl.
- Cool custard mixture to room temperature, stir in vanilla, then cover and refrigerate until instant-read thermometer registers 40 degrees, at least 2 and up to 24 hours.
- Meanwhile, heat softened peaches and their liquid, stirring occasionally, over medium-high heat until peaches are tender and flesh has broken down, 3 to 4 minutes.
- Transfer to bowl, stir in vodka, and refrigerate until cold, at least 4 and up to 24 hours.
- Strain chilled peaches, reserving liquid. Stir reserved peach liquid into chilled custard mixture; pour into ice cream machine canister and churn, following manufacturer's instructions, until mixture is frozen and resembles soft-serve ice cream, 25 to 30 minutes.
- Add peaches; continue to churn until combined, about 30 seconds longer. Transfer ice cream to airtight container.
- Freeze until firm, about 2 hours.

NO-CHURN PEACH ICE CREAM
This summery and flavorful peach ice cream comes together easily without an ice cream maker. A base of fresh peach puree flavored with sweetened condensed milk, vanilla and ginger is lightened with whipped cream before freezing. For the best peach flavor, seek out ripe seasonal peaches. If they're unavailable, thawed frozen peaches are a great substitute.

Steps:
- In a food processor, puree the peaches until nearly smooth. Scrape the puree into a large bowl and whisk in the sweetened condensed milk, vanilla bean paste, salt, ginger and peach extract if using.
- In a stand mixer fitted with the whisk or in a large bowl using a handheld electric mixer, beat the heavy cream until stiff peaks form.
- Stir 1/3 of the whipped cream into the peach mixture to lighten it, then gently fold in the remaining whipped cream in 2 or 3 batches until no streaks remain. Scrape the mixture into a chilled 6-cup freezer-proof pan (a loaf pan works well). Press a piece of plastic wrap directly on the surface of the ice cream. Freeze for at least 6 hours or overnight before serving.
