I've just recently discovered that omelettes don't need to be savoury, they can also be sweet. This is a simple sweet omelette recipe from Alberta Egg Producers.

125 ml sliced peaches (fresh or canned)
5 ml liquid honey
1 drop vanilla extract
2 eggs
5 ml butter
15 ml sliced almonds, toasted
icing sugar

Steps:

  • Combine peaches, honey and vanilla in a small bowl and set aside.
  • Whisk eggs in a small bowl.
  • Melt butter in a 15 cm (6-inch) non-stick skillet over medium-high heat and swirl to coat pan. Pour in eggs. As mixture begins to set, lift edges with spatula to allow the uncooked egg to flow underneath.
  • Cook until bottom is set and top is almost set.
  • Spread peaches and almonds over half of the omelette. Fold the other half over the peaches, using the spatula, and tilt the skillet so that the omelette slides out of the pan.
  • Sprinkle with icing sugar. Serve immediately.

1 can peaches in light syrup
1 teaspoon cornstarch
3 -5 drops yellow food coloring
1/2 cup sour cream, at room temp

Steps:

  • heat peaches with juice along with food color and corn starch in a sauce pan meanwhile make flat omelet.
  • pour peaches over omelet.
  • drizzle with sour cream.
  • serve with bacon and slightly sweet corn bread.

Most of us make omelettes the same way: wait until the eggs are nearly cooked, then add cheese, vegetables, meat, etc., counting on the heat of the eggs to heat them, and in doing so unnecessarily overcooking the eggs. If, instead, you cover your egg pan with a pot lid, you can add the omelette filling from the outset and it cooks WITH the eggs, so your omelette's already done at the point where you'd normally add the filling. And get this - you never have to touch a utensil! Try it and I bet you'll never cook an omelette without a lid again.

1/2 teaspoon butter
2 eggs
1 tablespoon water or 1 tablespoon milk
cheese, grated (or sliced)
ham, chopped
chives, chopped
salt
pepper

Steps:

  • Heat a non-stick skillet until butter sizzles.
  • Scramble eggs; add to skillet (no need to fuss over lifting the solidified edges to let the liquid eggs underneath).
  • Sprinkle eggs evenly with cheese, ham, chives, salt and pepper (or herbs de Provence, baby spinach, smoked salmon, pre-sauteed mushrooms, onions, peppers, anything you like).
  • Cover and cook over low flame until eggs solidify, about 5 minutes.
  • Slide from skillet to plate, folding omelette in half with edge of skillet.

  • Slide onto a plate and serve with jam.
