Basic Gelato Recipe...from my Italian mother-in-law. This recipe may be used as a base for your favorite flavors. Try adding vanilla, shaved chocolate or your favorite fruits. Experiment with desired flavors!

2 cups milk
1 cup heavy cream
4 egg yolks
½ cup sugar

Steps:

  • In a medium saucepan, mix milk and cream. Warm until foam forms around the edges. Remove from heat.
  • In a large bowl, beat the egg yolks and sugar until frothy. Gradually pour the warm milk into the egg yolks, whisking constantly. Return mixture to saucepan; cook over medium heat, stirring with a wooden spoon until the mixture gels slightly and coats the back of the spoon. If small egg lumps begin to show, remove from heat immediately.
  • Pour the mixture through a sieve or fine strainer into a bowl. Cover, and chill for several hours or overnight.
  • Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. Transfer to a sealed container, and freeze until firm. If the gelato is too firm, place it in the refrigerator until it reaches the desired consistency.

SICILIAN GELATO-STYLE ICE CREAM

Sicilian gelato, or ice cream made with starch (instead of eggs), makes for a perfect and versatile base for most flavours! Making it is easy and fairly "fail-safe", and the results are generally very smooth and pleasant.

700 ml (about 3 cups whole milk) OR 350 ml (1.5 cups) cream and 350 ml (1.5 cups) milk)
125 ml (a full 1/2 cup) sugar
3-4 tablespoons of corn starch
pinch of salt
1 vanilla bean (split lengthwise)

Steps:

  • Whisk together 200 ml (about 0.8 cup) of the cold milk with the corn starch, making sure that there are no remaining lumps. Set aside for now.
  • Blend the remaining 500 ml (about 2.1 cup) of the milk/cream, the sugar, the salt and vanilla bean (with seeds scraped out and added) in a sauce pan. Warm until steaming hot (not boiling!) on medium heat.
  • Blend the corn starch mixture with the rest of the ingredients in the sauce pan. While barely reaching a boil, cook and stir for about four- five minutes, or until the mixture has begun to thicken and any possible "floury" taste (from the starch) has disappeared [and don't overcook: that would reduce the thickening powers of the starch].
  • Take the ice cream base from the heat and let the mixture cool down.
  • Refrigerate for a couple of hours, discard the vanilla bean, and freeze according to the instructions of your ice cream machine.
  • In case you have no ice cream machine, still-freeze the base in your freezer (see the link below the box!) - this base is perfect for still-freezing, by the way!
  • After the churning, place the ice cream in a freezer-safe container, cover with plastic film and a lid, and store in the freezer.

2 cups ripe peaches, peeled, pitted, and chopped (about 4 peaches)
Juice of 1 lemon
3/4 cup sugar, divided
4 egg yolks

Steps:

  • In a medium saucepan, bring the milk to a simmer. Remove from heat, cover, and set aside. In a blender or food processor, puree the peaches, lemon juice, and 1/4 cup of sugar until smooth. Set aside. In a blender or food processor, blend 1/2 cup sugar and yolks until smooth and thick. With the machine running, gradually add the hot milk. Return the mixture to the saucepan and cook over medium heat. Stir constantly for 6 to 8 minutes until the mixture begins to thicken. Remove from heat and set in a bowl of ice water. Stir for 2 minutes to cool the mixture. Stir in the pureed peaches. Cover and refrigerate for at least 2 hours or overnight. Transfer to an ice cream maker and freeze according to manufacturer's directions.

1/2 tbsp Lemon Juice
1/2 tbsp Honey
1/2 tbsp White Wine (optional)
200 g Peach (net weight)
1-1 1/2 tbsp Lemon Juice
3 tbsp Granulated Sugar
3 g Gelatin Powder
50 ml Hot Water (about 80°C/176°F)
Mint Leaves

Steps:

  • Cut the peach into bite-size pieces and add the lemon juice, honey and the white wine. Gently toss to coat and marinate the peach in the syrup.
  • Look at this beautiful peach! This looks too good to eat but we'll make it into a puree. Peel the peach with a knife. We recommend using soft ripe peaches to give the jello a smooth texture.
  • Slice off the flesh into a bowl. It is very juicy and the soft cutting sound is so pleasant.
  • Add the sugar and the lemon juice.
  • With a hand blender, puree the peach. The sweetness of peaches varies so you should adjust the amount of sugar accordingly.
  • Pour the marinade into the puree.
  • Place the marinated peach slices into cups.
  • Heat the water to about 80°C (176°F) and measure it out in a cup. Add the gelatin powder and dissolve it completely.
  • Add the gelatin to the puree and mix to combine.
  • Float the bowl on ice water and chill the puree to help it firm up quickly and evenly.
  • Pour the puree into the cups and place them in the fridge for about 2 to 3 hours.
  • Now, the peach jello has firmed up. Garnish with the mint leaves.

This rich and creamy fresh peach gelato deliciously highlights one of summer's quintessential fruits: fresh peach puree is both mixed into the gelato and rippled through it for a double dose of stone fruit sweetness.

¼ cup granulated sugar
1 lb peeled, fresh peach slices
1 batch Sicilian-Style Gelato Base (preferred) or Classic Gelato Base
¼ cup water
1 tsp pure vanilla extract
1 peach, pitted, cut into small dice (optional) ()

Steps:

  • For the gelato base: Make the gelato base of your choice, then strain it into an airtight container. Cool to room temperature, then refrigerate overnight. The gelato base must be very cold before churning: this will produce the smoothest, silkiest texture.
  • For the fresh peach puree: In a saucepan, combine the peach slices, sugar, water, and vanilla extract and place over medium heat. Bring to a simmer, lower the heat, cover, and cook for 5 to 8 minutes, until the peach slices are very soft and breaking down. Use a stand blender, a stick blender, or a food processor to puree to a very smooth consistency. Strain into an airtight container and refrigerate until cold, at least 3 hours or overnight.
  • Measure out 2 cups (500 ml) of the fresh peach puree. (Save the remaining puree, if any, to spoon over the churned gelato. You can also serve it over crepes or a cake, or use it in a smoothie.)
  • Whisk 1 cup (250 ml) of the fresh peach puree into the cool, strained gelato base. Pour the mixture into the container of an ice cream maker and churn according to the manufacturer's instructions. Stop the machine when the gelato is icy but still soft.
  • To assemble the gelato: Transfer half of the churned fresh peach gelato to a large (4 cup/1L) airtight container. Drizzle half of the remaining fresh peach puree, then sprinkle with half of the diced peach. Top with the remaining gelato, then drizzle the remaining fresh peach puree over. If desired, use a skewer or a knife to create swirl patterns in the fresh peach puree, then sprinkle the top of the gelato with the remaining diced peach.
  • STORAGE: Close the container or cover with plastic wrap and freeze until firm, about two hours.Fresh peach gelato is at its creamiest and best if enjoyed within 2 weeks. Past that, some ice crystals will inevitably start forming (especially if the gelato is kept in the freezer section of a regular fridge, as opposed to a chest freezer) and the texture won't be quite as smooth. The gelato will still be perfectly edible for up to 2 months, but my advice is: enjoy it as quickly as possible after churning.
  • SERVING: Always take fresh peach gelato out to room temperature 20 minutes before serving to make it easier to scoop. This will also allow you to enjoy the treat at its ideal temperature and texture.
  • MAKE IT DAIRY FREE: When making the gelato base, substitute lactose-free milk or oat milk for the regular milk, and lactose-free heavy cream or soy cream for the regular heavy cream.

From TOH a gal from Baldwin, Wisconsin originally submitted. I have increased the original peach/water amount as hubby and I prefer a stronger peach taste. The color of this is more on the white side. I made smaller batch than this for us. Also think you could use canned peaches but then you might need to reduce sugar. Once had peach gelato with champagne instead of schnapps and it was good, might be good here. Cooking time is ice cream maker time, but does not include the refrigerator freezer time. I made custard the day before (through step 13) and did the ice cream maker part the afternoon I served.

4 cups peaches, peeled sliced
2 1/2 tablespoons water
4 egg yolks
2 cups whole milk
3/4 cup sugar
1 cup heavy whipping cream
1 tablespoon peach schnapps (optional)

Steps:

  • Place peaches and water in a large skillet; cook, uncovered, over medium heat until tender, about 10 to 12 minutes, stir occasionally especially near end.
  • Meanwhile, put egg yolks into medium sized bowl, beat, set aside for step 6.
  • Place peaches in a food processor or blender, cover and process until blended; set aside for step 11.
  • In a small saucepan, heat milk to 175 degrees Farenheit, takes approximately 7 to 10 minutes; stir in sugar until dissolved, remove from burner.
  • Put burner at low and set up ice bowl for step 10.
  • Whisk a small amount of hot milk mixture (- bit more than 1 cup) into egg yolks, stir.
  • Return all custard mixture to pan, whisking constantly.
  • Cook and stir over low heat until mixture is slightly thickened, on low mine took 18 minutes and next time am going to increase burner heat to next notch up.
  • Remove from heat.
  • Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes.
  • Stir in heavy cream, PEACHES, and liqueur if desired.
  • Press waxed paper onto surface of custard or cover with lid.
  • Refrigerate for several hours or overnight.
  • Fill cylinder of ice cream freezer two thirds full; freeze according to manufacturer's directions.
  • Refrigerate remaining 1/3rd mixture until ready to freeze in ice cream maker.
  • Transfer gelato to a freezer, freeze 2 to 4 hours before serving.

Press plastic wrap onto surface of custard. Refrigerate several hours or overnight., Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions. (Refrigerate any remaining mixture until ready to freeze.) Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Repeat with any remaining gelato mixture.

1/2 cup yogurt

Steps:

  • Cut peaches into very small pieces. (The smaller you cut them, the finer the texture of the gelato will be.).
  • Arrange the peach pieces in a single layer on a baking sheet, and freeze solid. (About 2 hours.).
  • Put the frozen peach pieces in a food processor, along with the Splenda, and grind briefly. Add the yogurt and pulse until the mixture is smooth.
