- Make the peach filling: In a large bowl, combine the peaches, lemon juice, granulated sugar, cornstarch, vanilla, and salt. Mix well to coat the peaches evenly.
- Make the streusel topping: In a medium bowl, mix together the brown sugar, flour, oats, pecans, cinnamon, nutmeg and salt, using your fingers to rub out any lumps of brown sugar. Add the soft butter and mix with a spoon until the mixture is crumbly (go ahead and use your hands if it's easier).
- Transfer the peaches to the prepared baking dish and press into an even layer. Sprinkle the streusel evenly over top. Bake the crisp for 40 to 45 minutes, until the topping is golden brown and the filling is bubbly. Remove from the oven, and cool for at least 20 minutes before serving.

- There are 2 options here: You can make one big crisp, or you can make individual ones, and putting them together is the same for both: Fruit mix on the bottom, crumble on the top.
- I used 6 – 250mL glass mason jars, and distributed the fruit, then the crumble, evenly between the jars.

- In a large bowl, mix the peach filling ingredients together and then add peaches making sure the peaches are well coated. Set aside.
- Crush the graham crackers, (I just put mine in a ziploc bag and crushed them in there) Add melted butter and sugar to the crushed graham crackers and mix thoroughly. Put 3-4 tablespoons of the mixture into each jar and press down into the jar.
- Add your peach filling into the jars. Don’t fill all the way to the top because you need to leave a little room for the crumbly topping.
