In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

1 large can(s) sliced peaches in heavy syrup (i think its a 28 ounce can)
1 c self-rising flour
1 c sugar
1 c milk
1 stick butter, melt half of the stick
1 tsp vanilla extract
1 dash(es) salt

Steps:

  • 1. Preheat over to 350* and lightly spray a 7.5 x 11 inch casserole pan or a 9x9 in. square pan.
  • 2. In a medium pot add peaches and juice, 1/2 stick butter. Heat till it comes to a boil then remove from heat.
  • 3. In a medium bowl add flour, sugar, salt and mix. Now add milk and vanilla and stir to combine. Pour into baking dish then pour hot peach mixture over that. Pour the 1/2 stick melted butter on top. Bake for 10 minutes then I like to sprinkle a couple pinches of sugar on top and return to oven. Bake another 10 minutes then start checking it. It takes 20-30 minutes total, depending on your oven.

5 peaches (, peeled, cored and sliced (about 4 cups))
3/4 cup granulated sugar
1/4 teaspoon salt
6 Tablespoons butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
ground cinnamon

Steps:

  • Add the sliced peaches, sugar and salt to a saucepan and stir to combine. *(If using canned peaches, skip steps 1 & 2 and follow the directions starting at step 3)
  • Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.
  • Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
  • In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
  • Spoon the peaches and juice (or canned peaches, if using) over the batter. Sprinkle cinnamon generously over the top.
  • Bake at 350 degrees for about 38-40 minutes. Serve warm, with a scoop of ice cream, if desired.

1 stick real butter
1 c flour
1 c sugar
1 c whole milk
2 can(s) sliced peaches, in heavy syrup

Steps:

  • 1. Preheat oven to 350.
  • 2. Place butter into a pyrex baking dish (or similar). Place into oven while it preheats, and take out once melted.
  • 3. In the meantime, Whisk together the flour, sugar and milk til mostly smooth. Pour over the butter in the baking dish.
  • 4. Spoon the contents of both cans of peaches over the batter, syrup and fruit.
  • 5. Bake at 350, until golden brown and crust is done (about 50 - 60 mins., depending on your oven).
  • 6. Serve hot with a scoop of ice cream for a wonderful treat!
