PEACH COBBLER BUBBLE UP
Peach Cobbler Bubble Up - a fun twist to peach cobbler! Only 5 ingredients and ready in about 30 minutes. Refrigerated biscuits, peach pie filling, canned peach slices, cinnamon, and brown sugar. - Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
- In a large bowl combine peach pie filling, sliced peaches, and cinnamon. Using a spatula, chop up peach slices into bite-sized pieces. Cut each biscuit into 4 pieces. Stir into peach mixture.
- Pour into the prepared pan, making sure to spread biscuit pieces evenly in the pan. Sprinkle top with brown sugar.
- Bake 30 to 35 minutes, until the biscuits start to turn golden brown.
MY BOTTOM-UP PEACH COBBLER
This was the result of letting my 3 baby cousins 'help' me in the kitchen. The oldest was 4. Surprisingly this cobbler turned out pretty well. If a bit messy.

- Preheat an oven to 350 degrees F (175 degrees C).
- Place the butter into a 8x8-inch baking dish, and place into the oven until melted. Stir the sugar, nutmeg, and self-rising flour together in a mixing bowl. Stir in the milk until no lumps remain. Pour the batter over the melted butter in the baking dish. Do not stir. Spoon the sliced peaches over top; gently pour in the juice.
- Return to the oven, and bake until the batter has firmed and the cobbler has risen a bit, 35 to 45 minutes.

Steps:
- Cream butter and 1/2 cup of the white sugar.
- Combine flour, baking powder and salt and add to the creamed mixture then add the milk and mix well.
- Pour batter into buttered 8x8 baking dish.
- Top with peach slices, then pour all of the reserved peach juice over the peaches.
- Top with the remaining sugars and cinnamon.
- Bake for 45 minutes at 375 degrees.

- Heat oven to 180C/160C fan/gas 4. Grease a baking dish with a little butter, then lay the drained peach slices in the base. Sprinkle with 2 tbsp of the sugar and the ground ginger and set aside.
- Tip the flour, remaining sugar, baking powder, cinnamon and a pinch of salt into a food processor. Whizz until combined, then add the cubes of butter, pulse until the mixture resembles breadcrumbs, then add the egg and continue to blitz until it comes together to make a thick dough.
- Spoon the dough in dollops on top of the peaches, creating a good covering, but leave some gaps for the dough to spread into. Sprinkle with a little caster sugar then bake for 40 mins, until golden. Serve with scoops of vanilla ice cream.
