- Preheat the oven to 350 degrees F (175 degrees C).
- Melt butter in 9 x 13 inch pan.
- Mix together the flour, sugar, and milk. Pour mixture into the pan. Spread peaches, including syrup, evenly around the pan.
- Bake in preheated oven for 30 to 40 minutes, until the crust turns golden brown. Let cool for about 10 minutes before serving.

- Preheat oven to 400 degrees.
- Mix together peaches, sugar, cinnamon, nutmeg, lemon juice and cornstarch and put into 8x8 baking dish and bake for 15 minutes.
- In a food processor add the flour, brown sugar, baking powder, salt and butter and pulse until it makes coarse crumbs, about 15 times.
- Add in water in 1 tablespoon amounts at a time and pulse each time.
- When peaches come out add the topping then sprinkle cinnamon sugar over it.
- Bake for 30 minutes, uncovered.

- Preheat oven to 375 degrees F.
- Butter a 13 by 9 by 2 3/4-inch baking dish then pour peaches into baking dish and toss with lemon juice.
- In a small mixing bowl whisk together 1/2 cup sugar, cornstarch, 1/2 tsp cinnamon, and the nutmeg.
- Sprinkle sugar mixture evenly over peaches then toss to evenly coat, set aside.
- If using cake flour sift into a large mixing bowl, if using all-purpose flour just add to bowl (no sifting is necessary). Add 3/4 cup sugar, baking powder, baking soda, and salt and whisk to combined.
- Cut butter into flour with a fork or pastry cutter until it resembles coarse meal then make a well in center of mixture.
- Mix vanilla with buttermilk then pour buttermilk mixture into well in flour and fold and stir with a spoon just until combined (don't over-mix, it should be lumpy).
- Dollop and just lightly spread spoonfuls of the mixture evenly over top of peaches (about 12 dollops across the top).
- Whisk together remaining 2 tsp sugar with 1/4 tsp cinnamon and sprinkle evenly over top.
- Bake in preheated oven until topping is golden brown and set and and filling is bubbling, about 40 - 45 minutes.
- Remove from oven and let cool several minutes before scooping into bowls. Serve with vanilla ice cream.

- (Skip this step if using canned peaches). In a small saucepan add the sliced peaches lemon juice, and ¾ cups of sugar. Place over medium heat for a few minutes, stirring occasionally, just until the sugar has dissolved (we want to bring out the juices of the peaches). Remove from heat and set aside.
- Preheat oven to 350°F. Place the butter in a 13x9 inch pan and place pan in the preheated oven. Once the butter has melted, remove the pan from the oven.
- In a medium sized bowl whisk the flour, 1 cup of granulated sugar, baking powder, and salt. Stir in the milk. Stir until just combined, don't overmix. Pour this mixture into the 13x9 inch pan, overtop of the butter. Gently smooth into an even layer.
- Spoon the peaches mixture over the batter. (Or if using canned peaches**, spoon that over the batter). Sprinkle the top with ground cinnamon, use as much or as little as you'd like. I used about 1/2 to 1 teaspoons worth.
- Bake at 350°F for 38-44 minutes or until the top is golden brown and baked through.
- Serve warm with a scoop of vanilla ice cream*, if desired.

PEACHY PEACH COBBLER
Cobblers are an easy dessert to fix when company is coming over or when you need to bring something to a potluck. This recipe has a classic peach cobbler taste. Adding the peach drink amps up the peach flavor. Once baked, it has a crispy top but the inside is creamy and gooey and is bursting with peaches.

- 1. Open the cans of peaches and drain (save the syrup). Put peaches in a medium bowl. Place the syrup in a medium saucepan.
- 2. Preheat oven to 350 degrees. Take the stick of unsalted butter and put in a 10x14 baking dish, and place in oven.
- 3. Remove from the oven after the butter melts and set aside.
- 4. Meanwhile, in a large mixing bowl, combine the Bisquick, milk, peach drink, sugar, sugar/cinnamon blend (reserving 2 Tbsp for topping), and 1 tsp vanilla extract. With a wire whisk, mix all until smooth. Set aside.
- 5. Combine the corn starch and peach drink together in a cup. Mix until smooth. Set aside.
- 6. Place the syrup over medium-high heat and bring to a light boil.
- 7. Add corn starch mixture to syrup. Cook until the syrup gets thick.
- 8. Remove from heat and add the remaining 1 tsp of vanilla extract. Set aside.
- 9. Place a cookie sheet under the baking pan, large enough to catch any dripping for the cobbler. With the hot butter in the baking pan, pour the batter over the butter. DO NOT STIR!!! Place reserved peaches over the batter, completely covering the batter evenly with peaches. DO NOT STIR!!! Add the syrup mixture over the peaches. DO NOT STIR!!!
- 10. Place the cobble on the center rack in the oven. Cook for 60 minutes or until the crust is dark golden brown.
- 11. Remove from oven and sprinkle your remaining 2 Tbsp of sugar/cinnamon on top of cobbler. Let cool for 30 minutes before serving. Great with vanilla ice cream.
