CHILI SAUCE
Classic, old fashioned sweet and spicy chili sauce. PERFECT with potato pancakes, chicken and pork.

Steps:
- Peel tomatoes by placing them in boiling water for 30 seconds and then plunging them into cold water. The skin will slide right off. If it doesn't, plunge them in the hot water again.
- Wrap all the whole spices in a little cheesecloth bag.
- Rough chop the remaining ingredients. Don't worry about it being pretty, just chop them up into pieces between 1/4" - 1/2".
- Put all the ingredients into a large stock pot and bring to a boil. Once boiling, reduce heat to a simmer and simmer until thick and reduced by 1/3rd. This will take many hours. 5-10 hours depending on the type of tomatoes you use.
- Taste as you go! If after 3 hours you find you like the taste of it, then remove the spice bag and continue to simmer until thickened. I always leave my spice bag in until the end though.

- In a stock pot, combine the tomatoes, onions, peppers, sugar and salt; simmer, uncovered, for 45 minutes. , Place the pickling spices, celery seed and mustard seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag; add to tomato mixture. Cook for 45 minutes or until very thick, stirring frequently. , Add vinegar; cook to desired thickness. Discard spice bag. Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water canner.

PEACH CHILI SAUCE
Oh so good. This is a condiment, used the same as ketchup or picallili. Wonderful with pork and chicken. I use it as an ingredient in my cooking. I like to mix it with a few cans of different beans for a quick, easy Calico Beans. I also pour it over meat loaf, and love it on my burgers. Don't use a food mill on this one, you want it chunky.

Steps:
- Combine tomatoes, onions, peaches, celery, peppers, and vinegar in very large, heavy pot.
- Place pickling spice cheesecloth and tie up. Add, along with salt, to pot.
- Bring to a boil over high heat.
- Reduce heat and boil gently, uncovered, for 1 to 1 1/2 hours, or until thick, stirring ocassionally.
- Stir in sugar.
- Return to a boil, and boil gently for 30 minutes, stirring ocassionally.
- Remove spice bag.
- ladle into sterilized jars, leaving 1/2 head space.
- Process 15 minutes for pints and half pints.

PEACH HABANERO HOT SAUCE
Peach Habanero Hot sauce is an easy summer recipe that is great for using fresh peaches. The sweetness from the peaches along with the heat of the habanero peppers makes this a deliciously good hot sauce to put on burgers and steak or anything Mexican.

Steps:
- Combine all ingredients, EXCEPT habanero peppers in a medium saucepan. Bring to a boil. Turn heat down and simmer 5 minutes.
- Add peppers and simmer 1 more minute. Use an immersion blender to blend the mixture in the saucepan until smooth. Or use a blender, but let the mixture cool for 15 minutes first.
- Let cool completely and bottle in sauce jars or mason jars. Store in refrigerator. It should be good for several months.

- Fill a Dutch oven two-thirds with water; bring to a boil. Cut a shallow "X" on the bottom of each tomato and peach. Using tongs, place tomatoes and peaches, a few at a time, in boiling water for 30-60 seconds or just until skin at the "X" begins to loosen. Remove tomatoes and peaches; immediately drop into ice water. Pull off skins with tip of a knife; discard skins., Coarsely chop tomatoes and peaches; place in a stockpot. Add onions, pears, green peppers, celery, jalapenos, sugar, vinegar and salt. Place pickling spices on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. Add to stockpot. Bring to a boil. Reduce heat; simmer, uncovered, 2 to 2-1/2 hours or until thickened, stirring occasionally. Discard spice bag., Carefully ladle hot mixture into five hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 20 minutes. Remove jars and cool.

- Wash tomatoes. Remove peels, stem ends, and cores. Cut tomatoes into chunks (you should have about 6-3/4 cups). - To a medium bowl, add the peach preserves, soy sauce, chili garlic sauce, olive oil, lemon juice, salt, pepper and whisk to combine; set aside.
- To a large ziptop plastic bag, add the chicken and about three-quarters of the marinade. Seal bag and squish the contents around so chicken is evenly coated. Place bag in the fridge to marinate for at least 1 hour (overnight is great if you can plan ahead). Set aside the remaining unused marinade to brush on chicken while it cooks; refrigerate it if you’re marinating overnight or for longer than an hour or so.
- Preheat grill to medium-high heat. Add the chicken and grill for about 10 minutes, or until chicken is cooked through; flip intermittently to ensure even cooking. Brush the reserved marinade on the chicken intermittently while it cooks.
- Optionally garnish chicken with cilantro, peppers, and serve immediately. Chicken is best fresh but will keep airtight in the fridge for up to 5 days.
