Steps:
- Preheat the oven to 400 degrees F.
- For the filling: Butter a 7-by-3-inch round baking dish and set aside. In a large bowl, toss together the sliced peaches, blueberries, lemon juice, sugar, arrowroot, vanilla and salt. Pour the mixture into the prepared baking dish.
- For the topping: In a separate bowl, mix together the oats, flour, sugar, cinnamon and salt. Using your hands, work the butter into the flour mixture until there are no longer any powdery ingredients at the bottom of the bowl. Break apart large pieces of the topping mixture and place on top of the fruit until the fruit mixture is almost entirely covered. Bake until the topping is golden brown and crispy and the fruit mixture is bubbling, about 40 minutes. Let cool for at least 20 minutes. Serve with the ice cream.

FAVORITE PEACH SLUSH
A friend gave me this recipe many years ago. It just wouldn't be summer without making a batch of this when the peaches are ripe. This makes a 5 quart (ice cream pail) full of summer goodness and will keep indefinitely. I have made this in the summer and still had some at Christmas, although most of the time it doesn't last that long! Note: Cooking time is freezing time.

- Combine all the ingredients in a large bowl and mix with a spoon for a few minutes until the honey has completely dissolved. Start with the 2 cups of peach juice, add the sparkling water, add the orange juice, continue with the pinch of salt and finally the 1 tablespoon of raw honey.
- After thoroughly mixed, pour the mix into an ice tray and place in the freezer for 3-4 hours (until it’s fully frozen).
- Take the ice tray out of the freezer and place the frozen mixture in a blender, don’t forget to put on the lid of the blender, to prevent any unwanted mess.
- Turn on the blender on the highest setting and “pulse” every few seconds until you get the desired slush texture.
