- Preheat oven to 375 degrees. Make the filling: Combine peaches, granulated sugar, lemon juice, cornstarch, and salt. Transfer to an 8-inch square baking dish.
- Make the topping: In a large bowl, using a mixer, beat butter and brown sugar on medium until light and fluffy. Add flour and salt and, with your hands, mix until large pieces form. Scatter over filling.
- Bake until center is bubbling, 40 to 50 minutes, tenting loosely with foil after 30 minutes. Let cool 20 minutes before serving.

These homemade peach crumb bars are always a hit. Wait until summer for fresh peaches or use frozen to get that wonderful peach flavor any time of the year.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Coat an 8x8-inch baking pan with cooking spray.
- Whisk flour, sugar, baking powder, and salt together in a bowl. Next, cut in the cold butter using 2 forks or a pastry cutter then slowly mix in the egg yolk and cold water. Don't worry if the dough seems really crumbly; it should be!
- Press 1/2 of the crumble mixture into the prepared pan to make the crust. Save the rest for the top of the bars.
- Stir together peach slices, sugar, flour, lemon juice, vanilla extract, cinnamon, and nutmeg until combined. Evenly add peach filling to the top of the crust.
- Sprinkle the remaining crumble over the peach filling.
- Bake in the preheated oven until golden brown and set, 30 to 38 minutes. Cool bars to room temperature, then cut and serve.

- In a large mixing bowl, combine frozen peaches, berries and lemon juice.
- Mix flour and sugar in with the fruit until well combined.
- Pour mixture into a baking dish or skillet.
- In a mixing bowl, combine crumble topping ingredients with a pastry cutter or fork until mixture is crumbly.
- Sprinkle crumble topping on top of fruit in an even layer.
- Bake in preheated oven until the fruit is bubbling and the topping is golden brown, about 30 minutes.
- Top with vanilla ice cream before serving, if desired.

- Preheat oven to 375°. Place peaches in a greased shallow 2-1/2-qt. Dutch oven, cast-iron pan or 2-1/2-qt. ovenproof baking dish. In a small bowl, combine brown sugar, flour, lemon juice, zest and cinnamon; sprinkle over the peaches. , Combine flour, sugar, baking powder, salt and nutmeg. - Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
- In large bowl, toss peaches, blueberries, 1/2 cup of the cookie mix and 1 teaspoon of the lemon peel. Spoon mixture into baking dish.
- In same bowl, place remaining cookie mix. Cut in butter, using pastry blender (or pulling 2 knives through mix in opposite directions), until mixture looks like coarse crumbs. Stir in remaining 1 teaspoon lemon peel. Sprinkle over fruit mixture.
- Bake 40 to 45 minutes or until filling is bubbly and topping is golden brown. Serve warm.
