1 (18.25 ounce) package angel food cake mix
1 (15 ounce) can diced peaches

Steps:

  • In a large bowl, combine cake mix, peaches and juice (do not add water). Mix well.
  • Pour into tube pan or 2 loaf pans.
  • Bake according to directions on cake package.
  • If desired, serve with whipped topping.

This light and lovely dessert is absolutely heavenly! Marge Hubrich of St. Cloud, Minnesota suggests, "Try this with fresh strawberries, raspberries or blueberries, too, using the corresponding flavor of gelatin. It's delicious with any of them."

3/4 cup sugar
2 tablespoons cornstarch
1 cup water
2 tablespoons corn syrup
1/4 cup peach, apricot or orange gelatin powder
1 loaf-shaped angel food cake (10-1/2 ounces)
1 package (8 ounces) reduced-fat cream cheese
2/3 cup confectioners' sugar
2 tablespoons fat-free milk
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
3 cups sliced peeled fresh or frozen unsweetened sliced peaches, thawed

Steps:

  • In a small saucepan, combine sugar and cornstarch. Gradually whisk in water and corn syrup until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in gelatin until dissolved. Cool to room temperature, stirring several times., Cut angel food cake into nine slices. Line an ungreased 13-in. x 9-in. dish with the slices; set aside. In a large bowl, beat cream cheese and confectioners' sugar until smooth. Gradually beat in milk., Set aside 1/3 cup whipped topping for garnish. Fold remaining whipped topping into cream cheese mixture; spread over cake. Top with peaches. Pour gelatin mixture over peaches., Cover and refrigerate for at least 4 hours. Cut into squares. Top each piece with about 1 teaspoon of reserved whipped topping. Refrigerate leftovers.

1 package (12 ounces) frozen unsweetened raspberries, thawed
2 tablespoons sugar
1 loaf loaf-shaped angel food cake (10-1/2 ounces), cut into 10 slices
1 can (15-1/4 ounces) peach halves, drained
2-1/2 cups low-fat vanilla frozen yogurt

Steps:

  • In a small bowl, combine raspberries and sugar; set aside. Place cake slices on an ungreased baking sheet. Broil 4 in. from the heat for 1-2 minutes on each side or until lightly toasted. Using a 2-1/2-in. biscuit cutter, cut a hole in the center of each slice. Remove cutouts and set aside. , Place cake slices in individual bowls; place a peach half, cut side up, in each hole. Top with a scoop of frozen yogurt and reserved cake cutouts. Drizzle with raspberry mixture. Serve immediately.

This recipe is from Marge Hubrich. I found this recipe in Light & Tasty magazine. I have not tried this recipe, but I'm posting it for safe keeping.

2/3 cup confectioners' sugar
8 ounces frozen light whipped topping, thawed
3 cups fresh peaches, peeled and sliced or 3 cups sliced frozen peaches, thawed

Steps:

  • In a small saucepan, combine sugar and cornstarch. Gradually whisk in water and corn syrupnuntil smooth. Cook and stir until mixture comes to a boil. Cook for 1-2 minutes until thickened. Remove from the heat; stir in gelatin until dissolved. Cool to room temperature, stirring several times.
  • Cut angel food cake into nine slices. Line an ungreased 13x9x2-inches dish with the slices. In a mixing bowl, beat cream cheese and milk until blended. Gradually beat in confectioners' sugar. 6 large ripe peaches - peeled, pitted and sliced
1 tablespoon fresh lemon juice
2 (8 ounce) containers vanilla yogurt
1 teaspoon lemon zest
1 (10 inch) prepared angel food cake

Steps:

  • Place peaches in a large bowl, and gently toss with lemon juice. Place 1 cup of peaches in a blender, set aside remaining slices, and blend until smooth. Place yogurt into a bowl; stir in the peach puree and lemon zest until well blended.
  • Cut the angel food cake into squares and place half in the bottom of a glass dish. Spoon half of the peach slices over the cake. Cover with half of the yogurt mixture. Place remaining cake squares over the yogurt. Top with peaches, reserving 5 or 6 slices for garnish. Cover with remaining yogurt mixture. Garnish with peach slices. Refrigerate until ready to serve.

  • 1. In small saucepan, combine sugar & cornstarch. Gradually whisk in water & corn syrup till smooth. Bring to boil. Cook & stir over medium heat 1-2 minutes or until thickened. Remove from heat; stir in gelatin powder till dissolved. Cool to room temperature, stirring several times.
  • 2. Cut angel food cake into 9 slices. Line 13x9 dish with slices; set aside. In large bowl, beat cream cheese & powdered sugar till smooth. Gradually beat in milk. Set aside 1/3 cup whipped topping for garnish; fold remaining whipped topping into cream cheese mixture & spread over cake. Top with peach slices. Pour gelatin mixture over peaches. Cover & refrigerate at least 4 hours. Cut into squares. Top each square with 1 tsp. whipped topping. Refrigerate left overs.
