PEACH AND RASPBERRY CRISP

4 to 5 pounds firm, ripe peaches (10 to 12 large peaches)
1 orange, zested
1 1/4 cups granulated sugar
1 cup light brown sugar, packed
1 1/2 cups plus 2 to 3 tablespoons all-purpose flour
1/2 pint raspberries
1/4 teaspoon salt
1 cup quick-cooking oatmeal
1/2 pound cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F. Butter the inside of a 10 by 15 by 2 1/2-inch oval baking dish.
  • Immerse the peaches in boiling water for 30 seconds, then place them in cold water. Peel the peaches and slice them into thick wedges and place them into a large bowl. Add the orange zest, 1/4 cup granulated sugar, 1/2 cup brown sugar, and 2 tablespoons of flour. Toss well. Gently mix in the raspberries. Allow the mixture to sit for 5 minutes. If there is a lot of liquid, add 1 more tablespoon of flour. Pour the peaches into the baking dish and gently smooth the top.
  • Combine 1 1/2 cups flour, 1 cup granulated sugar, 1/2 cup brown sugar, salt, oatmeal, and the cold, diced butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is pea-sized and the mixture is crumbly. Sprinkle evenly on top of the peaches and raspberries. Bake for 1 hour, until the top is browned and crisp and the juices are bubbly. Serve immediately, or store in the refrigerator and reheat in a preheated 350 degree F oven for 20 to 30 minutes, until warm.

2 peaches
8 ounces raspberries
2 1/2 cups low-fat plain yogurt or 2 1/2 cups low fat low sugar fruit yogurt
4 teaspoons rolled oats
4 teaspoons sliced almonds

Steps:

  • Cut the peaches in half, remove the pits and then slice the flesh into thin wedges.
  • Mix the peaches and raspberries with the yogurt in a bowl, then spoon into 4 sundae glasses and chill.
  • Spread out the rolled oats and almonds in a broiler pan.
  • Broil them until lightly toasted, shaking the pan frequently.
  • Cool, then sprinkle the oat mixture over the dessert and serve.

I will admit, I have made this with a multitude of fruits but I always come back to peaches. You can make it with some of the peach slices cooked and some raw or all cooked as I have done below.

1 tablespoon unsalted butter
3 cups sliced peaches, skin on, pitted, (about 1/2-inch thick)
1/4 cup superfine (or granulated) sugar plus 2 tablespoons
2 tablespoons orange liqueur (recommended: Grand Marnier)
1 cup heavy cream
2 teaspoons vanilla extract

Steps:

  • Heat a medium skillet and add the butter. When the butter melts, add the peaches and 1/4 cup sugar. Stir to blend and cook for 1 minute. Remove the skillet from the heat and add the orange liqueur. Return the skillet to the heat and cook the peaches over medium heat until they are tender when pierced with the tip of a knife, 1 to 2 additional minutes. Transfer the peaches to a platter and spread them out. They will cool more quickly that way. Refrigerate so they cool completely.
  • In the bowl of an electric mixer fitted with the whisk attachment (or, alternatively, with a whisk by hand) whip the cream until it forms soft peaks. Whisk in the remaining 3 tablespoons sugar and the vanilla. Whip until fairly firm in texture. When the peaches are cooled, fold them (and any cooking liquid sitting on the platter) into the whipped cream and transfer to a serving dish or individual glasses. Refrigerate until ready to serve.

1 1/2 cups vanilla nonfat yogurt
1 (10-ounce) package frozen raspberries, thawed
1/3 cup confectioners' sugar
1/4 cup well-chilled heavy cream
4 ladyfinger cookies

Steps:

  • Place the yogurt in a strainer lined with a paper towel and let it drain over a bowl to thicken in the refrigerator for at least 4 hours, and up to 1 day. Discard the liquid and set the thickened yogurt aside.
  • Puree half the raspberries in a food processor until smooth. Strain into a large bowl, pressing the liquid out with a rubber spatula. Discard the seeds. Whisk in the confectioners' sugar. Stir in the remaining raspberries.
  • In a chilled small bowl whip the cream until stiff peaks are formed. Gently fold in the yogurt. Fold in the raspberry mixture.
  • Spoon into cocktail glasses and chill, covered, for at least 1 hour. Serve with ladyfinger cookies.

1/2 cup sugar
1 teaspoon pure vanilla extract
3 large peaches, pitted and sliced into 1/2-inch-thick wedges
Juice of 1/2 lemon
1/2 teaspoon cornstarch
2 cups low-fat Greek yogurt

Steps:

  • Add the sugar, vanilla, peaches and lemon juice to a large saucepan over medium-high heat. Stir until the sugar begins to melt, 1 to 2 minutes. Cover, reduce the heat to medium and simmer 5 minutes.
  • Meanwhile, add the cornstarch to a small bowl and mix with 1 tablespoon water. Remove the cover from the peach mixture and stir in the cornstarch. Keep stirring until thick, about 1 minute. Once the mixture is thickened, remove from the heat and allow to cool. Refrigerate until chilled, at least 30 minutes.
  • To serve, layer the yogurt and peaches in a serving glass.

4 cups plain yogurt
1/4 cup sliced almonds, toasted
1/4 cup good honey
1 1/2 teaspoons pure vanilla extract
2 teaspoons grated orange zest
1/2 to 1 cup peach nectar
1/4 cup raisins
1 peach, peeled and diced
1/2 pint fresh raspberries

Steps:

  • Line a sieve with cheesecloth or paper towels and suspend it over a bowl. Pour the yogurt into the sieve and allow it to drain, refrigerated, for 3 hours or overnight.
  • Place the thickened yogurt into a medium bowl and add the almonds (reserving 1 tablespoon for the garnish), honey, vanilla, and orange zest. Thin with peach nectar until it is a desirable consistency.
  • Add the raisins, peach (reserving 1 tablespoon for garnish) and raspberries (reserving 2 tablespoons for garnish). Garnish with the reserved almonds, peach and raspberries.

2/3 cup sugar
2 eggs, beaten

2 tablespoons Bisquick™ Gluten Free mix

2 tablespoons cold butter
1/2 cup slivered almonds

Steps:

  • Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray (without flour).
  • In medium bowl, stir peaches, cinnamon and nutmeg. Spoon mixture into pie plate; sprinkle with raspberries. In small bowl, stir 1/2 cup Bisquick mix, the whipping cream, 2/3 cup sugar, the eggs and almond extract until smooth. Pour mixture over fruit. Bake 10 minutes.
  • Meanwhile, in another small bowl, stir 2 tablespoons Bisquick mix and 1/4 cup sugar. Cut in 2 tablespoons butter, with pastry blender or fork, until crumbly. Stir in almonds. Sprinkle topping over pie.
  • Bake 30 to 35 minutes longer or until knife inserted in center comes out clean and topping is golden brown. Cool on cooling rack at least 1 hour before serving. Store covered in refrigerator.

300 g raspberries
150 ml double cream or 150 ml heavy cream
125 ml thick Greek yogurt
12 pistachios
1 tablespoon icing sugar (optional)

Steps:

  • Wash the berries and use a fork to mash them up.
  • You could also do this in a food processor to get an absolutely smooth purée but I prefer a bit of texture.
  • Pour the cream into a chilled bowl and whip until you have soft peaks.
  • You don't want it to be stiff.
  • Gently fold in the yogurt and about two-thirds of the crushed berries.
  • Taste for sweetness and add the icing sugar if you want.
  • Slowly stir in the reserved berries, leaving a swirl of red through the fool.
  • Roughly chop the pistachios and scatter them over top.

  • In a chilled small bowl beat cream until it just holds stiff peaks and gently fold in yogurt. Fold in raspberry purée to create a marbled effect.
  • Spoon fool into 4 stemmed glasses. Chill desserts, covered, 1 hour.
