BERRY PEACH TOSSED SALAD



Berry Peach Tossed Salad image

Loaded with fresh peaches and berries, this salad says "summer." Created by Maryvonne Martin of Orangevale, California, it is a wonderful accompaniment to grilled meats, poultry or seafood.

Number Of Ingredients 11

3 tablespoons olive oil
3 tablespoons orange juice
3 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
3 romaine hearts, torn
1 medium red onion, halved and thinly sliced
1/2 cup crumbled feta cheese
2 medium peaches, thinly sliced
1 cup fresh raspberries
1 cup fresh blackberries

Steps:

  • For dressing, in a small bowl, whisk the first five ingredients. In a large salad bowl, combine the romaine, onion, feta cheese and peaches. Drizzle with dressing and toss gently. Sprinkle with raspberries and blackberries. Serve immediately.

3 peaches
2 1/2-pint baskets blackberries
1 1-pint basket strawberries, hulled, sliced
1/4 cup honey
1/2 teaspoon ground cardamom

Steps:

  • Bring medium pot of water to boil. Add peaches and blanch 30 seconds. Drain. Transfer to medium bowl, cover with cold water and cool. Drain. Peel peaches and slice. Place in medium bowl. Add all remaining ingredients and mix to blend. (Can be prepared 1 hour ahead. Cover and let stand at room temperature.)

1/4 cup orange juice
3 tablespoons sugar
4 medium peaches (1 lb), peeled, pitted and cut into chunks
1 cup fresh raspberries or blackberries
2 cups sparkling wine or lemon-lime carbonated beverage

Steps:

  • In large bowl, stir together orange juice and sugar. Stir in peaches and raspberries.
  • Divide fruit mixture evenly among four 6-oz custard cups. Cover; freeze at least 1 hour.
  • About 30 minutes before serving, remove custard cups from freezer. Let stand until slightly thawed. Transfer fruit mixture to four 8-oz champagne saucers or margarita glasses. Pour sparking wine over fruit. Serve immediately.

Sugar Snap Pea and Berry Salad image

A delicious summer salad made with your favorite berries.

Number Of Ingredients 8

½ pound sugar snap peas, trimmed
1 cup fresh raspberries
2 tablespoons raspberry vinegar
2 tablespoons olive oil
1 pinch sugar
salt and pepper to taste
1 cup fresh blueberries
2 cups torn mixed salad greens

Steps:

  • Bring a pot of water to a boil. Place snap peas in pot, and cook 1 to 2 minutes. Drain, rinse under cold water, and set aside.
  • Place about 1 1/2 tablespoons raspberries in a strainer over a bowl, and crush with a wooden spoon. Discard pulp. Mix vinegar, olive oil, sugar, salt, and pepper with the strained raspberry juice.
  • In a large bowl, gently toss the dressing with the snap peas, remaining raspberries, and blueberries. Cover, and chill at least 30 minutes in the refrigerator. Toss with greens just before serving.
