PEA & WATERCRESS SOUP
Sweet peas and peppery watercress are a perfect match for early summer, but you can adapt this soup to suit all year round

Steps:
- Heat the oil in a large saucepan, then gently fry the onion and garlic for 5 mins or until soft. Add the potato, stock and 500ml water, then simmer for 7 mins until the potato is just cooked.
- Scatter in the peas and watercress, stir, cover, then simmer for 3 mins. Add the mint leaves and blitz with a hand blender until smooth. Stir in the cream and season to taste. Serve ladled into bowls, scattered with more mint and some cracked black pepper.

SUMMER PEA AND WATERCRESS SOUP

- In summer, a light pea soup feels totally right - the watercress in this recipe adds a mustardy bite.
- Heat a large saucepan and pour in a little olive oil. Throw in the chopped onion and celery. Turn the heat down and cook very gently with the lid on for 10 minutes, or until the onion has softened, but not browned.
- Add the potato and stock and bring to the boil. Simmer for 10 minutes or until the potato is cooked. Next, drop in the peas and watercress and simmer for a further 5 minutes until the peas are cooked.
- Remove the pan from the heat. Whiz the soup with a hand blender, or in a liquidizer, until smooth. Taste, then season with salt and pepper.
- Serve the soup with a spoonful of soured cream swirled in, a drizzle of extra virgin olive oil and some crusty bread and butter.
- Tip: You can use frozen peas - just simmer them in the stock a couple of minutes

Steps:
- Heat the oil in a large saucepan over a medium heat. Add the leeks and garlic and fry for 7-10 mins or until softened and translucent.
- Pour in the hot stock and simmer for 5-10 mins. Stir through the watercress, reserving a few leaves for garnish, then the peas, and cook for 5 mins until wilted. Use a hand blender or processor and whizz until smooth. Stir through the lemon juice and zest, then season to taste. Stir through half the parsley. Ladle into bowls and top with the remaining parsley, reserved watercress and a drizzle of olive oil. Swirl through some crème fraîche, then serve with crusty bread, if you like.

- Heat the oil and butter in a large pan, add the onion and garlic and cook gently for 5 minutes, until beginning to soften. Add the potato and toss with the onion and garlic, then pour in the stock. Bring to the boil and simmer for 15 minutes, until the potato is tender.
- Add the frozen peas and simmer for 3 minutes. Add the watercress and stir in until wilted. Remove from the heat, cool for a few minutes then blend with a hand-held blender (or in a food processor, in batches), until smooth. Return to the pan, season to taste with salt and freshly ground black pepper and keep warm over a gentle heat.
- Meanwhile, preheat the grill to high. Grill the pancetta for 2-3 minutes each side, until crisp. Remove and drain on kitchen paper. Break up into pieces.

- Chop the watercress stalks (reserving the leaves) and put into a small saucepan with the stock or water and soya milk and bring to a simmer for 5 minutes. Remove from the heat and leave to infuse.
- Heat the oil in a large pan and add the onion. Cook on a low heat until softened but not coloured. Add the potato, stir, cover and cook until soft. Add the mint and peas, strain the soya milk stock into the pan, discarding the watercress stalks, season and simmer for 2 minutes. Stir in the watercress leaves and turn off the heat.
- Set a sieve over a heatproof bowl and drain the soup through it. Put the solids caught in the sieve into a blender with a little of the soup liquid and purée. Push this mixture through the sieve into the bowl with the back of a ladle and repeat with any solids left in the sieve. Discard any bits that won’t pass through. Serve warm, garnished with croutons, bacon bits and soya cream, if you like.
