PEA & SWEET CORN FRITTERS
You can make these delicious pea and sweet corn fritters with just a few pantry and freezer staples. Great for lunch boxes or easy dinners. These quick and easy fritters will be ready in 30 minutes.

Steps:
- Bring a small pot of water to boil, then add in frozen peas and corn and boil for 2 minutes. Then drain and leave the peas and corn to cool.
- Add milk, egg and flour to a large mixing bowl and mix well. Add onion, pea, corn, salt and pepper and mix well.
- Heat enough oil to just cover the bottom of a frying pan on medium heat. Place 2 tablespoons of the mixture in the pan. Repeat with the remaining mixture, cooking in batches without overcrowding the pan (I usually fit 3 fritters each batch). Cook for 3-4 minutes each side until golden and crispy. If the pan gets too dry between batches, add some more oil. Transfer cooked fritters to a plate lined with paper towel.

- 1. Add all the ingredients to a food processor and blitz until well combined. If you don't have a food processor you could also just mix the ingredients in a large bowl. The fritters will have a different texture, but you will still get the same delicious taste.
- 2. Add a splash of olive oil to a frying pan to heat, then add 1 teaspoon of the mixture to the frying pan and flatten with a spatula.
- 3. Fry for 2 minutes over a medium heat then flip and fry the other side for 2 minutes.
- 4. Repeat until all the mixture is used up.
- 5. Enjoy!

- Blend half of the peas with the sliced clove of garlic, the salt, and the eggs.
- Add the flour and baking powder, along with the lemon zest and mint (or whichever flavourings you use), and a crack of pepper if desired, and stir to combine.
- Fold in the remaining half of the peas.
- Heat 2 Tbsp olive oil in a frying pan over medium heat and fry the fritters in batches. You can make them whatever size you want. I tend to use a heaped soup spoon, which yields about 8-10 fritters.

- Mix the sweetcorn, spring onions, courgette, paprika, flour, beaten egg, milk and some seasoning in a large bowl and set aside.
- Put a large pan of water on to boil. In a bowl, mix the chilli sauce with the lime juice and set aside.
- Heat the oil in a large, non-stick pan and spoon in four burger-sized mounds of the fritter mixture, spaced apart (you may need to do this in two batches). When brown on the underside, turn over and cook for 3 mins more until golden.
- Meanwhile, poach the eggs in the simmering water for 2-3 mins until cooked and the yolks are runny. Remove with a slotted spoon. Serve the fritters topped with a poached egg, mixed leaves and a drizzle of the chilli dressing.

Steps:
- In saucepan combine peas, water, onion, carrot and broth mix.
- Bring to a boil.
- Reduce heat, cover and simmer, stirring occasionally about 30 minutes until peas are soft.
- Let cool.
- In a bowl, combine flour, baking powder, salt and pepper. Add milk and egg to cooled split pea mixture and stir.
- Stir into dry ingredients.
- In a 10 inch nonstick skillet, heat 1 tsp oil.
- Spoon 4 heaping tablespoons of batter into skillet, forming 4 small fritters.
- Cook until edges bubble and fritters are browned on the bottom.
- Turn over and cook until browned on the other side.
- Remove to a warmed plate. Set aside and keep warm.
- Repeat procedure with remaining oil and batter.
