Pea & Sweet Corn Fritters image

You can make these delicious pea and sweet corn fritters with just a few pantry and freezer staples. Great for lunch boxes or easy dinners. These quick and easy fritters will be ready in 30 minutes.

1 cup Frozen Peas
1 cup Frozen Corn
3/4 cup Self-Raising Flour (SEE NOTES)
1 Egg
1/2 cup Milk
1/2 Brown / Yellow Onion, finely diced
Salt + Pepper, to taste
Olive Oil, for frying

Steps:

  • Bring a small pot of water to boil, then add in frozen peas and corn and boil for 2 minutes. Then drain and leave the peas and corn to cool.
  • Add milk, egg and flour to a large mixing bowl and mix well. Add onion, pea, corn, salt and pepper and mix well.
  • Heat enough oil to just cover the bottom of a frying pan on medium heat. Place 2 tablespoons of the mixture in the pan. Repeat with the remaining mixture, cooking in batches without overcrowding the pan (I usually fit 3 fritters each batch). Cook for 3-4 minutes each side until golden and crispy. If the pan gets too dry between batches, add some more oil. Transfer cooked fritters to a plate lined with paper towel.

100 g frozen peas
100 g frozen sweetcorn
2 spring onions
1 egg
5 Tbsp milk
1/2 tsp chilli flakes
2 garlic cloves
1 tsp apple cider vinegar
125 g almond flour
olive oil to fry

Steps:

  • 1. Add all the ingredients to a food processor and blitz until well combined. If you don't have a food processor you could also just mix the ingredients in a large bowl. The fritters will have a different texture, but you will still get the same delicious taste.
  • 2. Add a splash of olive oil to a frying pan to heat, then add 1 teaspoon of the mixture to the frying pan and flatten with a spatula.
  • 3. Fry for 2 minutes over a medium heat then flip and fry the other side for 2 minutes.
  • 4. Repeat until all the mixture is used up.
  • 5. Enjoy!

2 cup frozen peas, defrosted
1 clove garlic
1 teaspoon salt
2 eggs
1/2 cup all purpose flour
1/2 teaspoon baking powder
1 teaspoon lemon zest (optional)
1 tablespoon fresh mint (optional)
2 tablespoon olive oil, for frying

Steps:

  • Blend half of the peas with the sliced clove of garlic, the salt, and the eggs.
  • Add the flour and baking powder, along with the lemon zest and mint (or whichever flavourings you use), and a crack of pepper if desired, and stir to combine.
  • Fold in the remaining half of the peas.
  • Heat 2 Tbsp olive oil in a frying pan over medium heat and fry the fritters in batches. You can make them whatever size you want. I tend to use a heaped soup spoon, which yields about 8-10 fritters.

198g can sweetcorn, drained
2 spring onions, finely chopped
50g courgette, grated
1 tsp smoked paprika
50g self-raising flour
5 eggs, 1 beaten, 4 for poaching
40ml milk
4 tbsp sweet chilli sauce
juice 1 lime
1 tbsp vegetable oil
mixed leaves, to serve

Steps:

  • Mix the sweetcorn, spring onions, courgette, paprika, flour, beaten egg, milk and some seasoning in a large bowl and set aside.
  • Put a large pan of water on to boil. In a bowl, mix the chilli sauce with the lime juice and set aside.
  • Heat the oil in a large, non-stick pan and spoon in four burger-sized mounds of the fritter mixture, spaced apart (you may need to do this in two batches). When brown on the underside, turn over and cook for 3 mins more until golden.
  • Meanwhile, poach the eggs in the simmering water for 2-3 mins until cooked and the yolks are runny. Remove with a slotted spoon. Serve the fritters topped with a poached egg, mixed leaves and a drizzle of the chilli dressing.

When making these you might find that the fritters split or crack when you try to flip them over (it shouldn't happen if you only use 1 teaspoon of the mixture). If this happens we'd recommend trying them with less mixture and making smaller fritters, this way it's easier to flip them without breaking.

3 ounces raw yellow split peas, rinsed
2 cups water
1/4 cup onion, diced
1/4 cup carrot, shredded
1 (6 g) package instant chicken broth
1/4 cup flour, plus
2 tablespoons flour
1 teaspoon baking powder
1 dash salt and pepper
1/4 cup skim milk
1 egg, beaten
1 tablespoon oil
1 teaspoon oil

Steps:

  • In saucepan combine peas, water, onion, carrot and broth mix.
  • Bring to a boil.
  • Reduce heat, cover and simmer, stirring occasionally about 30 minutes until peas are soft.
  • Let cool.
  • In a bowl, combine flour, baking powder, salt and pepper. Add milk and egg to cooled split pea mixture and stir.
  • Stir into dry ingredients.
  • In a 10 inch nonstick skillet, heat 1 tsp oil.
  • Spoon 4 heaping tablespoons of batter into skillet, forming 4 small fritters.
  • Cook until edges bubble and fritters are browned on the bottom.
  • Turn over and cook until browned on the other side.
  • Remove to a warmed plate. Set aside and keep warm.
  • Repeat procedure with remaining oil and batter.
