CREAMY PEA & WATERCRESS PASTA



Creamy pea & watercress pasta image

This zesty pasta dish is superhealthy and packed with summer flavour

350g penne or other short pasta shape
300g fresh peas
1 garlic clove , peeled
100g bag watercress , tough stalks removed
2 tbsp mascarpone
2 tbsp chopped tarragon
zest and juice 1 lemon

Steps:

  • Cook the pasta following packet instructions. Meanwhile, cook the peas and garlic in a separate pan of boiling salted water for 3-5 mins, until tender. Drain well, keeping some of the water.
  • Put the peas, garlic and watercress in a food processor with 2 tbsp of the pasta cooking water. Whizz to a very rough purée.
  • Return the pasta to the pan. Stir in the pea mixture, mascarpone, tarragon and lemon zest and juice. Season with salt and pepper and serve with crusty bread.

4 cups frozen peas
2 1-pound bunches watercress, trimmed of all but top 2 to 3 inches
4 tablespoons unsalted butter, cut into small pieces
1/2 teaspoon freshly ground black pepper
3/4 teaspoon sea salt

Steps:

  • Fill a large saucepan with water and bring to a boil. Add the peas and return to a boil. Turn off the heat. Add the watercress tops to the peas and cover the saucepan. Let sit for 5 minutes so that the watercress wilts.
  • Drain the peas and watercress and transfer to a food processor. Add the butter, pepper and salt and process until smooth. Taste and adjust seasoning. Spoon into a serving dish and serve.

two 10-ounce packages frozen peas
2 bunches of watercress, coarse stems discarded and the watercress rinsed and spun dry (about 4 cups)
1/4 cup water
2 tablespoons unsalted butter

Steps:

  • In a large saucepan combine the peas, the watercress, and the water and boil the mixture, covered, for 5 minutes, or until the peas and watercress are tender. Transfer the mixture to a food processor, add the butter and salt and pepper to taste, and purée the mixture.

  • Cook peas in large pot of boiling salted water until very tender, about 4 minutes for fresh and 2 minutes for frozen. Drain, reserving 1/2 cup cooking liquid. Set 2 tablespoons peas aside for garnish. Place remaining peas in processor. Add cheese, mint leaves, butter, and garlic. Puree pea mixture, adding pea cooking liquid by tablespoonfuls if too stiff, to form light and creamy puree. Season to taste with sea salt and freshly ground black pepper. Transfer to microwave-safe bowl. DO AHEAD Can be made 1 hour ahead. Cover and let stand at room temperature.
  • Heat olive oil in heavy large skillet over medium-high heat. Sprinkle shrimp and scallops with salt and freshly ground black pepper. Cook shrimp and scallops until golden brown outside and just opaque in center, about 2 minutes per side.
  • Microwave pea puree in 15-second intervals until warm. Spoon puree into center of plates. Place 2 shrimp and 2 scallops onto each plate, arranging atop puree. Sprinkle with reserved peas from pea puree, lemon peel, mint leaves, sea salt, and pepper. Drizzle each serving with extra- virgin olive oil and serve.

  • Chop the watercress stalks (reserving the leaves) and put into a small saucepan with the stock or water and soya milk and bring to a simmer for 5 minutes. Remove from the heat and leave to infuse.
  • Heat the oil in a large pan and add the onion. Cook on a low heat until softened but not coloured. Add the potato, stir, cover and cook until soft. Add the mint and peas, strain the soya milk stock into the pan, discarding the watercress stalks, season and simmer for 2 minutes. Stir in the watercress leaves and turn off the heat.
  • Set a sieve over a heatproof bowl and drain the soup through it. Put the solids caught in the sieve into a blender with a little of the soup liquid and purée. Push this mixture through the sieve into the bowl with the back of a ladle and repeat with any solids left in the sieve. Discard any bits that won’t pass through. Serve warm, garnished with croutons, bacon bits and soya cream, if you like.
