GRILLED PINEAPPLE CHICKEN SANDWICHES

- In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels. Flatten chicken to 3/8-in. thickness; brush both sides with oil. Grill, uncovered, over medium heat for 4 minutes. Turn; brush with barbecue sauce. Grill 3-4 minutes longer or until juices run clear., Meanwhile, place the pineapple and rolls cut side down on grill; cook for 3-4 minutes or until browned, turning the pineapple once. Place lettuce if desired on roll bottoms; top with chicken, cheese, bacon and pineapple. Replace roll tops.

- Mix cinnamon and sugar together in a small bowl. Spread one tablespoon of peanut butter onto one side of 8 slices of bread.
- Arrange apple slices on 4 slices of bread. Sprinkle the cinnamon/sugar mixture evenly over the apples. Top with the remaining 4 slices of bread, peanut butter face down.
- Melt the butter in a large skillet over medium heat. Fry sandwiches until browned, about 1 to 2 minutes on each side.

This is a wonderfully attractive sandwich with a lot of goodies when the going gets slow. My thoughts(just like those of many of u) are with Dana. - Put butter on one side of the bread slices.
- For the filling, mix together chopped pineapple, bean sprouts, grated cheese, 1 tbsp mayonnaise, fresh cream, tomato ketchup, Worcestershire sauce and a little Tobasco sauce.
- On the bread slices, keep a lettuce leaf and put the filling on it.
- Cover the filling with another lettuce leaf and cover the sandwich finally with another slice of bread spread with mayonnaise.
- Press slightly.
- Trim the sides of the bread, cut in triangles and serve.

- 1. Combine the softened cream cheese and pineapple. Add the sugar and the pecans to this mixture. Trim the crust from the bread slices. Spread the cheese mixture on the bread slices and make into sandwiches. Place the sandwiches on a tray and cover with plastic wrap. Chill
- 2. When you are ready to serve, cut the sandwiches into thin slices about 1 inch in width and place on a decorative tray.

- Place the chicken pieces into a large resealable bag and pour in the marinade. Marinate in the refrigerator for at least 1 hour or up to overnight.
- Preheat a grill for medium-high heat. When hot, lightly oil the grate. Remove the chicken from the marinade and discard the marinade.
- Grill the chicken pieces until cooked through, about 10 minutes, turning once. 5 minutes before they are done, place the pineapple rings on the grill and cook for a couple of minutes per side. Place the pineapple slices on top of the pieces of chicken and top with a slice of cheese. Close the lid to the grill and allow the cheese to melt for a minute. Toast the buns, if desired.
- To assemble the sandwiches, place the chicken, pineapple and cheese onto the bottom buns. Top with lettuce and tomato. Spread the thousand island dressing onto the top buns and place onto the sandwiches.
