PAWPAW BREAD
Pawpaw Bread is different and fun to make. Go pawpaw picking in the woods with your kids in the fall. You can show them how early American settlers gathered food and prepared it from scratch. Pawpaw Bread is good and not hard to make at all. Its a fun adventure that is almost free. And its great family fun.

INDIANA PAWPAW BREAD
A pawpaw is not a papaya, but a wild fruit that grows on trees in the mid-west. It is the Ohio State Native Fruit and sometimes called an Indiana banana. After finding pawpaws in our neighbors woods, I started the ultimate search for the perfect pawpaw recipe. We found pawpaw pie to be a bit bitter so we tried bread instead. This is an adaptation of a banana bread recipe. Enjoy.

- Mix the eggs, yolks, sugar, cornstarch and vanilla well, then add to the half in half in a saucepan and cook on medium heat, stirring constantly until you can feel the mixture thicken noticeably. Take it off the heat and whisk to break up lumps, adding the butter at the same time. The mixture should get very thick, if it clumps a bit, pass it through a strainer or beat with a whisk. Off the heat, mix in the paw paw puree, then transfer to a bowl to cool, placing plastic wrap on the surface to prevent it from forming a skin. Refrigerate the pudding until needed.
- To serve the pudding, whip the cream and tablespoon of powdered sugar until stiff peaks form. Spoon the pudding into four 1 cup ramekins, leaving 1/2 inch of headspace on top for the whip cream. Cover the pudding with the whip cream and smooth the top with a pastry spatula. Sift on some powdered sugar, garnish each with a mint leaf if using, and serve.

- Ingredients. Start by gathering the ingredients together. 1 ripe papaya, or 1 1/2 cups Papaya puree. 4 eggs. 1 cup vegetable oil. 2/3 cup water. 1 teaspoon vanilla.
- Papaya Puree. If you do not have papaya puree it is simple to make. Cut the papaya in half scrape out the guts and seeds. Peel the papaya and dice it into one inch cubes, discard any bad pieces and place the good parts into a pot and add a little water.
- Directions. Grease four 3 1/2 x 8 x 2 1/4 inch (10 x 20 x 5 1/2 cm) loaf pans with olive oil. These aluminum pans are ideal for gifting; prepare the pans by coating the pans with olive oil using a brush, I find the bread falls out of the pans with ease when you coat them this way.
- Baking. Pour the batter into the prepared pans; this batch should fill 4 pans to about 3/4 full, and check the oven to be sure it is up to heat.
- And Serve. Once baked let the loves cool on a rack, when the loves are cool you can put the clear plastic covers on the pans or you can glaze the loves and serve.
