"DIRT PUDDING" PUMPKIN PATCH
I was bringing a dessert to a 'spooky Halloween dinner,' and wanted to make something creative. I had heard of the 'dirt cup' recipes with gummy worms before, but I wanted to do something a little different, so I adapted the recipe to this! Kiddos loved it and so did the adults!

Steps:
- Crush cookies in 2 or 3 batches in a food processor. Pulse until you get fine crumbs, about 30 seconds per batch. Transfer to a bowl.
- Place cream cheese, butter, and confectioner's sugar in food processor; mix until smooth, about 30 seconds.
- Whisk milk and pudding mixes together in a bowl until pudding is thickened; fold in whipped topping. Stir in cream cheese-butter mixture.
- Press 1/3 of the cookie crumbs onto the bottom of a 9x13-inch pan. Sprinkle half of the gummy worms on the crumb layer. Spread half of the pudding mixture over the crumbs and candy. Carefully layer another 1/3 of the crumbs over the pudding mixture and sprinkle on more gummy worms. Add the last layer of cookie crumbs and smooth them out for your "pumpkin patch."
- Place pumpkin candy in rows with enough room to for frosting "vines" and "leaves."
- Tint frosting with green food coloring and transfer to piping bag. Connect pumpkins with "vines" and add swirling tendrils. Switch to a leaf tip and create some leaves.

Steps:
- Combine the first three ingredients; press into a 13-in. x 9-in. baking pan; set aside. , In a bowl, beat cream cheese, sugar and eggs until blended; pour over crust. Bake at 350° for 15 minutes or until set. Cool on a wire rack for 1 hour. , Soften gelatin in cold water; set aside. In a small bowl, beat egg yolks until thick and lemon-colored; set aside. In a saucepan, combine pumpkin, 1 cup sugar, milk, cinnamon and salt; bring to a boil. Boil for 2 minutes. Stir 1 cup hot pumpkin mixture into yolks; return all to pan. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in softened gelatin. Set pan in ice water and stir until mixture reaches room temperature, about 5 minutes. , In another bowl, beat cream until soft peaks form; gradually add vanilla and remaining sugar. Beat until stiff peaks form. Fold into pumpkin mixture. Pour over the cream cheese layer. Refrigerate for 2 hours. Serve with whipped cream if desired.

These are very moist, and so far I haven't found anyone who doesn't love them!

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix the eggs, sugar, oil, and pumpkin with an electric mixer until light and fluffy. Sift together the flour, baking powder, baking soda, cinnamon and salt. Stir into the pumpkin mixture until thoroughly combined.
- Spread the batter evenly into an ungreased 10x15 inch jellyroll pan. Bake for 25 to 30 minutes in preheated oven. Cool before frosting.
- To make the frosting, cream together the cream cheese and butter. Stir in vanilla. Add confectioners' sugar a little at a time, beating until mixture is smooth. Spread evenly on top of the cooled bars. Cut into squares.

- In a plastic bag add your coconut and 10 drops of green food coloring. Zip the bag and squish it all around to color the coconut green. Pour the coconut onto a plate and set aside to dry.
- In a bowl, using a whisk mix the 2 cups of cold milk with the box of instant pudding mix. Set the pudding aside to set.
- While the pudding is setting break apart the Oreos and removed the filling. Then put all the Oreo cookies into a ziplock bag, close it, and smash them into crumbs. I like using a meat pounder for this but a metal spoon will work well to.
- When the coconut is dry, the pudding is set and you have smashed all the Oreos, set our 4 dessert cups.
