ITALIAN STYLE MEATLOAF I
Made with mozzarella cheese and Italian seasoning, this is a different twist on everyday meatloaf! Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.
- Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

Steps:
- Preheat oven to 350 degrees F.
- Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
- Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
- Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
- Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.
PAUL'S ITALIAN-STYLE MEATLOAF
This is from someone who used to run an old BBS (remember those?)that had a cooking "echo". I use 1/2 ground beef, and 1/2 ground turkey to make it leaner. Use a commercial canned marinara or make your own. Great with pasta or rice.

- 1. Pre-heat the oven to 350°F. Put a cookie sheet in oven while preheating. Coat a 9x5-inch loaf pan with nonstick cooking spray.
- 2. In a large bowl, mix together the beef, breadcrumbs, milk, egg and herbs. Salt and pepper to taste.
- 3. Heat the oil in a skillet. Add the onion and garlic. Cook until just soft. Mix into the meat mixture.
- 4. Put into prepared loaf pan. Place loaf pan on preheated cookie sheet and bake for 1 hour or until firm in the middle. While meatloaf is baking, heat marinara sauce on stove.
- 5. Cool slightly and slice. Top slices with heated sauce and serve.
PAULA DEEN'S MEATLOAF
Steps:
- Preheat oven to 375 degrees Fahrenheit.
- In a large bowl, stir together ground beef, salt, pepper, onion, bell pepper, egg, tomatoes, and oats. Place the mixture in a loaf pan. Press the surface lightly with your palm to flatten the top.
- To make the topping, combine ketchup, brown sugar, and mustard. Spread it on top of the loaf.
- Bake the meatloaf for 1 hour. Use a meat thermometer to check for doneness. The center should be at 160 degrees Fahrenheit.
- Let the meatloaf rest for 10 minutes after baking so that it holds together better while slicing.
