1 (18.25 ounce) package chocolate cake mix
1 (21 ounce) can cherry pie filling
3 eggs
1 cup white sugar
5 tablespoons butter
⅓ cup milk
1 cup semisweet chocolate chips

Steps:

  • Combine cake mix, cherry pie filling, and three eggs. Mix until well blended.
  • Bake in well greased and floured 9 x 13 pan. Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes.
  • To Make Frosting: Combine sugar, butter or margarine, and milk. Bring to a boil, stirring constantly, and cook 1 minute.
  • Remove from heat.
  • Stir in chocolate pieces until melted and smooth.
  • Frost when cake is cool.

3 cups cake flour (not self-rising)
1 teaspoon salt
1 1/2 teaspoons baking soda
4 cups sugar
1 cup sour cream, at room temperature
4 large eggs, at room temperature
1 cup oil
9 oz unsweetened chocolate
1 tablespoon vanilla extract
2 cups strong coffee, freshly brewed
3 sticks unsalted butter, at room temperature
2 tablespoons milk
1 teaspoon vanilla extract
9 oz semi-sweet chocolate, melted
2 1/2 to 3 cups confectioner's sugar, sifted

Steps:

  • Preheat oven to 325 °F. Grease bottom and sides of three 9″ cake pans.
  • In a large mixing bowl combine flour, sugar, baking soda and salt.
  • In a medium bowl place chocolate and pour hot coffee and 1 tablespoon vanilla. Let stand about 2 minutes to melt the chocolate then stir until smooth.
  • ln another bowl whisk together eggs and oil until well blended and light in color. Whisk in sour cream, then melted chocolate mixture.
  • Add chocolate sour cream mixture to dry ingredients and mix on low speed while gradually adding in thirds. Mix until just until incorporated scraping down the sides of the bowl as needed. Fill prepared pans two thirds full. Bake cakes 40-55 minutes until a toothpick inserted comes out clean. Let cool then decorate as desired.
  • Mix butter and milk until smooth and creamy. Add 1 teaspoon vanilla just until incorporated. Add melted chocolate until completely mixed. Gradually add sugar until you reach the consistency of frosting.

1 cup vegan butter
2 cups dairy-free chocolate chips
1 cup chopped pecans

Steps:

  • Preheat oven to 350°F/175°C.
  • Open the 2 cans of cherry pie filling and spread it into the bottom of an ungreased 9x13 cake pan.
  • Sprinkle the dry cake mix over the cherry pie filling.
  • Next, place vegan butter in a microwave-safe container and cook in 30-second increments until melted. Drizzle melted butter over the dry cake mix. Be sure to spread the butter evenly across the cake mix.
  • Evenly spread the chocolate chips over the top and then follow with the chopped pecans.
  • Bake in the oven for 50 minutes.
  • Remove from oven and allow to cool for 10 to 15 minutes before serving. Serve warm.

3 eggs
2 tablespoons cocoa powder
1 tablespoon almond flavoring
19 ounces cherry pie filling
1/2 cup semi-sweet chocolate chips
1/4 cup vegetable oil
1/4 cup cherry brandy
3/4 cup semi-sweet chocolate chips
2 tablespoons sweet butter
2 tablespoons table cream

Steps:

  • Mix cake mix with cocoa, beaten eggs, almond flavouring, melted chips and oil. Use a two cup glass measure to melt the chips and oil. Add cherry brandy if using. Fold in cherry pie filling. Turn into greased bundt pan.
  • Bake 350 degrees for 55 minutes. The residue heat will finish the cooking. Cool, turn out onto a plate and glaze.

  • Microwave on medium the chips, butter, and milk until melted . Stir in 1/2 cup icing sugar ( optional ) Cool and pour over cake. I use the same two cup Pyrex measuring cup to melt the chips & oil to put into the cake, and save it unwashed to make the glaze. No point in wasting a bit of chocolate! One time I made it, I used a bit more cherries ( almost 1/2 can more ) and it was the best one yet! After I glazed it and let it cool, I dribbled some of the cherry goo over the glaze to keep it moist- went over huge in my home!
  • This cake is best made the day before to allow the flavours to get happy!
