Steps:
- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Meanwhile, in another saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened., Drain potatoes and place in a large serving bowl. Add cream sauce; toss gently to coat. Sprinkle with paprika and parsley.

CHEESY SCALLOPED POTATOES

- Preheat oven to 400°. Spray a 13x9-inch baking dish with cooking spray.
- Arrange one-third of potato slices in bottom of prepared pan. Sprinkle potatoes with ½ teaspoon salt, ¼ teaspoon pepper, and ¼ cup each Parmesan and Cheddar. Repeat layers twice. Drizzle cream onto potatoes. Top with remaining salt, pepper, and cheeses.
- Bake until potatoes are tender and top is golden brown, about 1 hour. Let stand for 5 minutes before serving. Garnish with chives, if desired.
BUTTERY CREAMED POTATOES
It's the end of summer and I'm pulling out all the fall and winter favorites. These potatoes are a great accompaniment to any meat dish that doesn't create a gravy. Do not put the dish together before you bake the potatoes, because the cream sauce will react with the potatoes and they will turn gray if they sit. I learned this the hard way.

- 1. **Cut up and boil the amount of potatoes you will need to feed the number of people you are serving. For our family of approx 15 people I usually use 5 lbs. red potatoes. (If I am cooking for my family in a hurry at home and using instant potatoes, I just use the scale on the box.)
- 2. While potatoes are hot, mash them with a masher, add the stick of margarine cut into pieces, a little milk, and ***2 or 3 heaping tablespoons of mayonnaise. (I would suggest starting with 2 T and taste after you have blended in the other spices to see if you want more. I love mayo, so I use more) Blend using a mixer. Add more milk a little at a time as you mix until you get the potatoes the creamy consistency you want them. Add generous amounts of salt, pepper, and garlic powder aned continue mixing with the mixer. We love seasoned food, so I do use alot of each of these spices, but I continually taste as I add them.
- 3. **the size of the bowl of potatoes depends upon how many people you are feeding. ***the amount of mayonnaise depends upon your taste preference. (see step 2 above)
SIMPLE CREAMED NEW POTATOES
Creamed new potatoes are a snap to prepare with an easy classic white sauce and they take no more than 25 minutes, start to finish.

- Gather the ingredients.
- Put the potatoes in a saucepan and cover with water. Add about 1 teaspoon of salt per quart of water. Bring the water to a boil over high heat. Reduce the heat to medium-low, cover the pan, and cook for 10 to 15 minutes, or just until the potatoes are tender.
- In a small saucepan, melt butter over low heat; blend in flour until smooth. Gradually stir in the milk or half-and-half. Cook, stirring constantly, until thickened and smooth.
- Season with kosher salt and freshly ground black pepper, to taste.
- Drain the cooked potatoes and then transfer to a serving dish.
- Pour sauce over potatoes and sprinkle with paprika.

- Preheat oven to 350º. Lightly grease a 13x9-inch baking dish. Place on a rimmed baking sheet. Peel and thinly slice potatoes. Layer one-third of potatoes evenly over bottom of baking dish. Sprinkle evenly with half of shallots, half of salt, and half of cheese. Layer second third of potatoes over cheese; sprinkle with remaining shallots, salt, and cheese.
